✨ It’s moments like these that I live for 💖 ✨ I can remember, a year and a half ago, constantly wishing my life away. EVERY Monday I would count the minutes until Friday was here again and then pray that maybe Monday would “forget” to come. ✨ I no longer wish my days and my life away. I am able to spend time with my family. Time that I never used to have. ✨ NOW, I look forward to every day because I get to do what I love. I get to talk to the most amazing people, day in and day out, that want to change their lives for the better. It is so rewarding to see girls on my team making their dreams come true and watching my customers achieve their goals. Coming off a little hiatus here because I have been so busy:: Lightly breaded chicken with egg and almond flour (the perfect alternative to breadcrumbs ☝🏻 ) cooked with sherry wine (and a piece of bacon because I’d rather cook with bacon fat then oils and butter ) 🙂 I don’t know if that is necessarily healthier, according to keto, but the taste is top notch. Also topped with the fond of the pan which is mostly loose and crisp almond flour. Threw the green beans in the pan at the end too! 🙌🏻🙌🏻🙌🏻 #ketokatlyn
I have a cold today, headache, cramps, you name it, I’m feeling it today. But I came home, got some sunshine and felt like cooking dinner with a new twist. She’s positive with encouraging new individuals to Keto too! @litsolyo and @keto.sam.iam are the Texas keto girls who you wish you were friends with in real life cause they are so positive and real at the same time. @goodybeats is one of the first people I looked to for keto tips. I actually followed his YouTube channel first for information on keto. And finally but definitely not least is @oregongirlketo . She makes the most amazing keto desserts which I wish someday she will deliver to me 😆 but I also appreciate her honesty with struggles with life/anxiety and that it’s okay. According to the food pyramid you need mostly whole grains, some fat, protein, and sugar. It also says we need a certain amount of calories. Why did eating that way make me store fat? -
The food pyramid is the STUPIDEST thing ever! It messes with so many people and their goals. Apparently the creator of the food pyramid does not know the definition of “insulin resistance” .
Eating mostly fat, and lower carbs makes me feel great. Aren’t we supposed to feel great? I also LOVE my calories because the more I intake the more energy I have. I dare you to not count calories and eat this way for 1 week! 😉 -

This casserole was 10/10! Creamy, cheesy, meaty casserole 😋🤤 -
200 g/7oz • baby spinach
1 • small cauliflower head [cut into florets - about 350g/12oz]
1 • small onion [diced]
1 • minced garlic clove
1/2 cup • shredded mozzarella [plus a little more for on top]
2 tbsp • heavy cream
1 tbsp • butter [for the cauliflower]
1/2 tsp • nutmeg
pinch of ground cloves
to taste • salt and pepper
Turn on broiler.
Bring a medium pot of water to the boil. Once it starts to boil, add the cauliflower florets and boil for 10 minutes.
While the cauliflower boils, caramelize the onion in a little bit of butter and oil [butter for flavor, oil to keep it from burning] until soft and and then add the spinach, nutmeg and cloves and cook until wilted.
When the cauliflower is cooked, use a slotted spoon to scoop the florets into a food processor. Blitz the cauliflower until smooth with the cream and butter. Season with salt and pepper.
Now mix the cauliflower, spinach/onion and cheese together, adjust seasoning if needed, and scoop into a cast iron pan or small baking dish.
