I started my Keto diet 3 months ago after being vegan for a month and trying different diets because I had high cholesterol (High LDL and low HDL). I found many articles about different diets, food supplements and even Statins.
First thing that made sense to me was being Vegan because there’s no meat so I expected if I don’t eat cholesterol my cholesterol level will fall consequently. I checked my blood after being Vegan for a month and the result shocked me in a way that I did the second blood test after few days; my cholesterol raised from 235 to 246 after a month of not having cholesterol!!!!
At this stage a doctor prescribed me to take Statin ( I’m just 25!!!!).
I was very close to start taking statin but, since I’m a researcher, I started reading and learning how liver and cholesterol work in my body, without considering (commercial) articles about solution for high Cholesterol.
I realised that your liver produces 80% of the cholesterol in your body and about 20% is from the food you eat, and also understood that if you have high cholesterol it’s only because you’re not treating your liver in a right way.
So the next thing to study was the fact that how you should take care of your liver so it produces enough cholesterol and not too much,
To cut the long story short, I found out that too much carbs and sugars will hurt your liver and that’s why you might have high cholesterol.
I looked up for the best low carb diet and .....here we go ;KETO .
-my cholesterol lowered significantly - I lost 15kg
- my blood sugar decreased from 96 to 71
- and so many other good things that happened to my body and mental health (BTW SORRY FOR MY BROKEN ENGLISH)
How my breakfast has changed! I've been back to keto for 6 days now and this time I am determined to stick with it. It's never been about the weight loss for me, but about how good my body feels without carbs.
This time the cravings are much less than when I did keto for the first time, and having supplements are keeping the keto flu at bay.

INGREDIENTS (YIELDS: 1)
3 c. cauliflower, riced
6 eggs, separated
1 1/4 c. almond flour
1 tbsp. baking powder
1 tsp. kosher salt
6 tbsp. butter, melted
5 cloves garlic, minced
1 tbsp. chopped thyme
1 tbsp. parsley, chopped
Parmesan, for serving
1. Preheat oven to 350° and line a 9-x-5” loaf pan with parchment paper. In a medium bowl, microwave cauliflower for 3 to 4 minutes or until soft and tender. Let cool. When cool enough to handle, transfer cauliflower to a clean kitchen towel and squeeze to release as much moisture as possible.
In a medium bowl, beat egg whites until stiff peaks form. Set aside.
2. In a large bowl, whisk together almond flour, baking powder, salt, egg yolks, melted butter, garlic and about a quarter of the whipped egg whites.
3. Beat until well combined, then stir in microwaved cauliflower. Fold in the remaining egg whites and mix until just incorporated. (Mixture should be fluffy.) Fold in the thyme and most of the parsley (save some for topping).
4. Transfer batter to the lined loaf pan and sprinkle with more herbs. Bake until the top is golden, about 45 to 50 minutes. Let cool completely before slicing.
5. Sprinkle slices with Parmesan and more parsley.
My first week of keto has gone great, but hitting my macros was a slight challenge. I’m so used to a diet heavy in protein, that I was coming in around 25% a day instead of 20%. This morning, I actually had time to tweak ingredients and I think this will be my go to breakfast. My 90 second bread has been tweaked all week and I think I’ve got that perfected too. I’m not a big bread eater, but I don’t have a lot of time for breakfast during the week so I want something that lets me grab and go!
90 Second Bread
3 tbsp almond meal
.5 tsp baking powder
1.5 tsp ghee
Mix in a ramekin and cook in the microwave 1 min 30 seconds. Slice, toast, and enjoy!
