Broccoli soup. I bought a head of broccoli about a week ago and forgot about it. I found it yesterday after I bought another broccoli head. Originally I wanted to make vege sides. But I decided to use the old broccoli for a soup I’ve been craving. And I love soups, to me they are luxurious, cosy and hearty. In under an hour I had a healthy dinner for 4 people. Served it with crusty toast, and a dollop of Greek yoghurt made it creamy and tangy. The other great thing about soups is they have all the nutrition I need and they are easier to digest. I love this one because it is completely meat free so this low calorie dinner fits in well with the lifestyle I’m TRYING so hard to lead in order to be healthy and avoid diabetes which runs in my family, and I’d like to avoid weight loss surgery because I know I can do it on my own by changing the way I look at food and learning about which food is good for me - or not 😂. ✅ 1 EL Puddingpulver 🍮 tbsp. pudding powder
✅ 250ml Kokosdrink 🥥 coconut drink
✅ 3 EL Haferflocken | tbsp. oats ⠀
✅ 200g Magerquark 🍦 quark ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀
✅ 50g Blaubeeren | blueberries
✅ 80g Erdbeeren 🍓 strawberries ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ✅ Süße nach Wahl | Sweetener
✅ 15g Kokoschips 🥥 coconut chips ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ ⠀⠀⠀ ⠀⠀⠀⠀⠀ ➡️ Kokosmilch und Puddingpulver aufkochen, dann die Haferflocken dazugeben und durchgehend rühren. In einer Schüssel mit dem Quark und der Süße zusammenrühren, kurz kaltstellen und dekorieren. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ➡️ Cook milk and pudding powder. Add water the oats. Constantly stir. In a bowl, add the quark, sweetener and the pudding mixture. Refridgerate a little and add toppings.

100 g grovvalsede havregryn
2 dl vand
1 spsk. yoghurt 3 %
1 dl appelsinsaft
1 spsk. chiafrø
2 spsk. blåbærª
Sådan gør du: Læg havregrynene i vand, og lad dem trække natten over eller i mindst 5 timer. Næste morgen rører du dem med yoghurt, appelsinsaft, chiafrø og revet æble. Pynt med blåbær på toppen.
Energi pr. person: 265 kcal, fedt 21 %, protein 14 %, kulhydrat 65 %
After being off-plan completely for the past 4 days (birthday celebrations and family parties!) I’m back on it today - starting with a 30g bowl of @cheeriosuk with Skimmed Milk (114 cals) before heading into the hospital today! 🥣

B R E A K F A S T : Baked cinnamon oat waffles with @JimJams_Spreads hazelnut chocolate spread.⠀
You might have seen my post about the Aldi chocolate waffles I bought last week, they were 8SP for one waffle though so I was determined to do a WW version. So bought myself a silicone 4 section waffle mould off Amazon and I got baking yesterday.⠀
Turn oven on to 160 to heat up. Recipe makes enough for the 4 moulds. Beat 2 eggs with 30g of oats, 1 heaped tbsp of fat free Greek yoghurt, 20ml of unsweetened almond milk, 1 mashed banana which you don’t have to use I just used it to bulk out the mixture, 1 tsp cinnamon, 2 tsp of Truvia sweetener. I sprayed each section of the mould with 0SP @Frylighthq spray butter. Then placed the mould tray on a baking tray and poured the mixture right to the top of each section. Baked for 25mins. I then easily turned the waffles out of the mould so the flat bottom sides were flat onto the baking tray and then cooked for a further 5 minutes so I could get a little more colour on the tops. I then put them on a wire rack to cool. I then made up 14g of JimJams hazelnut chocolate spread 2SP with 1 tbsp of hazelnut skinny syrup (from TKMax) 0sp and poured into each gap in 2 of the waffles before putting in the fridge overnight. The basic recipe for each waffle works out at 1SP. So total for 2 waffles and the chocolate was 4SP. Slight difference to the Aldi ones which have now been eyed up by my husband and so will be going to a good home 😂🐷😂⠀
