Super random throw together dinner tonight...I made @peaceloveandlowcarb jalapeño cheddar biscuits yesterday, so today I decided to throw some carnitas, a fried egg on one and avocado on the other and drizzled some white sauce on top... it was 👌🏼 👯♀️N
Okay this may not be the best picture, but man was it delicious!! 🤪 I got the cream cheese pancake recipe from @ketomadesimple and tried it with the maple pecan @choczero syrup and oh my gosh!!!!! Delicious. I used vanilla extract for these pancakes instead of banana! Last time I made them I used maple extract and they were delicious with just butter on top! I tried to use banana extract, but when I got home from the grocery I realized I got butter extract instead of banana! 😂 Also, fried two eggs and topped them with pepper jack cheese. Such a quick and easy dinner! I got the ChocZero chocolate and caramel syrup as well and cannot wait to try them!! Swipe to get the recipe for the pancakes!! 8 Ounces Cream Cheese Softened
1/2 Cup Heavy Whipping Cream
1/2 Cup + 2 Tablespoons Parmesan, Divided I use the green can kind
1/2 Teaspoon Basil
1/2 Teaspoon Salt
2.5 Cups Cooked Chicken cubed or shredded
2 Tablespoons Minced Garlic
1/2 Cup Chopped Onion
16 Ounce Bag Frozen Cauliflower
10 Ounce Bag Frozen Spinach
1 Cup + 1/2 Cup Shredded Mozzarella cheese, Divided
Preheat oven to 350.
In a large bowl, beat softened cream cheese, heavy whipping cream, 1/2 cup Parmesan, basil, and salt until mixed well.
Add chicken, minced garlic, chopped onion, frozen cauliflower, frozen spinach, and 1 cup shredded Mozzarella cheese.
Mix until well combined.
Pour mixture into a greased 9x13 dish and top with remaining 1/2 cup Mozzarella cheese and 2 tablespoons Parmesan cheese.
Bake for 35-45 minutes, or until casserole is bubbly and cheese begins to brown on top.
❌ LAZY KETO TIP ❌ This might sound super simple and straight forward to most, but starting out I over thought EVERYTHING. Always and I mean ALWAYS have Avocado in your house. Add a small bit to bulk up any meal. Really does help keep hunger at bay. My favourite is it mashed up with some pink Himalayan rock salt.
BONUS TIP - Add some chilli to it to send your metabolism into overdrive.

Bulletproof Coffee No Bakes!
In this hot weather we were craving a cold, cookie like treat to energize us and get our metabolism going and these fit the bill perfectly! Made with Zsweet, collagen protein, cold brew coffee, and @know_brainer ketogenic creamer packets these sweet treats are perfect on the go or as a pre-workout! •
1/2 cup almond butter
1 packet @know_brainer ketogenic creamer (we used Hazelnut flavor)
2 TBSP Organic Raw Cacao
1/4 cup Zsweet Granulated
1/4 cup Cold Brew Coffee (we used @chameleoncoldbrew)
2 scoop @vitalproteins collagen peptides
1/8 TSP Sea Salt
Mix all ingredients until smooth then place in the freezer to set until lightly firm. Then take a spoon and scoop small balls of the mixture onto a parchment paper lined cookie sheet. Sprinkle sea salt on top. Then place back in the freezer until hard. Makes 8-10 no bakes, depending on the size of the scoops!
Clean out the fridge salad for a quick (and late) work lunch today. Grilled chicken, boiled eggs, pickles, cheddar cheese, spring mix and ranch dressing. 😊.
