Keto lasagne....sooo delicious 😍 this Lasagne layers honestly tastes like the real deal. .
.lasagne layer ....make this first..you could make anytime and keep in the fridge)
2 large eggs
4 oz cream cheese, softened
1/4 cup Parmesan cheese, grated
1 1/4 cup mozzarella cheese, shredded
1/4 tsp Ground cumin
1/4 tsp garlic salt
Preheat oven to 200 degrees Celsius Line a 9×13 baking dish with parchment paper
1️⃣Melt together the cream cheese and mozzarella cheese until a creamy soft dough.
2️⃣Next, add eggs and Parmesan cheese, to the cheese mix and stir well until all combined.
3️⃣spread mixture out into the dish or on an oven tray creating an even layer. prick with a fork and add seasonings.
4️⃣Bake on the middle rack for 20-25 minutes. (Put in fridge to cool)
The mince ; I used beef grass fed mince cooked with garlic and zucchini, added some fresh herbs, added 2 cups of my roasted tomato and roast capsicum sauce (you can use whatever you usually use or see my recipe in saved stories)
I then added 1 tablespoon of @meadowmarrowbonebroth to a cup of hot water and poured this in with the sauce, let it simmer then once cooked add a layer to the bottom of your lasagne dish.
Place the above made cheese layer on top.
I then add 1 cup of heavy cream and Parmesan cheese and 1 tablespoon of Dijon mustard) just cooked on stove top). I just drizzle this over the top. Then sprinkle a little mozzarella, feta cheese and rosemary. Into oven and yum yum in your tum!!! .
I only make one layer with it as it’s very filling.

3 c. riced broccoli
1 large egg
1 1/2 c. shredded mozzarella
1/4 c. freshly grated Parmesan
2 cloves garlic, minced
1/2 tsp. dried oregano
Freshly ground black pepper
Pinch crushed red pepper flakes (optional)
2 tsp. freshly chopped parsley
Preheat oven to 425° and line a large baking sheet with parchment paper. Microwave riced broccoli for 1 minute to steam. Carefully ring out extra moisture from the broccoli using paper towel or cheese cloth.
Transfer broccoli to a large bowl and add egg, 1 cup mozzarella, Parmesan, and garlic. Season with oregano, salt, and pepper. Transfer dough to baking sheet and shape into a thin, round crust.
Bake until golden and dried out, 20 minutes. Top with with remaining 1/2 cup mozzarella and bake until cheese is melted and crust is crispy, 10 minutes more. Garnish with parsley and pepper flakes if using.
I’m not dairy free but wanted to try @eatenlightened new dairy free line! This flavor caught my eye when I was at @sprouts I tried it tonight and OH MY GOSH! It’s so good!!! A couple spoons & I am set! YUM! Nice job guys! I have tried a couple flavors so far and out of 5, I only disliked one. Not bad at all. Some are ok but everyone’s taste buds are different because I liked some and some my family didn’t. What’s your favorite flavor from @eatenlightened

8 oz cream cheese softened
1 stick (1/2 cup) salted butter softened .
1/2 cup creamy natural peanut butter (the kind that’s only peanuts and salt)
1/3 cup Lakanto Monkfruit classic granular
1 tsp vanilla extract
4 oz Lilly’s baking chips (stevia sweetened chocolate chips)
Cream everything together in a mixer. Line baking sheet with parchment paper. Scoop into individual balls. Freeze for 30 minutes and then I store each in their own individual zip lock and pull one out of freezer or fridge when I want one.
These were AMAZING! I will be making again soon! Crispy & delicious! Didn’t even feel like I was eating cauliflower! It was good plain & even a little ranch. To be honest, there’s cheese & bacon everywhere because I didn’t have the time & didn’t have the patience to sprinkle them neatly lol. But it made it taste better! Keto Cabbage Lasagna 😋

1 large head cabbage, leaves separated
2 tbsp. extra-virgin olive oil, plus more for baking dish
1 onion, chopped
2 cloves garlic, minced
1 1/2 lb. ground beef
1 (28-oz.) can crushed tomatoes
1 tbsp. balsamic vinegar
1/4 c. torn basil leaves
Freshly ground black pepper
3 c. ricotta
2 eggs, beaten
1/4 c. grated Parmesan, plus more for serving
3 c. shredded mozzarella
Preheat oven to 350°. In a large skillet over medium heat, heat oil. Add onion and cook until onion is soft, about 5 minutes. Stir in garlic and ground beef, breaking up meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes; drain excess fat. Add crushed tomatoes and balsamic vinegar. Bring mixture to boil then reduce heat and simmer for 20 minutes. Season with salt and pepper then stir in basil.
In a medium bowl, combine ricotta, eggs, and Parmesan.
Grease a large baking dish with olive oil. Spoon a thin layer of sauce into bottom of baking dish. Add a layer of cabbage leaves, then top with more sauce, ricotta mixture, and mozzarella. Repeat layering twice more.
Bake until cabbage is tender and mozzarella is bubbly, about 25 minutes. Garnish with more basil.
