So today since Friday is the first day back on my plan after the weekend 💪🏼 ended up fasting for 16h, had an @avalanchecoffee #sugarfree caramel hot chocolate ☕️ then had my breakfast and lunch at lunch - 3 eggs, 50g tomato, 20g butter, 50g cheese and 175g mince 🧀💛 it was supposed to be steak today but I didn’t have any available so had mince instead! Also had my two boiled eggs as a snack 🥚🥚 •
So the last few months have definitely seen a lot of changes in my life but the most has been my weight. I never thought I could really get big but it happened and I didn’t even notice, we went to New York City this summer and took the kiddos and took lots of picks and looking at myself I realized it... I got fat. So I knew I had to do something, and some of you may laugh but good ole Keto Guido, Vinny from Jersey Shore inspired me to go Keto. With lots of exercise and Keto diet for the last 3 months I’ve shed 40lbs and at 36 im in better shape then I was in my 20s. Although I would argue, however, that the majority of naysayers have a more psychological rather than physical or physiological dependence with “needing” carbs. .
.But in the end, who cares. I never waste a moment trying to convince anyone to do anything they truly don’t want to do. It’s futile. .
.Unless, of course, that individual is eager to test the waters and make a change. Then I love to get into the what.. why and how of this diet — which isn’t a diet for me but rather it’s my life. .

Cheesy Chicken,Broccoli, Cauliflower Rice Skillet with Salsa Verde. So most of the ingredients are in the name. I cooked some riced cauliflower in some evoo, added garlic powder, onion powder, cumin, s&p for about 2 min. Added boiled chopped broccoli and shredded rotisserie chicken. Then added sour cream, heavy cream, cooked for a few min. Then added Monterrey jack and cheddar cheese. You guys this was so good 😍 I had left over t-bone steak from Sunday and I really wanted to use these ToGo Guac packets I found @traderjoes and this seemed like the perfect idea. It was! But seriously, how cool are these guacamole packets? Guac goes bad so fast and these work perfect for portions. 😊
