Yesterday the kids ran their own IRONMAN and we visited our Montreal based friends who we met in Miami and toured their plant-based prepared food factory and ate a delicious dinner in their lovely home. Today we luged and climbed and laughed and I saw Paros’ puppy doppelgänger and it soothed my soul. Tomorrow, Tom races in his third IRONMAN and we are proud of him no matter what. It all goes to show, the only way out is through. Stepping outside our comfort zone leads to true growth and so much joy. The reward is the journey.

HOMEMADE PAKORAS.

These pakoras are super easy to make. In fact, I definitely have a running theme for all the recipes I post; EASY! I love creating and cooking, but I don’t want to spend hours upon hours each day doing it. Every recipe I post (including this one), takes around 30-45 min to prepare from start to finish. That means you have no excuse to not eat healthy and start to fall in love with cooking. for the pakoras, follow the recipe below:

Preheat oven to 500 F and line a baking tray with parchment or a silat mat. Combine: 2 cups chickpea flour, 1 tsp baking soda, 1 tsp salt, 1/2 tsp turmeric, 1 tsp garam masala, 1 tsp cumin. In a separate bowl, combine 1 c shredded potato, 1 c shredded carrot, 1/2 c frozen peas. Mix 1 1/4 c of water to chickpea flour mixture to create a batter. Mix veggies into the batter until they are evenly dispersed. Spoon mixture in the shape of pakoras using the drop method onto the baking sheet. Bake for 8 minutes and remove from oven. Spray avocado oil on each to make it look crispier and place back in the oven for another 8 minutes. Remove once golden brown on top and serve warm.

That’s it, that’s all. Super easy peezy lemon squeezy! They are great as an appetizer or as a snack. Your guests will absolutely eat these bad boys up. Let me know what you think if you try making them. Have a great weekend, peeps!

When you visit friends in Vermont and you want at eat clean but still make it delicious 🤤🤤. Paired with left over falafel from last night’s dinner for plant protein👌. Salad is fresh spinach with cucumbers, raspberries, and avocado with homemade salad dressing of fresh squeezed lemon juice, raw honey, mustard and olive oil. @loveleee_xo thank you for the sautéed kale and garlic and roasted veggies. Left both of us satisfied😄. Funny thing is I have actually been craving more whole food and even honey (as a cough started to come on). And what is better than cooking with friends? These little guys are not miniature watermelons although they kind of look like it... they are extra delicious cucumbers—they kind of taste a little like lime but mostly like cucumber and they’re the size of a grape tomato! They’re rich in lycopenes (heart healthy antioxidant), beta carotene (good for skin and eyes), vitamins K + E + C and of course a lot of fiber. The lemony Dijon dressing will soon be available on my blog that is launching in early fall!

I messed up the first 2-3 tofu scrambles I ever made but now I make them about twice a week. It’s especially awesome because my kiddo loves tofu, too! The secret to a eggy scramble is an Indian seasoning called Kala Namak or black salt powder. It has a slightly sulfuric property that makes tofu really smell and taste like scrambled egg! I also add in nooch, garlic salt, pepper, a dash of Worcestershire, and a pinch of turmeric for color and always top with @daiyafoods #vegancheese.

We used to eat roast beef sandwiches with au jus, which is fancy french for "with juice".. or quite literally the liquid that comes off of cooked dead animal parts. Oh gawd, I just threw up in my mouth. 
Now, we eat seitan sandwiches au jus. Homemade! For an EASY seitan (high protein meat alternative made from vital wheat gluten), just Google it and find the Allrecipes version. It's simple and great. We dip using the cooking broth and the remaining I recycle into a bean soup the next day (at least, those are my intentions if I don't forget about it in the fridge for 3 weeks 🤷). One batch makes enough seitan for 6 people.

Vegtoddler freakin looooves seitan sandwiches. Add some vegan cheese and I'm looking at a tantrum free evening (bahahaha, I kid- there's no such thing). Paired with a garden variety of corn, mashed sweet potatoes, spinach and blueberries here, he gets a lot of great nutritional choices, too.

As I have been preparing for my colonoscopy this upcoming Wednesday, I have been struggling with what foods to eat. I usually eat a lot of fibrous fruits, vegetables, and nuts throughout the day. I have had to cut out those foods and really REALLY think about what I am putting into my body. My main goal for right now is to maintain positive and pray for some answers. 🌻🍎🙏🏽

My husband picked up a box of fresh peaches from the Mercantile yesterday, and this afternoon he whipped us up a delicious banana/peach/pineapple smoothie.  Combined with a couple homemade eatmores that I made this morning, this was the BEST afternoon snack!  Yum! 👌🏼

While I no longer eat breakfast for the most part because I practice intermittent fasting, I love to start my day off with fresh fruit or vegetable juices. This is one of my faves, a mix of fresh squeezed orange and grapefruit juice. Citrus is the most detoxifying of all the categories of fruits. Eating fruit alone or with vegetables is the most optimal for digestion, because fruit is very quickly digested and absorbed this way. If you combine your fruit with proteins or starches the fruit will sit in your hot stomach while you body breaks down the protein and carbs, which will cause it to ferment and putrefy! Try it for a month and see how you feel!

After all my traveling and being in airports, I wanted to give my body an extra immune boost. Ginger, lemon, and echinacea are perfect for that! Anti inflammatory, antioxidant rich, immune boosting, energy boosting, and proper digestion aiding. I had been wanting to make something like this for months now but I only have an intro level juicer and thought I could only do it if/when I bought a fancy one. Then it dawned on me. Why don’t I just blend it and then strain after. Duh! It worked like a charm! I simply added all the ingredients to my @thenutribullet, strained with a small mesh strainer, and voila! Ginger shot just like I order at juice cafes and health shops! 💛💛💛 PS isn’t that cutest little glass!? I’ve had it since I was probably 10 yrs old, maybe younger. My two brothers and I each had one. Finally made it out to @heritagesandysprings farmer's market again (this is like maybe my fifth time being able to make it this season!). Haul included cucumbers, squash, okra, long beans, green beans, apples (first harvest of the season!), swiss chard, watercress, garlic chives, rosemary, squash blooms, fuzzy squash, sunjewel melon, apple cider, pastured bacon (including jowl bacon that is apparently delicious), grassfed beef (x3), pastured turkey (x2), pastured rabbit, and pastured soy-free eggs. I then enjoyed some of those pastured eggs with minced garlic chives and rosemary for breakfast 😋. Baby is going to be eating good this week 👶🤰. .

Plus it can be made in under 30 mins so you can do it before you head to work if you forget to meal prep 😉 recipe below 👇🏻

1) Roast the chickpeas with a little olive oil and salt (I use Himalayan pink salt) in the oven at 200C for 20 mins
2) Meanwhile, cook the broccoli for a few mins in boiling water to al dente
3) Sauté the mushrooms with some sesame oil and coconut aminos (soy sauce alternative - no gluten, no soy)
4) Cool and add the avocado
5) Drizzle a little more sesame oil and add chilli flakes
6) Voila 👌🏻

Lunchtime😋😋 Today I made a coconut-lemon-curry with hokkaido, chickpeas, carrots and leek and served it with kamut, a nutty tasting grain👌👌 It was super delicious but honestly the star of this meal was my new fork😅😅 I felt a bit royal when I ate with it👑👑 In the morning I got the spontaneous idea, that I should cut off my hair🙈 I love long hair and I always tried to let it grow, but you cannot starve yourself and expect your body to shine and be strong...My hair was really really thin at the ends and this always reminded me of this long time of torturing myself. It actually makes me a bit proud of myself that my doctor told me that one can clearly see that my hair is growing really strong now that I nourish my body🙏❤ For a very long time, my body was the stage on which I showed how bad I felt...I wanted everybody to see my bones, my scars, my tears...but I feel that I can let go of these obvious signs of pain because I have a voice...and I promise myself that I will always stand up for my needs and care about my wellbeing🙏 So bye bye years of starving and suffering😊😊 sometimes a new haircut can be kind of a strong statement🙏

In manchen Momenten kann ich mich erinnern: ich merke für was ich meine Essstörung benutzt habe. Ich habe sie benutzt um mich sicher zu fühlen. Sicher gegenüber Situationen, vor Ereignissen und vor Personen. Ich hasse es mich unwohl zu fühlen, keinen Plan zu haben, Streit zu haben, Tadel zu bekommen und Angst vor Ereignissen zu haben. Und da kam die Essstörung ins Spiel, sie gab mir eine Sicherheit, eine Sicherheit über Dinge, die eigentlich nichts mit Essen zu tun haben. Es ist das Ventil, dass aber keine Lösung ist. Ja, es tut weh, zu merken, dass man manchmal verloren ist, dass man merkt, es gibt Menschen, die einen nicht leiden können, die einen für dumm halten, die dir weh tun werden. The best salad I’ve made all year 🌜lettuce, heirloom tomato 🍅 , bean mix (garbanzo, white and pinto), purple cabbage, scallion, carrot, basil 🌿& parsley from my herb garden 🤗, strawberry 🍓 , white wine vinegar, olive oil and balsamic glaze 🌛. As I was taking this picture my mom stopped in her tracks and was like ‘wow, that’s beautiful’. This is a huge compliment due to the fact that my mom doesn’t eat salad and whenever I use vinegar in anything goes ‘EW THAT VINEGAR STINKS!’ So that was cute. Oh and I paired this with an outrageous onion pumpernickel toasted roll with avocado and lemon. I’m so full and satisfied, praise be 🌻.

As Rehab Residents, we recognize the importance of proper nutrition on our patients on inpatient rehab units. Nutrition is extremely important when it comes to wound healing and maintaining the energy to participate in vigorous 3 hours of therapy/day. That's why we work so closely with nutritionists and speech language pathologists to make sure we can advance our patients' diets as soon as its safe to do so. ---
One thing I've been very conscientious of is the nutritional shakes that are offered to my patients including those like Ensure. Have you ever looked at the ingredients of these shakes that we're recommending to our patients and loved ones? Each serving has 18-25g of sugar and sometimes we encourage our patients to drink 2-3 of these per day. That's 75g of sugar in one day!! The recommended daily intake of sugar is 5-10% of our total caloric intake. For men, that's 150 calories per day (37.5 grams or 9 teaspoons) and for women,100 calories per day (25 grams or 6 teaspoons). Some of the ingredients aren't necessarily the best for us either, but they're the recommended drinks and standards as per hospital guidelines. I personally wouldn't drink that nor would I recommend it to the people I care about. ---
I recently got to try out a nutritional shake called Orgain that's made with all organic ingredients, soy-free, non-GMO, and made with whole food vegetable and protein blends. 
It was created by a patient turned doctor turned entrepreneur, Dr. Andrew Abraham, who was diagnosed with a rare form of cancer called rhabdomyosarcoma. While recovering from surgery and undergoing chemotherapy and radiation, he had lost so much weight and only weighed 100 lbs.
