Happy transformation tuesday. 😘 Wil post a few transformation pics after this post. Last night I wanted soup for dinner and made a huge pot and had enough to freeze  10 bowls aswell.

I used chicken brot and added:
Cauliflower
Zucchini
Brocolli 
Carrot
Pumpkin
Onion
Mushroom
A few green beans
Chicken
Sausage
Bacon
Salt
Pepper

And ate it with a slice of avocado on top. It was tasty and very filling.
Next time I want to add spinach or cabbage.

HAPPY ONE YEAR KETOVERSARY TO ME!

Started out our keto journey a year ago this past July and never regretted a single moment. Sure we have our ups and downs with keeping up with keto 😆 but it has been so transformative in so many ways.

I had just started experimenting with #keto with the picture on the left but not really following it properly. At the same time I was putting in workouts and watching my calories, but the baby weight just wouldn’t budge! I was pushing 185lbs which for some may not sound crazy for someone who is 5’7 but I always hovered around 135lbs and the weight loss journey was frustrating as hell, until I fully got into keto!

I know we talk a lot about aesthetics with keto but it’s benefits are endless!! Better mental clarity, more energy, some have gone as far as reversing their type 2 diabetes, reduced inflammation and the list goes on.

Bacon and scrambled eggs for breakfast. I went three days on an egg fast and lost a total of 8.8 pounds. I resumed keto yesterday and lost an additional .2 pounds which is really exciting. A total of 9 pounds in four days. A great way to start back. I’m going to try to stay as close to zero carbs as possible and see how that works for my body. Day 1 of OMAD complete.

I fasted until 6:45, and I wasn’t actually hungry. It’s amazing how mental my “hunger” is. I stayed well hydrated, drank my electrolytes, and felt totally energized! .

As my good friend @namaste.in.ketosis said: “The habit of eating is so interesting. Our body gets used to eating at certain times and then tricks you into thinking you are hungry. I’ve noticed when I fast I can push past that hunger and go much longer than I thought without feeling “hangry” - stable blood sugar is a magical thing” .

Stable blood sugar is an amazing thing! And by avoiding carbs and added sugars I no longer get those hunger pains and mid day crashes. .

We had some fresh garden tomatoes, and I was CRAVING a BLT. We didn’t have lettuce, but... tomato, bacon, mayonnaise and pepper on 2 slices of havarti really hit the spot. .

I ate around 1500 calories in my eating window, and feel great! 
I’m excited for another day of fasting tomorrow. There are so so many benefits to fasting! •protect against neurodegenerative diseases •insulin levels drop and human growth hormone increase •reduce risk of heart disease •reduce insulin resistance and lower blood sugar levels •reduce blood pressure and cholesterol
•boost metabolism for fat loss •reduce inflammation in the body •remove waste materials from cells 
Just to name a few! .

I also paired this with a TON of veggies, a fatty coffee, and chicken thighs... I could get used to this whole OMAD thing... really simplifies your day! For now, I’m just planning on committing to 5 days. ☺️ .

I almost let 2 pints of heavy whipping cream go bad! I thought it was another month out but I was wrong so I made some whipped cream bombs for my coffee. I whipped the cream (to soft peaks)then added 2 tbs powdered Swerve and 1 tsp vanilla per cup of cream.  I also added unflavored gelatin to stabilize it but I don’t think that was necessary since I froze them.  Now i have a bag full of these little beauties to add on top of hot coffee ❤️❤️

Lunch – Chicken thigh on a creamy mushroom sauce, with steamed vegetables and a cilantro mayo sauce. (protein + carbs from veggies + fats)

Snack – This is optional, because when you are on a keto diet, it is very rare you will feel the need to snack, but if you do, having almonds or any kind of nut in your house handy is very helpful.

Recipe for the fish stew/soup👇🏼
Ingredients:
✨White fish
✨Tomatoe
✨Greenbell pepper
✨Garlic
✨Onion
✨Tomatoe paste
✨Seasonings
✨Olive oil

dEATs:
1.Cut a white fillet into cubes, place in a bowl and season it with (salt, black pepper, red pepper, garlic powder, fish seasoning, turmeric).
2. Cut up the veggies:
1 tomatoe, 1/2 a green bellpepper, 1 onion and 3 garlic cloves.
3. Add some olive oil to a pan, the onion and garlic. 4.MIX.
5. Add the rest of the ingredients, let it COOK a bit then add a couple cups of water, and 2 tbsp of tomatoe paste.

Since I had a rest day from the gym I cooked most of the day which was fun tbh. 👩🏼‍🍳 Recipe for the fish stew/soup👇🏼 Ingredients: ✨White fish ✨Tomatoe ✨Greenbell pepper ✨Garlic ✨Onion ✨Tomatoe paste ✨Seasonings ✨Olive oil dEATs: 1.Cut a white fillet into cubes, place in a bowl and season it with (salt, black pepper, red pepper, garlic powder, fish seasoning, turmeric). 2. Cut up the veggies: 1 tomatoe, 1/2 a green bellpepper, 1 onion and 3 garlic cloves. 3. Add some olive oil to a pan, the onion and garlic. 4.MIX. 5. Add the rest of the ingredients, let it COOK a bit then add a couple cups of water, and 2 tbsp of tomatoe paste. 6.Close the lid and let it SIMMER until the fish is cooked. Started at 233 lbs. I fell off a bit last week, but four pounds in two weeks still isnt bad at all. All thanks to God for giving me the strength to keep pushing even when I don't feel like it. I don't really do feelings, but I'm absolutely in awe after a couple of my friends told me I inspired them to start putting in work. I was craving smth sweet, so I decided to make these PEANUT BUTTER STRAWBERRY CHOCOLATE DELUXE CUPS 🤩🤩 and they were delicious and on top of that they're keto friendly!!

🥜First layer is chunky peanut butter which I melted with a 2 tsp's of coconut oil.
🍓Second layer serves as jam but since it isn't keto I used frozen strawberries cut into little chunks (heat a little beforehand or use fresh strawberries).
🍫Third layer melted dark chocolate with 1 tsp lf coconut oil.

I heated everything on the stove, on top of hot water so they don't get burned.

Since buying my new waffle maker I’m obsessed about finding new keto waffle recipes.... Especially savory ones, as I love waffles with butter on the top. Unfortunately there was a lot of wasting in the process, as some of the recipes simply did not work well. This one, though, tastes great! I got it from the @ketodiet_app and can totally recommend. I made 7 waffles and will be freezing a few individually for a quick keto snack to go and trying a few different toppings.
