Dinner is served. Did not make a dressing but ate this topped with shredded sundried tomatoes (I use my nutribullet, try them like this...so good) and a little orange juice squeezed over it.🍊 Perfect. Haven't sprouted black lentils in a while, or any beansprout for that matter, and they where so good. Plus lentils only take a day or two to sprout. So easy.🌱 My other sprouts and microgreens are: red clover and sunflower and I grow and sprout them all myself.🌱 ⠀⠀⠀⠀⠀⠀⠀

“The body is always trying to keep itself clean and strong by means of detoxification. This is done through sweating caused by fevers, by vomiting, diarrhea, frequent urination, colds, flus, and by simple daily elimination. The more toxic a person becomes, the stronger the purging will be. Take simple bronchitis, for example. If the first time your body had symptoms of bronchitis you went to your doctor and he or she gave you antibiotics, or even extremely high doses of vitamin C, the symptoms of bronchitis would stop. These remedies did not cure the inflammation and congestion, they merely stopped the elimination process or symptoms. Results like these give the illusion that the condition was cured. However, the next time your body tries to clean itself out, it could have symptoms of pneumonia. This is because bronchitis and pneumonia are not diseases but are merely inflammatory/ congestive conditions trying to be eliminated by the body. Your symptoms can become worse and penetrate deeper because you did not allow the lungs and bronchi to clean themselves out properly the first time.” Dr Morse

I made this mushroom chickpea soup w kale a few weeks ago and it was SO GOOD. Does anyone else agree that adding chickpeas to anything makes it 10x better. 😛 Recipe 👇🏼

chopped onion

garlic finely chopped

sliced mushrooms 
fresh ginger minced

other veggies of your choice

cooked chickpeas

2 tsp soy sauce/tamari use gluten-free soy sauce if needed or Coconut Aminos to make soy-free

2 tsp rice vinegar

Cumin, cinnamon, cayenne, salt, garlic and onion powder

2 cups veggie broth or water

1.5 cups or more water

cornstarch to thicken in the end if needed

Instructions

Heat oil in a saucepan over medium heat. Add onions, garlic and cook for 3 minutes or just about translucent. Stir occasionally.

Add mushrooms and mix and cook for 3 minutes or until they starts to get golden.

Add ginger and veggies and cook for a minute.

Add chickpeas and spices and cook for 2 minutes.

Add soy sauce, vinegar, sugar, broth and water. Partially cover and cook for 15 minutes. Add salt to taste and mix. Add in the greens. Cook until wilted. Taste and adjust flavor as needed. Reduce heat to medium-low. Continue to simmer for another 10 minutes. 
To thicken, mix 2 tsp cornstarch in 2 tbsp water and mix into the soup in the last 5 minutes. Bring to a boil.

Transparency post: Cooking isn’t always fun. Most of the time when I cook I’m not sure how my food will turn out but that doesn’t stop me. It can be frustrating and overwhelming if you don’t know what you’re doing. It’s okay to mess up. It happens. Especially going vegan and not knowing what to cook. I’ve made rice plenty of times. Even this recipe for Jollof I’ve made before. This particular time the ancestors weren’t on my side. I tried to salvage what rice I could but ended up throwing it all away. It was mushy and crunchy at the same time lol.And you know what I did next. Cooked something else and loved it. You aren’t a failure if something doesn’t turn out as expected. I just thought I’d share that bc there are times when I feel defeated and just want to order fast food.
