I ordered a “Taco Salad” not long ago at a Mexican Restaurant. I was shocked to see that is was more of a cheese/chicken dip with a few pieces of lettuce thrown in🙆🏻‍♀️🤦🏻‍♀️. REALLY?!?!? Let’s all try to focus on the nutritional value of a salad but remember A FEW chips with cheese are ok too🤷🏻‍♀️. Every meal needs a scoop of @wildbrine probiotic fermented sauerkraut, this was the cilantro and beet mix. Plus it’s a great stress buster too, and we all need a chance to relieve stress more often. You might be surprised to see a photo of a banana on my feed considering I follow a #LCHF way of eating. 🍌 But believe it or not, an unripe banana has far less carbs than a ripe one! 🤯 (Digestible ones at least) It is also one of the best sources of prebiotics, which are crucial for a healthy gut. Resistant starch is any starch that is not absorbed as glucose, and travels undigested to feed the good bacteria in our gut. 🙌 RS is the best source of prebiotics! Many studies in humans show these types of starches have powerful health benefits including:

✔️ lowered blood glucose response to food
✔️ improved insulin sensitivity
✔️ reduced appetite
✔️ breaks weight loss plateau

Some RS naturally occurs in raw food (green bananas, raw potatoes) and some is formed after cooking and cooling food (rice, beans, potatoes). 👩‍🍳

The easiest way to incorporate it into a low carb diet is with raw potato starch. 🥔 1tbsp has 10g of carbs, with around 70% of those being RS. I made up a sauce for this curry based on several I’ve made in the past...

1 Tbsp grated ginger • 1 Grated garlic clove • 1 Tbsp coconut aminos • 2 Tbsp fish sauce • 1 Tbsp rice vinegar • 1 Tbsp maple syrup • 1 Tbsp red curry paste • 1 heaping Tbsp almond butter -

I sautéed 1/2 an onion in coconut oil for 2-3 min then added in almost every vegetable I had left in my fridge! Cauliflower, zucchini, carrots, red pepper and kale. I let all the veggies cook together for a few min then added the sauce and a whole can of full fat coconut milk. -

Usually I would simmer this covered for 15-20 min on the stove, but tonight I made it in my Instant Pot! I sautéed in the pot and then set to pressure cook for 4 min. Once I let out the steam I added pre-cooked chickpeas and dished it out on a bed of the quinoa/farro mix I made on Sunday. So quick and seriously such an easy dinner!

I let all the veggies cook together for a few min then added the sauce and a whole can of full fat coconut milk. - Usually I would simmer this covered for 15-20 min on the stove, but tonight I made it in my Instant Pot! I sautéed in the pot and then set to pressure cook for 4 min. Once I let out the steam I added pre-cooked chickpeas and dished it out on a bed of the quinoa/farro mix I made on Sunday. Rub your natural pork loin with a little olive oil and mustard, then lots of rosemary, oregano, basil, and pepper

Cook for 30 min at 425, then turn heat down to 375 and cook for another 30-45 min depending upon the size of the cut.

For a thick loin I like to take it out when the internal temp is around 140. Let that baby rest for a solid 10 min to keep it juicy.

You know it’s summer when there is lobstah rolls and rosé! Every time I eat a lobster roll, I think of the fantastic vacation to Acadia National Park a few summers back I took with my mom and sister. It was one of the best girls trips ever. We hiked, we ate lots of lobster, we laughed, we drank, we kayaked, and most of all we enjoyed our time together. So many sweet memories. Dinner 👏🏻 goals 👏🏻
I made scallops for the first time the other day and YUP. I was a little scared because trying new things in the kitchen can be intimidating and scary.
Thanks to my friend Laura @laurahopkinsnyc she shared a really easy way to make scallops which made me stop and think about how silly it is that I’ve never tried to make them before, since they’re one of my favorite seafoods. I never even thought about making them because I didn’t know how, since I never tried, and that’s what was holding me back? #hellnaw She also shared some really good inspiration about working at a desk all day or working a job that doesn’t really use the creative side of your brain. Getting in the kitchen and having fun with your food is an amazing way to use that creative part of your brain that possibly goes untouched every single day.
These garlic ghee scallops with a mushroom and onion hash were SO GOOD and so easy and are probably going to be one of our dinner staples from now on.

Tried out a few new ingredients in my almond porridge this morning. I ❤ these @mistydayplantpotions tonic blends (can't wait for my shroom brew to arrive!) . Thought I'd try out some @good.pantry chia flour instead of ground chia seeds - much thicker porridge as it sucked up the liquid!  So altogether today's porridge contained almond pulp, ground flax seeds, chia flour, almond milk, coconut, Misty Day tonic blends, and... cottage cheese! Cottage cheese is a great protein source if you can tolerate and are happy to eat dairy. Served with coconut yoghurt, blueberries and a sprinkle of cinnamon. .

If you don’t and you want some chia seed pudding in your life immediately (or at least in 3 hours 😂) here’s how you can make it happen. 👇🏼
Combine 3 cups of unsweetened almond, cashew or coconut milk and 1/2 to 3/4 cups chia seeds plus a tablespoon of maple syrup to sweeten (or a few drops of vanilla stevia). Combine and soak for 10 minutes. Give it a stir and then place in your fridge for at least 3 hours or overnight. This will last for 3 days in the fridge. Top with flaked coconut, nuts, fruit, granola or my fav, a crumbled Lara Bar (I like the lemon flavor). 🤗
