@sockguru, staunch disbeliever of non-traditional flours, thought it was, "a great cake" (same guy who straight up spat out my first go at keto scones) so this recipe c/o @fooddreamer is a definite keeper. She also has a scaled-down recipe with slightly different ingredients for mini victoria sandwhiches for two. I tried it before committing to the full-size recipe, and they were equally wonderful. Google alldayidreamaboutfood victoria sponge to find the recipes. She's starting to become my go-to for keto baking recipes.
Now, I just need to figure out what else to do while I partake in my elaborate 10-step meditation on applying facial snake oils to distract myself from the lowkey extreme anxiety I feel before going to bed the night before my first shift at work. .
Don't get me wrong, there are more days than I'd expect when I find nursing surprisingly emotionally fulfilling (real talk: I didn't go into this profession with a bleeding heart), but even on those days, the work can still be physically, mentally, and emotionally exhausting because people can die if you make a whoopsies, and you're dealing with people in one of the worst days of their lives not always being able to cope in the best ways possible in a position where the breadth of your responsibility and culpability is disproportionate to the limited authority you actually have. I need a calming mask.
Anddd when dessert is this good it deserves its own post! I made @ibreatheimhungry ‘s espresso chocolate cheesecake bars and they came out so good! I have been craving carrot cake so I did some research and after trying a few things I came up with this delicious Carrotless Keto Carrot Cake with Cream Cheese Frosting
1.25 cups coconut Oil, melted
1.5 cups monkfruit sweetener, classic
3/4 cup coconut flour
3/4 cup fine almond flour
2 tsp cinnamon
1 tsp ground ginger
1 tsp baking soda
2 tap baking powder
1/2 tsp salt
2 cups almond milk, unsweetened
3 zucchinis, grated and all juice squeezed out
1.25 chopped pecans
2.5 tsp Carrot Cake Extract (I use @oooflavors - awesome products and flavor options #notendorsed#justafan )
Cream Cheese Frosting
8oz unsalted butter, softened
12oz cream cheese, softened
2 cups Monkfruit Sweetener, Confectioners
1.5 tsp vanilla extract
1 Tblsp heavy cream
For cake - in a 10 inch springform pan, grease and place parchment paper on bottom. Whisk the coconut oil and classic monkfruit sweetener in a bowl. In a second bowl, blend the dry ingredients (both flours, spices and salt only). Put half in oil/sweetener mixture and blend on medium speed. Add eggs, carrot cake extract, almond milk and the rest of dry ingredients and blend at medium speed until combined. Fold in zucchini and pecans. Pour into prepared pan and bake for 85 minutes at 350 degrees.
For frosting - cream butter and cream cheese. Sift in powdered sweetener and pour in vanilla and cream. Blend until combined and spreadable.
I made a pecan top with 1.5 cups golden monkfruit sweetener, 1/4 cup almond flour, 1/4 tsp salt, 1.5 cups heavy cream, 4oz butter, 1.5 cups chopped pecans and 1.5 tsp vanilla simmering for 45 minutes and then let cool completely.
Let me start off by saying I am not a baker. I can never follow a recipe. I decided to wing it and make my own cheesecake recipe!! Started off with 2 softened packs of cream cheese. 2 eggs. 1/2 c sour cream. 1 tbsp vanilla extract. And 3 tbsp of torrani Carmel syrup. Blended together until mixture was smooth and creamy.
Lined 12 cupcake holders and filled! This recipe should make exactly 12 cheesecakes.
Baked for 20 mins at 350. Let cool on the counter for 30 mins and then stuck in fridge to cool completely! We will be serving with a dollop of homemade whipped cream!

🍕 Deep Dish Cauliflower Pizza😍 Tag someone who would love this 😋
1 large head cauliflower, grated (about 3 cups), squeezed dry of excess liquid
2 1/2 c. shredded mozzarella, divided
2 large eggs
1 c. freshly grated Parmesan, divided
1 tsp. garlic powder
Freshly ground black pepper
2 tbsp. pizza sauce
1/3 c. mini pepperoni
Torn fresh basil, for garnish
Preheat oven to 425º and grease a cast-iron skillet with cooking spray. In a large bowl, combine cauliflower, 1 cup mozzarella, eggs, 1/2 cup Parmesan, and garlic powder and season with salt and pepper. Press mixture into skillet, making sure to get up the sides, and bake until deeply golden and dry, 25 minutes. Spoon a thin layer of pizza sauce over crust and sprinkle with remaining mozzarella and Parmesan. Top with mini pepperoni and bake 5 minutes more. Sprinkle with basil, slice, and serve.

Tweaked the Fathead pizza crust to better suit my taste (i.e. improved "less flabby" texture, imo): Melt together:
28g cream cheese
168g mozzarella cheese
Mix in thoroughly:
1t white wine vinegar
Mix in all dry:
96g finely ground almond flour
28g shredded parmesan cheese
1t psyllium husk powder
1/2t baking powder
1t Italian spices to taste
Press into 12" round crust on parchment lined baking sheet. Prick crust everywhere with fork. Bake at 400° for 15 minutes. Top as you like (keep volume somewhat low so as not to weigh down the crust & use high liquid toppings like tomato sauce sparingly) and bake an additional 15-18 minutes. Remove from oven and let rest for 5 minutes before cutting and serving.

1/2 tsp salt
2 tsp apple cider vinegar
1 tbsp @chosenfoods avocado oil
1 cup hot water
1/2 tsp garlic
preheat the oven to 450F. in a large bowl, mix the dry ingredients until well combined. add in the acv, avocado oil, and stir in the hot water. mix for 1 min or until a sticky ball of dough forms. set aside for 10 mins while preparing a baking pan. roll the dough into 6 balls and brush the tops with water. bake for 40-45 mins, cool, then FEAST 🍴

I found @swervesweetie chocolate cake mix at Wegman’s in their gluten-free section. I was psyched about it because it saves so much time to use box mix.
I like the product and I’ll buy it again because it was simple and tastes like a moist, chocolatey cupcake.
I made my chocolate buttercream icing with butter, @ghirardelli unsweetened cocoa powder, @swervesweetie confectionary sugar, vanilla extract, heavy cream and water.
While I wasn’t going for the 💩 aesthetic, it was humorous to me after I iced my first one .. figured what the hell, why not?!
Sprinkled some @lilys_sweets_chocolate dark chocolate chips and sprinkled some fresh-ground sea salt on top!
