Holy crap this is good.  Marinated chicken liver in hot sauce, sauteed cabbage in hot sauce and cooked bacon in hot sauce. Left the spinach raw, cause it's just yummy that way. Keto dinner is delicious😍 Been doing the Keto Diet for 2 weeks now, and the only thing I miss is fruit.

Kommit till insikt att jag varit under mycket stress och press sedan i somras. Många olika saker som alla inneburit en inre stress. Stress som jag inte kanske riktigt märkt av och tänkt på. Förrän nu. Comparto nuevamente esta recetaza para quienes todavía no la hicieron. No se la pierdan, es muuuy buena! 😉
Para la masa necesitamos:
🔸1 taza de harina de almendras
🔸1/2 taza de harina de lino
🔸2 cucharadas soperas de psyllium en polvo 🔸1/3 taza de parmesano rallado
🔸1 huevo
🔸sal marina 1 cucharadita de café
🔸1/4 taza de agua a temperatura ambiente
🔸Opcionales: ajo en polvo, hierbas (orégano, perejil, etc...)
Para el relleno: apelemos a la creatividad y a los gustos de cada familia. Si me preguntan a mi, la rúcula 🌱 fresca a esta pizza le queda ge-nial!!
👉Precalentar el horno.
👉Mezclar en un bowl las harinas, el psyllium, el queso, la sal (y el ajo o hierbas en caso de usar).
👉Agregar el huevo y el agua (de a poco). Amasar con las manos.
👉En una fuente con sylpat o lámina antiadherente , colocar la masa y presionar con las manos para darle forma. Te recomiendo intentar que quede finita y pareja para que se cocine bien y quede más rica.
👉Levantar los bordes para contener el relleno.
👉Cocinar al horno por 15-20 minutos y retirar.
👉Colocar el relleno que elijan y terminar de cocinar.
👉Listo! 👏

Ingredients:

2 tbsp butter
50g 90% Cocoa Dark Chocolate
1 cup Almond Milk
1 cup Coconut Milk
1 tbsp Cocoa Powder
1/2 teaspoon Vanilla Extract
3-4 drops of Liquid Stevia
5-6 tbsp Chia Seeds

Preparation:

Use a jar if you have and place the butter and the dark chocolate inside. Use the one with 90% cocoa or more if you can find it. Melt it in a microwave for 30s. Mix it together after. Add almond and coconut milk and once again mix. To that add the cocoa powder, vanilla extract, 3-4 drops of liquid stevia (or other liquid sweetener) and add around 5-6 tbsp of chia seeds. Add more if you want the pudding to be more thick. Close the jar and shake it all together.
Put it in the refrigerator for 30 minutes. Then take it out and shake it all real good one more time. Place it back in the refrigerator and leave it overnight for the chia seeds to do their magic.

Trying something new ✨

Growing up, my mom always stayed organized, and we almost always had a “menu” on the fridge to tell us what dinner would be. Most of the time, this was because, as most mothers do, she got tired of us asking every day. 😂😂 (I’m happy to report she has an entire tote bag with a notebook for each one of her “lists”, and it’s helped her IMMENSELY). Fast forward to my adulthood, and I’ve found that we can’t survive without the list! I generally would spend DOUBLE at the grocery store if I just winged it, and would end up buying a bunch of junk. 
Since I’ve started keto, I’ve been planning our dinners out, so that I can save money at the grocery store. I usually write the menu on my notes in my phone, write the menu on paper to put on the fridge, and then I have my list in another note on my phone. But lately, I’ve been wanting to try bullet journaling, and I figured, this HAS to be the best way for me to start.

So, here it is. I got this idea from Pinterest. My next one is going to be a bullet journal for keto recipes. Maybe one day, I’ll write a keto cookbook. ( #youneverknow )

Pumpkin Chocolate Chip Cheesecake Cookies
Makes 12 large cookies
Per cookie: 145 calories 13g F / 1.5g C (net) / 4.5g P / 4.5g fiber

INGREDIENTS:
🎃1 1/2 cups blanched almond flour (168g)
🎃1/2 cup erythritol or sweetener of choice (96g)
🎃1/2 teaspoon pumpkin pie spice
🎃1/4 teaspoon baking soda
🎃1/2 teaspoon salt
🎃3 tablespoons pumpkin puree (45g)
🎃2 tablespoons grass-fed butter, softened (28g)
🎃2 tablespoons cream cheese, softened (28g)
🎃1 egg
🎃1/2 teaspoon vanilla extract
🎃1/2 cup @lilys_sweets_chocolate sugar-free chocolate chips (112g)

INSTRUCTIONS:

1. Preheat oven to 350 degrees F, and line a cookie sheet with parchment paper.
2. In a large bowl, combine pumpkin, softened butter, cream cheese, egg, and vanilla.
3. In a separate bowl, combine the dry ingredients: almond flour, erythritol, pumpkin spice, baking soda, and salt.
4. Pour the dry ingredients into the wet ingredients, and stir until combined. Fold in the chocolate chips.
5. Drop heaping tablespoons of dough onto cookie sheet, and flatten a bit as the cookies will not spread a lot while baking. If you want the outside of the cookies to be perfectly smooth, use slightly damp fingers to smooth them out.
6. Bake for about 12-14 minutes.
7. Allow to cool, and enjoy!

Lunch today is leftover Chicken Broccoli & Cheese Casserole from last night! SO good💜 Followed @grassfedgirl recipe but changed just a couple things, included cheddar cheese for my kids’!

Soooo I don't really know what to call this, I think I'll call it....Carly cottage pie 😂😂😂 Anyway, it's minced beef fried off with beef stock, then topped with cauliflower mash here's how I made my mash ⬇️⬇️⬇️ Medium cauliflower cut into small florets 
3 tbsp double (heavy) cream 
2 tbsp butter 
60g cheddar cheese ( you pick your strength, I went for medium.
Salt and pepper to taste 
Put the florets into an microwave bowl 
Add the butter and cream 
Microwave uncovered for 6 minutes 
Stir the cauliflower coating it in the cream and butter 
Microwave for 6 more minutes 
Add cheese and blend in a food processor, I just used a simple hand one.

LOL. my friend sent me this yesterday with a sweet, inspirational message. I don’t know how but she knew I needed it.
as another chapter closes in my life, I’m reflecting on where I’ve been and how far i’ve come more than just physically.
the girl on the left was depressed, angry, fat, drunk, addicted, and allowing herself to be treated like less than.
today, i’m grateful for that experience so I was able to recognize behavior and warning signs of patterns... so I was able to break those and see a different outcome.

LOL. my friend sent me this yesterday with a sweet, inspirational message. I don’t know how but she knew I needed it. as another chapter closes in my life, I’m reflecting on where I’ve been and how far i’ve come more than just physically. the girl on the left was depressed, angry, fat, drunk, addicted, and allowing herself to be treated like less than. today, i’m grateful for that experience so I was able to recognize behavior and warning signs of patterns... so I was able to break those and see a different outcome. this photo represents so much better... all the better. inside and out. i’m proud AF of myself man. better is out there for you too. ¯\_(ツ)_/¯
This is why knowing yourself and playing detective is sooo important.  Numbers are not always right!  I took time to read the whole user guide manual. I forgot it came with a solution in which you could run controls. I ran them. The glucose was out of range by 240.  The ketones were in perfect range. I ran 5 controls.  Therefore, the error is not with me. Not with ketones. Not with machine.  It’s with the glucose strips.  I did have an increased anxiety episode a few days ago, I thought was going to implode.  That’s why I checked my glucose in the first place.  After going over all the data, food, sleep, stresses, etc the one thing I overlooked was it should be PMS time, but since I’m going through that stage in life where it’s changing, there is only extreme, intense anxiety, muscle tension, for a few days.  If you don’t keep track on a calendar it’s easy to feel this horrible feeling come over you and panic. Thankfully 😅, I know manage my micro-habits, loosely keep track and can figure out what’s going on.  Whew!! You are your best healthcare provider when you are conscious, awake, and mindful.  Self love is a mindful,active journey. Enjoy finding and loving yourself. Never assume anything,  never take it at "face value" that it's keto or LC etc. Just on someone's word. CHECK THE LABEL guys. Because here's the thing - just because it's LC, doesn't mean it's something you want to eat, or should be eating.

Pudim Fit

Ingredientes:
- 6 ovos
- 300g de ricota - 500ml de leite - 10 Colheres de açúcar demerara ou adoçante 
Para calda:
- 1/2 xícara de açúcar demerara
- 1/2 xícara de água

Modo de Preparo:
1 - Em uma panela, derreta o açúcar demerara, adicione a água, mexa até obter ponto de caramelo
2 - Coloque o caramelo em uma forma e reserve
3 - Bata todos os ingredientes no liquidificador
4 - Coloque a mistura na forma
5 - Asse em banho-maria por 45 minutos

A: Sadly wheat is found in so many foods we wouldn’t consider it to be and so many new products and new types of bread are being introduced. We have come to feel wheat is a necessary part of any meal. Eggs and toast, cereal, sandwich, pita bread, hamburgers with buns, crackers for a snack, pies etc. It is eaten in greater quantities year after year. Add increased sugar consumption and its not a pretty picture. 
Modern wheat contains:
-amylopectin A, which is efficiently digested to glucose rapidly giving blood sugar spikes followed by insulin spikes. Amylopectin C, found in legumes, is the least digestible (beans, beans good for your heart, beans, beans make you...). Amylopectin A in wheat causes your blood glucose to rise more than simple carbohydrates such as table sugar. The GI (glycemic index) for white bread is 70, whole grain bread is 71, fruit loops are at 69, oats are at 66 and Snickers fall at 55! -an appetite stimulant
-gluten in wheat contains the family of proteins called glia dens and gluten ins. Glia dens are the proteins that triggers the immune response in celiac disease.
-Genetic modification has added anti fungal enzymes to aid texture and leavening. YUCK!
-Wheat is a rapidly absorbed carbohydrate with a high GI full of reactive proteins causing a leaky gut. The good absolutely does not outweigh the bad here! 
We have all been told to eat healthy, whole grains, and there is no disputing the science that when whole grain flour is substituted for white flour, there is a reduction in colon cancer, heart disease and diabetes. But by increasing your vegetable intake, you far exceed any loss of fiber of Vitamin B from not eating whole grain bread. We hear that by replacing something bad (white flour) with something not so bad (whole grain) then it must be good for you, this theory should also work for cigarettes. If high tar cigarettes are bad for you, then low tar should be great!

Almost forgot... dinner tonight was made from scratch meatball casserole. 👌🤤 -1lb ground beef -1lb Italian sausage -1/3 cup Parmesan cheese
-Italian seasoning, garlic powder, onion powder, salt & pepper ( I don’t measure these.. I just throw it in until it looks right to me 😂) -low sugar marinara -mozzarella or pizza blend shredded cheese
Preheat oven to 400.
Mix all ingredients except sauce and shredded cheese in a large mixing bowl by hand. Form meatballs and place in a 13x9 casserole dish. Bake 30 minutes. Drain. 
Top with marinara and then shredded cheese. Return to oven another 8-10 minutes and then broil a few minutes until the cheese is browned a little. DELISH.
