We’ve been in the great state of Texas this weekend visiting our favorite relatives, who also happen to be keto. I had full intentions on staying carnivore, but with all these delicious options I decided to cheat this one meal and eat okra, guac, bacon wrapped dill spears, and some sort of cheesy asparagus concoction that was to die for along with brisket and deviled egg. This was my one meal today, and I’m stuffed. Just as I was about to make something for lunch a package showed up at my door from @outeraislegourmet I changed my plan and used one of the cauliflower pizza crusts they sent to whip up this beauty! Ham, Colby jack and chipotle lime mayo. I then cooked it a little to melt it all together. This pizza crust was DELISH! I’m so impressed! Swipe for macro deets 👍

We’ve had a very busy day, so I made quick and easy fajita meat for dinner (this has become quite the joke at our house since our neighbor’s new dog’s name is Fajita😳). The toddler just prefers to graze on it and eat it like beef jerky (with Sadie waiting patiently for him to give up a piece😂). Some will make salad with it, some just add cheese and salsa. This was our morning snack!! I always have Keto baked goods on hand. My kids enjoy them too (even though they aren’t Keto). Halle asked for a keto zucchini muffin and Kellan had a keto chocolate chip cookie.

I promise there is lettuce somewhere in this taco salad! I have a busy few days coming up so I went ahead and made a huge batch of meat. Preparation is key for me... making sure I always have keto options near by keeps me from cheating (which I almost never do).
Homemade Chipotle Lime Mayo FTW!
1 cup avocado oil
Juice & zest from one lime (or about a Tbsp of lime juice concentrate)
1 egg yolk
1 tsp Dijon mustard
1-2 Tbsp Chipotle paste (to taste)
Salt to taste

Put everything in a jar, place immersion blender all the way to the bottom of the jar. Turn it on and leave it in the bottom until you see everything start coming together in the bottom. Then, move up and down the jar until it is fully blended and the consistency of mayo. Enjoy!
I tried the Quest pizza today. Admittedly I’m kind of a pizza snob and this fulfilled my craving. It’s better than any cauliflower pizza I’ve had and less effort than making a homemade Keto pizza. I will definitely rebuy as these would be good to have on hand for in a pinch situations 🙂 7 out of 10 when it comes to frozen pizza.
