Today share a fancy recipe with you all, nasi kerabu . It is a type of nasi ulam , popular malay dish rice . Blue colour of rice resulting from the petals of butterfly pea flowers. Nasi kerabu is very popular asian cuisine. The original nasi kerabu served with fried fish/ chicken , few types of veggies like cucumber, long beans, cabbage , bean sprouts . In reality, there are so many different combinations of accompaniments and styles of cooking that it is quite impossible to list them all here. If you are interested, remember 'Google' is your best friend. But I served nasi kerabu in my version! VEGAN 🌱

Blue rice :
1 cup rice
5 to 6 butterfly pea flowers soaked in hot water or a few minutes ( blend the flower with water) cooked rice with the blue colour water . Add salt to taste ,after rice is cooked, add 1 tbsp of coconut milk. Mix well cover up and set aside.
For the veggies:
Bean sprouts (steamed) ,long bean ( cooked) purple cabbage( optional) , white cabbage , carrot, daun kesum ( asian herb). Daun kesum is a member of the mint family , cucumber, toasted grated coconut and bunga kantan (gives the dish a kind of aroma which is so unique to taste) bunga kantan is a member of ginger .
For the side this :
Fried tofu ( marinated tofu with salt , garlic and ginger paste, brown sugar , tumeric)
Heat oil in a pan and coat tofu with corn starch and fried until golden in colour.
Mix up everything and
served with garlic sauce chilli .
Up at 6.30 (that's a lie in for me) dog walk number 1 completed 🐶 yoga 🙏 and now I've gone back to bed to enjoy these fluffy pancakes and a matcha latte. Pancake recipe is from @wallfloweraimee (best pancake recipe ever) 💕
Had this lovely bowl of nourishing rainbow goodness tonight 🌈⭐🌱 using @vivavivera veggie mince. I sautéed a small red onion then added fresh coriander, blackbeans, veggie mince a tin of tomatoes and seasoned with cumin, garlic powder, onion powder, smoked paprika, a pinch of salt and some black pepper. Served with sweet potato, yellow capsicum, fresh cherry tomatoes, tortillas, smashed avocado @hurlyburlyfoods fermented raw slaw and romaine lettuce. It literally took 15 minutes to make and was enjoyed by all the family 💕💕💕
