People always ask if I put anything in the pan, do you see all that oil in the pan? That’s all from the cheese. It’s not going to stick. .

One thing I always loved about the fall season is roasting the pumpkin seeds harvested from a jack-o'-lantern! I was so excited to try adding a punch of flavour to my seeds this year with #Epicure 's Wasabi Ginger seasoning (typically an aoli mix seasoning). I tossed my warm and roasted seeds in a bowl with the dry mix and it makes for a wicked crunchy treat for a snack attack. And bonus is that it remains #ketofriendly . Last nights dinner and snacks! Got a bit caught up in a movie lol! Anyway, dinner was a handmade double cheese burger with iceberg lettuce as the bun. Had some homemade guacamole, a tablespoon of mayo and some siracha. Was ok, wish I hadn’t cut it in half for a pic....it all kinda fell apart 😂😂 still tasted the same though 🤭 I’ve really taken to this dark chocolate....but also know I could quite easily begin to eat it all the time and make excuses ha ha, so I’ve decided to be a bit stricter with myself in work days and a bit more relaxed on weekends and days off to see where it takes me!

Sometimes you just need to take a personal day to get your shit together. Clean the house, let in some fresh air, cook yourself a good breakfast, get a bit of homework done, and make a solid plan for the week ahead. Or maybe that's just me 💁 I appreciate the freedom I have to do this when I need to. I appreciate my strength and honesty, my mind and body, the limited money I make and that I can put a roof over my head and food on the table. I'm learning to appreciate all the small things and everything I do for myself.

What foods should you buy to fill your keto kitchen?
Here is a list of the 4 MAIN keto food categories you need to buy from!
Healthy fats are a staple part of your ketogenic diet. Since you are looking for 75% of your diet to be made up of them, they should be a big part of your grocery cart. Select healthy fats such as avocados, macadamia nuts, almonds, coconut/olive oil and grass fed butter.
Leafy greens should be an essential part of your keto diet since they are packed full of micro nutrients, fiber, and are very low in carbs. Spinach, kale, chard, bok choy, and lettuce are all great options!
LOW CARB FOODS
What are some low carb food options that you can throw in your shopping cart? Cauliflower, broccoli, artichokes, brussel sprouts, and asparagus are all perfect side dishes for your next keto meal!
Getting 20% or less of your calories from protein is very important, especially if you are looking to build muscle with the ketogenic diet. Select steak, ground beef, pork, bacon, and eggs over leaner options like chicken and fish. Chicken and fish can still be apart of your keto diet but shouldn't be the majority of your protein source because of the low fat content.

I had some people curious what a whole day of food and supplements for me looks like. Here's tomorrow. I'm a little over on calories, but I always get at least 10,000 steps in while at work and that turns over half my calories into negative. Lol. Also it's rare for me to be able to finish a full meal due to my smaller stomach. So I'll most likely consume 70% of the prepared food.
Supplements I do mct oil, fish oil, womans multivitamin, green superfood antioxidant powder, a collagen/bitotin/elastin blend (for hair skin nails health), and extra electrolytes.
Breakfast is 2 boiled eggs, 2 pieces of bacon, and a glass of almond milk
Lunch is salad greens with ham, egg, cheese, and a little tomato/cucumber for flavor. I put wild coyote ranch on top.
Snacks are pork rinds, blueberries, and almonds.
Dinner is tuna with mayo, cheese, and some pickle. Dessert is a swerve sweets chocolate cupcake.
I drink 64-100 oz of water daily and sip on a diet soda on occasion and also the bang energy drink if I need a caffeine boost.
I also walk 10k - 15k steps depending on the day! ❤
Hey guys! Thanks so much for your interest in my tried and tested Keto Avocado Brownies recipe! As promised, here it is. I hope you enjoy it as much as we did. The best part about them? Just throw all the ingredients in your food processor or blender and voila! My favourite kind of baking especially on busy days ;).
PLEASE NOTE: As bomb as these look (and are to us lol😋) don't expect them to taste like an amazing chocolate delicacy... I mean, they are great, but they're great for what they are. This is a Keto recipe, and our tastebuds are adjusting to the no sugar lifestyle, so to someone who is used to even a normal amount of sugar in their diet, may taste different (or not sweet enough) to them lol. Basically, don't expect it to taste like a Nutella brownie made with refined sugary goodness lol! Please don't be discouraged by what I'm saying, because they are in fact awesome - if I do say so myself😌... Just want to be real with you guys, and will only share the best recipes!😊 They are a must try and won't leave you feeling like crap later on!🙌🏼 #winwin

-1/4 cup erythritol (truvia)
-1/3 cup unsweetened cocoa powder
-1 cup chopped up/mashed avocado (for me this was 2 small to medium sized avocados)
-2 tbsp almond flour
-1/4 cup coconut oil + 1/4 cup all natural almond butter
-3/4 tsp baking soda
-1 tsp vanilla extract
-nuts, unsweetened chocolate chips optional for sprinkled toppings
-Preheat oven to 350 degrees
-Add all the ingredients to a blender
-Blend for 60 seconds until smooth. You may stop in between to scrape down the sides and blend for an additional 20-30 seconds. *Do not overmix the batter*
-Spoon the batter into 12 cupcake liners or a square baking tray. I used 12 silicone muffins cups.
-Bake for 22-25 minutes
-Insert toothpick in the middle of the brownie. If no wet batter and the toothpick comes out clean, they are done baking.
-Cool for a few minutes, or enjoy hot out the oven😋!
P.S. Pictured above is how they turned out using the same recipe, while omitting the almond flour. #keto
