REVERSE DIETING

MAY - OCT: In May I began my dieting/fat loss phase. However, unlike most the idea was to drop weight at a very very slow weight, because I didn’t have an event that I needed to be super lean for. This meant bringing calories down very slowly, and not dropping calories every week, even if scale weight didn’t go down. In October I started my new job that required me to be on my feet all day, meaning my non-exercise calorie burning increased massively on a daily basis. 
OCT - PRESENT: From mid October onwards I started my reverse diet/metabolic adaptation phase. This process involved/involves bringing calories up very slowly, in order to still stay lean, but give myself the option of eating more food to fuel performance, and fill ma belly. After dieting for so long your body becomes very sensitive nutrients... E.g. Lower carbohydrates means you somewhat rehabilitate your pancreas from constantly secreting insulin, and your need for glycogen storage is more demanding. 
Since mid October my calories have gone up from 2300 (lowest I went this year) to now around 2550.

What happened?

I am the lightest I have ever been ever😂 This morning I hit my lowest ever weight of 66.7kg, meaning my body is obviously still primed to be fed more food (yay me). While some people do lose muscle mass during dieting, that barrier can be knocked down by simply keeping protein intake relatively high. Providing your body with complete amino acid profile proteins (animal meat) puts your body in a good position to hold onto muscle mass.

Leptin is a hormone released from fat cells in adipose tissue. Leptin signals to the brain, in particular to an area called the hypothalamus. Leptin does not affect food intake from meal to meal but, instead, acts to alter food intake and control energy expenditure over the long term. When the body is functioning properly, excess fat cells will produce leptin, which will trigger the hypothalamus to lower the appetite, allowing the body to dip into the fat stores to feed itself. Unfortunately, when someone is obese, that individual will have too much leptin in the blood. This can cause a lack of sensitivity to the hormone, a condition known as leptin resistance. Because the individual keeps eating, the fat cells produce more leptin to signal the feeling of satiety, leading to increased leptin levels.

Low levels of leptin are rare, but can occasionally occur. For a few patients, a condition known as congenital leptin deficiency keeps the body from producing leptin. Without leptin, the body thinks it has no body fat, and this signals intense, uncontrolled hunger and food intake. This often manifests in severe childhood obesity and delayed puberty. The treatment for leptin deficiency is leptin injections.

Absence of leptin makes the body think it does not have any fat whatsoever and this results in uncontrolled food intake and severe childhood obesity.

Beef Curry with Parathas

As my family is of Indian descent, these kinds of dishes were what we had for dinner most nights and the first things I learned to cook. Since going keto I basically had to give up all of that. I didn't miss it at first because it was stuff I had so commonly eaten. But then when I was cooking this meal today there was something comforting about it, the smells of cumin and tumeric in the air. And when I ate it I realised how much I had missed Indian food. It transported me to my grandparents house. 
These parathas aren't quite like my grandmother's, but I got it pretty damn close considering I'm using keto ingredients (recipe from @gnomgnom.yum). I soaked them in coconut milk first which created the right chewy texture. I added a bit of avocado and coconut yoghurt, lovely cool textures to balance the curry.

PS: I finally managed to photograph steam, hoorah!

Столовая ложка кремчиз, немного сливок 20%, фитпарад 7, тщательно взбила миксером, добавила семена чиа, охладила 30 мин в морозилке. 😋 кофе без кофеина. И пока дети не пришли со школы я балдела, смакуя, растягивала удовольствие в тишине. Да люблю тишину. So I started this challenge. And got slapped with some hard truth. I’m horribly out of shape. While I’ve always been overweight (like since toddlerhood), I’ve always maintained some level of stamina. Jumping jacks were never this difficult before, what happened? 
So I just finished day 1, plan to stick with Keto and this challenge. 
Second bit of horrid news 😭Bang elevates my blood sugar. In one hour it went from (fasting) 78 to 105 only drinking Bang, nothing else. Tested again 20min later. 132. It was still climbing. 😰 what will I do for caffeine?

So I started this challenge. And got slapped with some hard truth. I’m horribly out of shape. While I’ve always been overweight (like since toddlerhood), I’ve always maintained some level of stamina. Jumping jacks were never this difficult before, what happened? So I just finished day 1, plan to stick with Keto and this challenge. Second bit of horrid news 😭Bang elevates my blood sugar. BE A FAT FUELLED, FAT BURNING MACHINE ON #KETO! I was just presenting last week in Mallorca about #glucagon and it’s role in #fatburning and #ketogenesis. We get into the post absorptive state about 4 hours after a meal. Insulin, the fat storage hormone dominates in the 4 hour post prandial absorptive state, and glucose is the dominant fuel. When blood glucose levels are lowered, and insulin lowers, this triggers our metabolic BFF glucagon to dominate in the post-absorptive stats. FATTY ACIDS are the predominant fuel of this stage, and fatty acids are broken down by beta oxidation to make acetyl CoA, some of which are also made into #ketones if glucose is low enough - which is why we are able to measure the presence of ketones and why they are a good indicator that the body is predominantly using fatty acids for fuel. Glucagon is the antithesis to insulin. @ambimorph has done some research into how we may enter the post absorptive more rapidly on keto and low carb, which is fascinating and likely due to lowered #glycogen storage from eating low carb. Completed 1 year of keto today and it feels surreal that I could stick with a way of eating for this long! 😄❤
A year ago, I was at my heaviest weight (78kgs), completely unhappy, highly anti social due to lack of self confidence and extremely depressed. Cut to 1 year later, I've lost 22kgs in all , reversed my PCOS and attained so much happiness in the past 365 days! 😊 My journey is nowhere near complete, but 1 year in I can tell you, it's all absolutely worth it- the keto flu, the heartache of saying no to your favourite sweets on holidays, everything! 😄
 Because, you won't even know, but after a while, keto will become a wonderful habit that you will be able to follow effortlessly and surely, the things you will gain are far more than just the weight you'll lose (which you'll lose a lot too. 😅) Happy Ketoing everybody! Just keep calm and Keto On! ❤💪

They were sooo juicy and tender, you could literally cut it with a butter knife. 🥩 RECIPE: **(important) bring meat to room temp**. Season with Montreal steak seasoning. Or just salt and pepper.
