Still in ketosis after my cheat meal. (See previous post). I've found that if I plan to cheat, I never do it for more than 1 consecutive meal. If I cheat more than 1 meal consecutively, things tend to get out of control.
Blueberry almond flour waffles. Thought I’d swap it up this morning. I must say they were actually very good. Do I find it hard to cook regular breakfast foods and then whip out that dreadful almond flour? Oh yes, but it’s always worth it in the end. Keto Mini Muffins!
2 1/4 cup almond flour
1/4 cup coconut flour (for density - change to almond flour if you wish, 2 1/2 cups total)
1/4 cup + 2 T Pyure
1/2 tsp stevia
1/4 tsp salt
1T baking powder
COMBINE DRY INGREDIENTS
Mix in all at once:
1 tsp vanilla extract
2 tsp lemon extract or 1T juice
1/3 cup unsweetened cashew milk
6 T melted butter (if Batter is too thick add cashew milk 2T at a time)
Then fold in 1/4 cup frozen blueberries or raspberries. Frozen helps them stay in shape and keeps raspberry crumbs from turning everything red.
BAKE AT 350° 20-30 MINUTES
until toothpick comes out clean and tops are browned.
COOL COMPLETELY if you want wrappers to come off clean or silicone molds to release. .
You can omit the lemon but they are bland without it. .
You can change the ratio of almond flour and coconut flour to adjust the density. Add more liquid if you use more coconut flour. I use 1/3 cup plus 2 T for 1/4 cup of coconut flour.
I had a bad day yesterday. Constantly hungry and discontented with this WOE. I just increased my healthy fats and went over my macros a bit. Fat and protein . Woke up today and feel enthusiastic again.

Become healthier, simply by eating a diet with more real foods that are mainly organic and nutrient-dense, and to my fellow Ketoers, follow a low carb/ high fat profile.

Most people I speak with start with the emotion that they are broken. They feel nothing will fix them. Most are angry or anxious because they’ve “followed the rules” and they still have no control over the scale.
What I usually find is
1. Not enough tools in the tool box yet. Takes time to learn.
2. Too many shortcuts (lazy foods that have less satiety than higher quality versions)
3. They’ve been given bad information on how to Keto from someone else’s middle (ie. Asking me what I eat will not help you on your journey).
4. Still hanging on to the old lifestyle/using too many fake foods that ultimately trigger.
5. Overeating fat
6. Underusing electrolytes.
7. Working out at some point high an intensity.
I could go on forever. So many pitfalls that make a very simple way of eating complicated. Simplify what you’re doing and it will come together.
