Zero Carb: Day 4. No ketone testing today .
Picture 2: I am not sure if this is zero carb related or if it is just from my continued workouts over the past 7 months. Made it back to the gym after not going since Saturday. Today did a much faster pace during the cardio portion of my workout but my heart rate was an average of 12 beats per minute slower and I burned less calories. Only difference I can think of between Saturday and today was zero carb. Going to have to keep track of this to see if it is related .
Picture 3: Dinner was beef & Bacon that I was too lazy to get a plate for so I just ate it right out of the container. Who needs a plate anyway. Beef was 80/20 ground beef from @traderjoes and no sugar added bacon from @wellshire not pretty but super delicious. Had a side of Gouda cheese chips. Rounded out the meal with an egg loaf donut .
Picture 4: Fasted for 25 hours. Macros were 76/24 fat to protein. I have noticed the past two nights I am more sated after me meal then I usually am. I am eating within my macros and calories still. From not having sweeteners I am not having cravings for treats or extra snacks.

The golden sautéed mushrooms and scallops are pan fried with butter, garlic, pink salt and black pepper. Simple but taste so good that I should make a bigger portion next time😋
Keto Coleslaw Dressing
- Extra Virgin Olive Oil (light taste)
- Apple Cider Vinegar
- Dijon Mustard
- Heavy whipping cream
- Pink Salt
- Black Pepper
- Monk fruit sweetener
Rotisserie chicken and cauliflower risotto for dinner! The risotto was supppperrr easy to make. I grabbed a bag of the cauliflower risotto medley from @greengiant cooked it in the micro and THEN (this is the most important part) you absolutely have to toast the cauliflower in a preheated pan that has butter in it. Honestly, I’ve been eating cauliflower rice for about a year now 😱 and it took me about 3 months to realize that if you toast it in a pan it actually tastes good 🤔🤭 today I added a heaping spoonful of garlic to the butter and toasted the veggies in the pan until the edges were brown. Then I added a swirl of hwc and about a cup of shredded parmesan cheese. Keep adding cheese or hwc until you find a consistency you like. I added red pepper flakes, pepper, and onion powder. 🤗 Yum! 5 cups cauliflower florets (about 1 pound)
1 cup shredded sharp Cheddar cheese
Sharp Cheddar Cheese 32 Oz
1 large egg, lightly beaten
⅛ teaspoon salt
McCormick Sea Salt
Grinder 2.12 Oz
Preheat oven to 425°F. Line a large baking sheet with parchment paper. Place cauliflower in a food processor. Process until finely grated. Transfer to a microwave-safe bowl. Cover loosely and microwave on High for 3 minutes. Let cool slightly. Transfer the cauliflower to a clean kitchen towel and wring out excess moisture. Return to the bowl and stir in Cheddar, egg and salt until thoroughly combined. Place a 3-inch biscuit cutter on the prepared baking sheet. Fill the cutter with about ¼ cup of the batter, patting down slightly in the mold. Repeat with the remaining batter, leaving about 1 inch between each one, until you have 8 "muffins." Bake until browned and crispy around the edges, about 25 minutes. Serve with your favorite toppings or use to make a breakfast sandwich.

1.3 lbs 99% lean ground turkey
1 tsp garlic powder
1 tsp cumin
1 tsp salt
1 tsp chili powder
1 tsp paprika
1/2 tsp oregano
1/2 small onion, minced
2 tbsp bell pepper, minced
3/4 cup water
4 oz can tomato sauce
8 large lettuce leaves from Iceberg lettuce
(optional) 1/2 cup shredded reduced fat cheddar (omit for Whole 30)
rown turkey in a large skillet breaking it into smaller pieces as it cooks.
When no longer pink add dry seasoning and mix well.
Add the onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.
Wash and dry the lettuce.
Divide the meat equally between the 8 leaves and place in the center of each leaf and top with your favorite taco fixings! -

YASS! Feeling accomplished!
Today was a success in many ways.
Started off in a hoodie as it was 60°+ this am. Apparently normalizing my blood sugars has lowered my internal furnace and I am so ok with that. I love hoodies!
Early morning start meant attempting to make an iced coffee at home. It sucked!
Went and grabbed a vanilla milk for the kiddo and an iced coffee with 2 pump sugar free vanilla syrup and
heavy cream for me. Recently discovered that my local store carries cold brew black coffee so I’ll be picking some up next time I go as this Starbucks habit has got to go. Trying to keep food dollars spent mostly on eating at home. It’s a work in progress.
Was able to make a pit stop back home for “lunch” which meant 18oz steak pan seared in butter and seasoned with pink Himalayan salt only. It’s my new fav combo/obsession if ya couldn’t tell from my previous posts.
Spent nearly 5 hours total in the city today and that’s a bit much for this country/foothill girl. I dunno how y’all do that traffic and craziness, more power to you, it had my nerves fried by the end of the day.
Home now doing some self care via a face mask (I’m green like the hulk) and hydrating with iced water before I turn in early and snuggle up with my puppers. All these changes lately has her perplexed.

Looking at my nutrition the past 2 weeks abroad, my carbcount has been about 35~40g total carbs most days. I'm also having a hard time keeping fats as high as I would like. I'm basically doing the #atkins40 at this point.
Not giving myself anxiety about it. It's definitely harder to meet stricter numbers here because most packaged meats have sugar or more carbs than necessary.
Exhibit A this sausage🌭🌭 which has 4.8g carbs per above serving size . Still good though 💁♀️💁♀️
