This happened this morning, since Monday I have lost 7.5 pounds... don't get too excited though because most of my lost is water weight. A couple of things you guys may want to know when first starting the Keto Diet.
I pee a whole lot.
I am not sleeping well
I have not 💩
I am feeling exhausted
I can feel a decrease in my appetite
I got a headache yesterday, but killed it with Motrin
The bloat, uggghh - part of the problem is I don't feel like I have lost anything because I am so bloated.
These are all symptoms that you’re supposed to experience during the first part of Keto and as your body adapts to the changes, they go away. My weight loss will start to slow. I will continue to weight myself every day until Monday morning, then I will go weekly just to check in.
Let’s be honest, I will not be working out today. My body aches, very sore and just feels exhausted. Unless I get some great turn around, I am just too weak at the moment. Hopefully I will feel better tomorrow or even later today to get something in.
Ahhhhh the joys of Keto!
I made meat last night for my three day carnivore reset. Roasted chicken, meat balls, and chicken liver simmered in bone broth... I added these to the carne asada I cooked earlier in the day. Hopefully this will get me through a few days! #keto#ketogenic#carnivore#realfood#ketosis#ketolife
Been hitting the gym this past week, some cardio but mostly weights. I’m not and have never been a fan of cardio, luckily with keto I can shed the weight without needing to focus mainly on cardio.
This week has been full of surprises.
I would start the day off with a fatty coffee, and I mean fatty. About 3oz heavy 35% cream with a Tbsp MCT oil. Then after dropping my kiddo to preschool I’d head over to the local #goodlifefitness .
What surprised me the most this week is that I never once felt dizzy or light headed while working out. Instead I was full of cRaZy energy and POWER!
On my first day after almost a DECADE away from weights, I had squatted 90lbs! What the heck?!
I have no idea if my fatty coffee had contributed to this energy/power? Perhaps it’s because of being in ketosis/fat adapted? Whatever it is, it feels great!
Another surprise this week is that I was not famished after a workout. Actually, I could of gone all day without eating and not feeling sick or dizzy at all!
Let’s see what surprises next weeks gym
sessions brings me. (I like taking long weekend breaks from the gym).

The sister & I made a keto trip to Trader Joe’s last night. I forgot my list at home so I also forgot to buy crispbread 🙈, but I desperately needed some cold brew & we got that base covered! ✅Our TJs is done carrying Haloumi for the season 😭😭, but we got some new things we haven’t tried yet, like the gnocchi & the artichoke antipasto. 1 lb ground beef
1/4 medium onion diced
1/2 red pepper diced
3 tbsp taco seasoning
1 cup diced tomatoes
12 ounces cauliflower rice fresh or frozen
1/2 cup chicken broth
1 1/2 cups shredded Cheddar cheese or Mexican Blend
In a large skillet over medium heat, brown the ground beef until almost cooked through (just a little pink). Add the onion and pepper and continue to cook until no longer pink. Stir in the taco seasoning.
Add the tomatoes and cauliflower rice and stir to combine. Stir in the broth and bring to a simmer. Reduce the heat to medium low and cook until the cauliflower rice begins to soften (8 to 10 minutes for frozen).
Sprinkle the skillet with the cheese and cover. Let cook until the cheese is melted, 3 or 4 minutes. Remove from heat and top with your favourite toppings like sour cream, avocado, and chopped cilantro.
Serves 6. Each serving has 5.04g NET CARBS.

🇵🇭 SKINLESS CHICKEN LONGGANISA (Filipino Sweet Chicken Sausage) [ keto ▪ sugar-free ]
When it comes to Filipino breakfast items, you wouldn't catch me having longganisa when I was a kid. It has always been either tocino (sweet cured pork) or tapa (dried cured beef) alongside the famous sides.. garlic fried rice and egg. Maybe because there are too many kinds of sausage and I was afraid of eating the one I don't like having, the garlicky kind. 😅😅😅 If you know me by now, I would prefer eating the sweet variety.
I had ground chicken in hand and for some odd reason, was craving for these delicious links. I turned half of it into pizza crusts and half into sausages. It doesn't involve a whole lot of ingredients but the shaping did take quite some time. It is easier if you have a thin ice pop bags but using cellophane or parchment paper does the trick. I made plumpy ones with a thick ice pop bag as well (more like a treat bag) and it was too much 🤣🤣 But of course, they still turned out delicious! I made a lot and batch froze them so I can easily pop them into a pan for another day.
