Burger night ! I had some extra red peppers which have been tasting amazing 🤰🏼 and decided to try it as a bun ! Great idea and added an extra crunch . Burger, pepper jack cheese, pickles, mayo and served Turnip fries 🤤

I love this color. The color of hibiscus 🌺 is so beautiful. I made this mask by pulverizing dried hibiscus and mixing that with ginger powder and bentonite clay. Also, if you haven’t used a paint brush 🎨 to put your face mask on you MUST. It feels a lot more boujee & gentle af.

Find me a person that did... I'll wait.... I used to be extremely unwell and suffered from severe degenerative conditions that caused chaos in my life on and off for 12 years.

Even though I knew deep down I had to change my diet permanently, I kept returning back and eating things that were not good for my body. 
Consequently I suffered!

Once I finally removed all animal products, breads, pastas and all processed foods and just ate fresh fruits and vegetables and alot of raw living foods, I managed to heal... funny that. 
Health is actually quite simple at the end of the day.

Eat well... be well

Could you eat 6lbs of Organic produce in the 1st 4 hours of being awake?! Me either. Two months ago I still would have been sucking down my morning coffee. Since my cancer diagnosis I have cut out coffee and this is my morning routine. #overdosing myself on nutrition.  Gives the body a rest so it doesnt have to digest and work so hard to break all this down. Besides most cancer patients arent able to. Not to mention how nauseating it would be. This will give me four 8oz. Glasses of green juice. Every hour on the hour. #gersontherapy  Wow...I did not see this coming. If I would have known I would have bought a farm. 😂🌱 something to look forward to this spring. My compost pile from all the pulp is getting HUGE! Nourishing Broth 🌌 Transitioning into the colder months can be difficult for many reasons. As someone who has dealt with a lot of digestive issues in the past, the change in diet is particularly hard for me to adjust to. I crave grounding foods but that often means heavier foods. Broth can be an excellent way to stay warm and grounded throughout the winter months without burdening the digestive system. Mushrooms are probably my favourite ingredient to use when making broths. They are packed with nutrients and immunological compounds that make them an essential winter staple (in my world). With social media playing a heavy influence in today’s world and people being easily susceptible to messages, it’s no wonder eating disorders like Orthorexia are so prevalent. Having had personal experience with this disease, I constantly feel like I’m walking a fine line between two things: health and mental happiness. .

Instagram bombards us with fad diets. It also bombards is with self-love and intuitive eating. Yet, being someone who has suffered from an eating disorder AND currently suffers from health issues that are exacerbated by my diet, I find myself at a crossroads. .

I manage this dilemma but only because I have chosen to make a career out of these fields. For everyone else, it saddens me that this is a struggle. It’s as if we have to choose foods that make us “happy”/social creatures and eating for our health. In America’s culture, those two things just don’t seem to go together. .

There are definitely people who can manage both— and I sometimes envy them. But for the rest of the population, I feel this is a huge social issue that is widely ignored.

Having had personal experience with this disease, I constantly feel like I’m walking a fine line between two things: health and mental happiness. . . Instagram bombards us with fad diets. It also bombards is with self-love and intuitive eating. Yet, being someone who has suffered from an eating disorder AND currently suffers from health issues that are exacerbated by my diet, I find myself at a crossroads. . . I manage this dilemma but only because I have chosen to make a career out of these fields. For everyone else, it saddens me that this is a struggle. It’s as if we have to choose foods that make us “happy”/social creatures and eating for our health. In America’s culture, those two things just don’t seem to go together. . . There are definitely people who can manage both— and I sometimes envy them. But for the rest of the population, I feel this is a huge social issue that is widely ignored.

Rødbede salaten er lavet på:
- 1 dåse kikærter
- Ca 1/2 kg rødbeder kogte og skåret i tern
- 3 store æbler
- lidt purløg og valnødder som drys på

Dressing:
- saft af 2 citroner
- ca 125 g Tahini
- 1 1/2 dl vand
- 1 daddel
Blend til det er tykt i konsistensen..
Bland i salaten så det ikke bliver for vandet. Jeg brugte ikke det hele.  Resten kan bruges til salat en anden dag 😃

Today we went for a beetroot salad with plant based balls... Not bad on such a monday evening and even with freshly squeezed juice of carrots and apples. The plant based balls are made without recipe.
The beetroot salad is made of
- 1 can chickpeas
- Ca 1/2 kg beetroot boiled peeled and diced
- 3 large apples
- Pinch of chives and walnuts for sprinkle
Dressing:
- Juice from 2 lemons
- Ca 125 grams Tahini
- 1 1/2 dl water
- 1 date
Blend to a thick mass.
Mix in the salad without it getting too watery. Use the rest another day

Zucchini Lasagna with Almond “Ricotta” - adapted from @minimalistbaker - AMAZING! I tried this last night to see about making it for Christmas and after tasting it I knew it was a go! I had a few taste testers who loved it and said the ricotta tasted just like the real kind 😊

VEGAN ALMOND RICOTTA
2 cups soaked  almonds 
1/4 cup fresh basil (finely chopped)
2 tsp dried oregano
1 medum lemon, juiced 
1 clove garlic
1 tsp sea salt + pinch black pepper
1/2 cup water (plus more as needed)
Blend all to make ricotta .
OTHER INGREDIENTS 
1 and 1/2 jars favorite marinara sauce 
3 medium zucchini squash thinly sliced with a mandolin or knife
DIRECTIONS 
Pour a thin layer of sauce in the bottom of a baking dish and then add zucchini slices, almond ricotta, sauce and repeat until all is used
Bake at 375 for 45 minutes .

👍 Eat well. Make sure you are getting enough vegetables and fruits in your diet. Your body needs vitamins like vitamin C and also antioxidants to help protect itself from infection. If you don’t eat right, you can’t function properly.*

👍 Exercise! It’s tough because of the worsening weather but you can still get into the gym, or do other activities like rock climbing, indoor swimming, yoga or boxing classes. Studies show that the more fit you are the less likely you are to get sick.*

👍Get enough sleep 😴! The average person needs between 6-8 hours per night. If you don’t sleep enough your body can’t recover, your immune system is weaker, and you are more likely to get sick.*

Now, this is the time to realize how important food is to man. Food is our primary fuel and it is high time that we should respect and love our food. When it comes to weight loss people see food as an "fear" to their goals. But we should never forget that if we eat right food and exercise religiously then our very food is blessing for us and our body. Overall health comes from the healthy gut and healthy gut is achieved through healthy food options. Ditch the processed, junk and packaged foods and start eating healthy food which our mother earth has bestowed us with. Fresh Galangal! This root is massive. Two times the size of my hand!
Wrapped around the cloth on this Mason jar is Willow. I didn’t have a rubber band, but had just harvested a few fresh Willow branches which were quite pliable. I wrapped the Willow around a few empty jars, making it loose enough to remove easily and set on the jar  rim. I then let them dry for a few days. They hardened nicely. They make nice little holders for projects like this and even better, they’re disposable. This is a cayenne infusion I’m preparing for salves. 💕👩🏽‍🌾

Book recommendation alert! Do yourself a favour and read this....if you suffer from allergies, auto immune disorders or any digestive issues you probably have leaky gut syndrome. Sounds icky I know, but, it’s more common than you think and not difficult to heal! There is so much great info available about gut health and I’ve been connecting a lot of the dots for myself lately and making a few changes to my diet, supplementation and self-care and it’s already starting to pay off. My hay fever is almost completely gone, my skin is clearer and well let’s say I’m a lot more “regular” too 💩 This is stuff our GP’s just don’t talk about and in actual fact most GP’s are making worse by prescribing anti-biotics and other chronic meds for conditions that can be healed through dietary and lifestyle changes. Don’t get me wrong, I do have huge respect for medical professionals but one does have to ask the question about how much training they get about the importance of good nutrition.....and by good nutrition I mean whole foods, foods that still have dirt on them! I am really excited by the idea that we can all heal ourselves if we heal our gut. After all Hippocrates, the great father of medicine himself said “All disease begins in the gut”. Alzheimer's and diet -  there's been alot of new research on dementia and Alzheimer's recently. Some scientists are calling it type 3 diabetes due to it being related to the brain losing the ability to utilise glucose as an energy source efficiently. One way they have found they can get around this is by switching the fuel which the brain is being fed to fats rather than glucose (carbs). When someone gets Alzheimer's plaques form in the neural pathways of the brain, preventing messages from being sent and causing memories etc to become almost inaccessible. Some scientists say this is what it is, and it just happens, which to me makes very little sense. Other scientists say it is caused by the brain basically being starved, causing atrophy (weakening) of the pathways, which results in a release in proteins called beta amyloid which form these plaques and block the pathways, similar to atherosclerosis. So basically, if you know anyone with Dementia, try getting them to go on a high fat diet, with good proteins, and a broad range of veg, it might just change their life 😀
Combine this kind of diet with intermittent fasting and you'll induce autophagy, which is where the body uses cells which go around and basically clean up the internal environment, removing plaques and improving the body's physiological processes.

As for me I wash and cut all the veggies, make a salad and put it in a big bowl, with a dressing aside. I cook rice or quinoa, make sauces etc. And store everything in the fridge.
