Ngl spending so much time away from my ‘home’ in London has made it feel anything other than home.

I’ve really missed cooking my dinners in the evening. I have cooked almost every night for the last two weeks - it’s such a nice way to wind down at the end of the day and then you have a delicious dinner at the end of it! This is a chicken and mushroom pie made with chicken, chestnut mushrooms l, carrots, chicken stock and mashed potato 👌🏼

6 simple ingredients, 35 minutes in the oven and a whole load of greatness. Those that have a @waitroseandpartners store near by head in and you’ll find everything in one fridge. If not you just need to grab - cod loin, lemon and pepper breadcrumbs, baby new potatoes, tartare sauce, pea shoots and a lemon from your local shops

Spicy Chicken Piada with Guacamole and Mozzarella 🌯
1 chicken breast
1 tsp cayenne
1 tsp dried oregano
1 tsp @schwartz.uk jerk seasoning
1 tbsp guac
1/2 ball of low-fat mozz
1 wholegrain piada
Handful mange tout
1 tbspn Hummus
Salt + Pepper
First, flatten that chicken breast so it cooks faster. Sprinkle on the spices, oregano and seasoning and rub it in. Heat a grrrrridle pan up to hott and slap that baby in. Cut your half a mozz ball into thin slices. Get your piada and spread the guac all over half of it, then get the cheese up on there. Once your chicken's cooked, slice it up and put it on top of the cheese, then fold the piada. Fire up the griddle pan again and pop that folded over baby on there - flip it, then surrve. I had mine with carrot styx (no, I don't peel 'em, life's too short), mange tout and hummus, but you can do whatever you want. 🥑🥑🥑🥑
*Nearly-vegetarian* spag bol. Serves 4-5.🍝🍝🍝🍝🍝
🥕Saute 2 onions, 3 chopped carrots, half a pack mushrooms with salt, pepper and garlic (precisely a shit tonne). Cover and cook on low for 6 mins
🍄Add half a mug of frozen peas and a few more mushrooms (I like most of them to be basically dissolved and a few to retain shape.. Fussy eater syndrome).
🍷Sprinkle 2x *beef* oxo cubes, and add half bag frozen quorn mince, mixed herbs, lashings of *Worcestershire sauce* and a glug of red wine. Stir through, cover and simmer til warmed through.
🍅Add 2 cans chopped tomatoes, 2 tbsp tomato paste and 3 tbsp Ketchup. Keep covered and simmer for 10 mins while your pasta and garlic bread cook :)
🤤Now eat everythinggggg!!

Well shit (don’t pardon my language), dolcezza has 2/2 with me. This flavor is so good.
Mascarpone base is super creamy and just slightly sweet. I could eat it by itself. And wouldn’t complain.
Berry jam is on point, the with a few chinch of actual berries in there. You can tell it’s quality stuff just by the taste.
Plus you get plenty of it al through the pint.
I’m really enjoying this ice creams by @dolcezzagelato and will be getting more of there stuff for sure

Salad dressing: cucumber juice, #lemon juice, #blackpepper , lemon pepper 🥗 Discovery: the early prep of the salad allowed the cucumber juice to blend with the feta which led to a delightful #lowcal dressing. The lemon juice added some zest to it. 🥗What is your favorite simple homemade dressings?

Done. Make a healthy version of one of the tastiest Dalmatian dishes - Shrimp a la buzara --> DONE😎👌 and YUMMY. Would you try it?😋🤤

1 Sauce 3 Ways...Here’s what I made:
Monday: I used a recipe for slow cooker turkey meatballs and sauce by @skinnytaste but omitted the cheese and doubled the amount of breadcrumbs. I served the kiddos their meatballs with hot dog buns to make meatball subs and I had mine just with broccoli. After dinner I packed up the leftover meatballs with some sauce and put it in the freezer. I then took the sauce and put it over a sieve to drain out the excess water while I did the dishes. I then cut up a ton of veggies and five cloves of garlic and put it in the fridge with the sauce.
Tuesday: I dumped the sauce and veggies into the crockpot and spread a layer of thinly cut chicken breast on top (mine was about 1.25 lbs). I then opened a can of diced tomatoes and mixed 1 tbsp of corn starch, 2 tsp of salt, and three tsp of Italian seasoning into the can and let it sit for five minutes. Lastly, I dumped the can into the crockpot and set it for 6.5 hours on low. I served the kiddos the sauce with pasta and I actually ate it by itself because it was so good and heart!
Wednesday: I put about a tbsp of olive oil into the pan and put around two cups of sauce into the pan to heat up. I then cracked two eggs into the pan and also about a quarter cup of just egg whites (wanted some extra protein) and let it cook up. It made the most delicious shakshuka!
Not only were the last three nights of meals totally healthy and delicious (I got two thumbs up from my older kiddo!), but they were also so easy and economical. Can’t wait to make this again.

Ginger Lime Screwdriver
1.5 oz of Trust Me Vodka (organic or Gluten free options) @trustmevodka
4 oz Be Mixed Ginger Lime @bemixed
1. Squeeze Orange into a cocktail shaker.
2. Add Trust Me Vodka, Be Mixed and ice.
3. Shake Well and strain into a glass with ice.
