I’ve been a little MIA because I haven’t had words to express the whirlwind that’s occurred over these last few weeks. Many of you know that my Mom was diagnosed with a blood cancer several months ago and has undergone round after round of chemo treatments. A couple weeks ago her doctors let us know that our best chance at beating this would be to get a bone marrow transplant for Mom. We’ve had no luck finding a match for her within our family or locally. I’m so happy to share that we’ve been matched with a donor who lives in the UK. He’s a healthy 24 year old who’s already agreed to be Moms donor. The road ahead for us is a long one... (at over 4.5 months) after thanksgiving weekend we check her into a Seattle Cancer Care Alliance property to stay until the end of March through the transplant process. A family member has to be with her 24/7 so between her husband , my sisters and I we will be alternating every few days. She’ll undergo high intensity chemo and radiation prior to the transplant as well as extensive treatments and testing. My Mom means the world to me and the thought of her going through all of this devastates me but I’m positive that we will beat this cancer and come out stronger for it. Worked on arms and shoulders on this wonderful Friday evening. I am kind of bummed because I strained my right wrist and certain workouts really bother it. I noticed it start to come on about two weeks ago and all of my traveling with my heavy laptop bag maneuvering through the airplane at odd angles really tweaked it a lot more. So I may just have to focus more on glutes for now, which I ain’t mad about 🤣
Tonight’s dinner was a couple Chicken Taquitos! This was inspired by the gorgeous @low.carb.love. For real, she has amazing and simple recipes! Inside this is some shredded chicken thighs from when I made broth earlier this week. On top is some guacamole and Tapatio hot sauce! I was going to have some steamed broccoli as well, but after eating these two Taquitos I was STUFFED. Tonight’s dinner came out to 440 cals and 3g net carbs. 🌮🍗🧀
Brown Butter Sandwich Cookies (Parachute Cookies)
Inspired by dipped, double stuffed Oreos. Having these around will allow you a casual “out” for when everyone is eating sugary treats throughout the day and you’re gazing into the eyes of a real pecan pie. Make ahead of time for side nibblers. 🍁
1/4 Cup salted butter, heated on the stove until it turns brown
2 Cups unsalted raw nuts (I used pecans, Brazil, hazels and cashews. Use what you have). 1/2 Cup Lily’s chocolate chips
2 Tbsp collagen (or 1/4 tsp beef gelatin)
1/2 Cup Lakanto gold or Swerve
1-2 Tbsp Coconut flour •
4 Oz cream cheese
2 Oz butter
1 - 2 cups powdered swerve; keep adding until you get a tight frosting like the inside of an Oreo
Pinch salt *Chocolate of your choice for final coating •
In a blender or food processesor, pulse the nuts, sweetener, collagen, and salt into a crumbly mixture. Add the rest of the cookie ingredients to the processor, adding the coconut flour gradually until the dough balls up into something resembling date paste. (The chocolate chips will melt into the dough because of your warm brown butter for a chocolate cookie. This is what you want). Spread the dough onto a parchment or silicone lined sheet tray, press out into a thin rectangular layer. Cover dough rectangle with parchment and weigh down with a sheet tray to bake (optional, but keeps it even). For round cookies, press the dough into greased muffin tins, about 1/4 inch thick.
Bake at 350 degrees 10-15 minutes depending on thickness. If making rectangular cookies, cut them while warm on the sheet pan and let them cool. For the round muffin tin ones, take them out of the tin and let them cool completely. Spackle with your thick frosting, make the sandwiches. Refrigerate while you melt your chocolate and let it cool to room temp, dip your cookies and allow to cool in the fridge on parchment lined plate. Enjoy chilled or room temp! 💖
Face to Face Friday! So - these pictures are about two weeks apart, but I most definitely felt better this morning in the second one. There is no change in weight, and if anything, I may be heavier in the second picture, just way better hydrated. Like anything, your attitude changes your appearance. Today I felt, and trust me I am no narcissist, kind of pretty. It doesn’t happens often, but it came through on how I carried myself as I got quite a few compliments today and it felt really good. Even one of the tight lipped inspectors said “I know you eat Keto but please don’t tell me you’re dieting”. I said “it’s not a diet, it’s a way of eating, that’s all.” He just said well, good. It’s working for you. It made me smile and I said thank you because he’s so by the book and appropriate and that’s probably so far outside his comfort zone, but it was still nice to hear. So keep taking your pictures, and keep comparing old to new. Keep moving forward. People will notice and they will let you know. Not that you need their validation, you don’t, but it certainly feels nice.

Today I feel more energized then I had day 3 & 4. I ate a lot today too 🤪. Still stayed within carbs and calories, I did however go over in protein 🤦🏽♀️. Breakfast - 2 eggs fried in the bacon fat, 2 slices of sugar free bacon.
Lunch - Grilled salmon with coleslaw 🤤 my absolute favorite 🙌🏽. Snack - Flying Dutchmen from @innout 2 beef patties with cheese ONLY (didn’t eat the tomatoes) I had asked for pickles and mustard but 🤷🏽♀️. Dinner - Ground beef stir fry from @diet_doctor I used ground beef, cabbage, broccoli, leeks, coconut aminos and sesame oil. I then topped it with cilantro and green onions. This was good!
I also had a cup of coffee with cream this morning. Then a venti iced coffee with cream later in the day.

Day 2 - part of my weakness is when I see delicious food, I give up my plan and eat than regret it...it’s been great to have alternative pizza, chocolate and desert with ketogenic diet but I still find myself not getting the result I want by having way too much cheat days...from Friday to Sunday🤫so for my new plan, keeping my cheat day to one Saturday...hopefully I will see some difference🥴I am very proud I passed on this gorgeous looking pizza...😌❤️🍕

1. Bone broth from grass fed cows
2. Boiled Egg (in broth)
3. Scrambled eggs
4. Spinat Pecan salad
5. Bulletproof coffee
6. Whipped cream with berries on 90 sec keto bread
Philly. Cheesesteak. Nachos.

Macros today were 98 grams fat, 93 grams protein, & 19 grams net carbs. A bit protein-heavy, but I'm OMAD-ing tomorrow so I'm all good with it!
