Astazi am avut zi de curatenie in dulapul cu boabe si fainoase, 70 % nu mai erau de interes, dar din ce am pastrat mi-au venit alte idei. De exemplu aceasta supa de linte rosie.
Am ceva timp de cand nu am mai facut o supa de linte, iar astazi a picat la fix pentru ca nu aveam o alta idee care sa se potriveasca cu vremea. Ceva aromat este intotdeauna o alegere potrivita.
Pentru supa am facut si acesti biscuiti sfaramiciosi cu dovlecel si parmezan. Ma rog putem sa le zicem si chifle ca e mai in context 😀
Ahhh, voiam sa va mai zic ca mi-a revenit cheful de fotografie, pentru ca in ultima vreme am preferat pozele de tip portret foarte simple asa :) .

Bir tencereye tereyağı ve kıyılmış soğanı koyup orta ateşte çok fazla pembeleştirmeden kavurun. Unu ilave edip bir iki kez un ile birlikte karıştırın. Tencereye et suyunu da koyduktan sonra ayıklanmış, yıkanmış mercimek ile küp küp doğranmış havucu ilave edin. Mercimek ve havuç ezilinceye kadar pişirin. Karışım pişince süzgeçten ezerek geçirin. Süzülmüş kısmı tekrar tencereye koyup, kimyonu da ilave ederek kaynatın. Üzerine az sıvı yağ ile kızartılmış pul biber ve kuru nane dökerek servise sunabilirsiniz. Last year I came up with a few favorites but I would like to have a few new recipes for this fall and winter!We do a ton of soups and side salads this time of year because they are healthy, easy, and cheap! A triple win in my book! 🙌🏻 It’s been a rainy lazy week so I thought now was a good time to play around in the kitchen!
This Lentil soup is the very first recipe I created on my own! I was pretty proud the first time I made it because I threw a little of this and a little of that in the pot and said a little prayer we would have something edible for dinner! My sweet hubby likes it when I follow a recipe because I’ve had a few fails in my day! 🤣 I kinda fib sometimes when I’m trying to come up with a “Keli original” because I tell him I’m using a recipe so if it’s a flop I can blame it on the recipe and not my desire to concoct something new in the kitchen! 😂
I know...I’ve told my secret and he’ll read this but I’m pretty sure he has figured out this game over the last 12 years we’ve been together! 🤷♀️ Today I added a few things to my original recipe and omitted the dairy so that my sweet #dairyallergy baby could eat some too! My kids love lentil soup so I wanted to make sure it was safe for him to eat as well! I subbed coconut milk for the heavy cream and I’m so happy I did! It tasted amazing and just as good as when I had heavy cream in it! 🤗 It also made it healthier so that’s awesome too!
I can’t wait to take some other recipes of mine and change them up to make them healthier for the whole family! I’ve tried in the past to cook healthy meals but I had so much to learn about eating a balanced diet! My nutritional program is amazing and has taught me so much in such a short period of time! It’s a rainy night here and a bowl of my French Lentil Soup with smoky bacon, Le Puy lentils, red wine, and escarole was just what I needed. Hit the save button to keep the full recipe below for a chilly day!
1 teaspoon olive oil
4 ounces bacon, cut into 1/4-inch pieces
1 cup diced carrots
1 cup diced celery
2 large leeks, cleaned and chopped
3 cloves garlic, minced
1/2 cup dry red wine
1 cup French green lentils (Le Puy)
6 cups chicken or vegetable stock
2 cups water
1 tablespoon fresh thyme leaves, chopped
1 bay leaf
1/2 to 1 pound escarole, cleaned, trimmed, and torn into bite size pieces
kosher salt and black pepper
1. In a large pot, cook bacon in olive oil until crisp. Remove bacon from pan with a slotted spoon and set aside.
2. Add carrots, leeks, and celery to the pot with 1/2 teaspoon each salt and pepper. Saute over medium-high heat until vegetables are softened and beginning to brown. Add garlic, and cook for 1 minute, until fragrant.
3. Deglaze the pan with red wine and cook for 1-2 minutes, scraping any browned bits from the bottom of the pot. Stir in lentils, followed by stock, water, thyme, bay leaf, reserved bacon, and an additional 1/2 teaspoon salt.
4. Bring to a boil, reduce heat, and simmer, partially covered, for 25 minutes. Stir occasionally.
5. Add escarole to the pot and stir it into the soup (it will look like a lot of escarole; it will wilt down.) 6. Bring the soup back to a boil, partially cover the pot, reduce heat, and simmer for 15-20 minutes, until lentils and escarole are soft.
7. Remove bay leaf. Season soup to taste with salt and pepper. Serve with a drizzle of extra-virgin olive oil, black pepper, and croutons, if desired.
TONIGHT DINNER MENU HOMEMADE.....RED LENTIL COCONUT CURRY SOUP AND VEGAN GRILLED CHEESE SANDWICH!!!!! SO GOOD!!!! RECIPE BELOW ENJOY!!!! 2 tablespoons virgin coconut oil or extra-virgin olive oil
1 medium onion, finely chopped
2 garlic cloves, finely chopped
1 2½-inch piece ginger, peeled, finely grated
1 tablespoon medium curry powder (such as S&B)
¼ teaspoon crushed red pepper flakes
¾ cup red lentils
1 14.5-ounce can crushed tomatoes
½ cup finely chopped cilantro, plus leaves with tender stems for serving
Kosher salt, freshly ground pepper
1 13.5-ounce can unsweetened coconut milk, shaken well
Lime wedges (for serving) Heat oil in a medium saucepan over medium. Cook onion, stirring often, until softened and golden brown, 8–10 minutes. Add garlic, ginger, curry powder, and red pepper flakes and cook, stirring, until fragrant, about 2 minutes. Add lentils and cook, stirring, 1 minute. Add tomatoes, ½ cup cilantro, a generous pinch of salt, and 2½ cups water; season with pepper. Set aside ¼ cup coconut milk for serving and add remaining coconut milk to saucepan. Bring mixture to a boil; reduce heat and simmer gently, stirring occasionally, until lentils are soft but not mushy, 20–25 minutes. Season soup with more salt and pepper if needed.

Lentil soup is what’s for dinner! Super simple to make. I just sauté minced garlic, diced onion. Then sauté until slightly tender but still crispy carrots, celery, potatoes, with 1 tsp each minced fresh turmeric and ginger, 1 cup lentils, veggie stock and crushed tomatoes. First hot meal after 21 day Raw Vegan challenge. I’m not gonna lie, I couldn’t wait for this day to come. Thank you @badassvegan and @jonny_juicer for starting this challenge. This is my first time and i would’ve never thought of doing a raw challenge on my own.I like it now after I’m done with it. It wasn’t easy, but we made it. I went from 175 lbs to 167. I plan to do one every year now. I was amazed by the fact that I still had the strength to work out. What I want to say is, it is not the quantity of what you eat that matters, but the quality.
