At this time of year the carrots have not been sprayed with any chemicals. So now is the time to make a tabbouleh or pesto or salad using the carrot greens. They taste like rich parsley and have a nice texture. Chop, wash and spin dry. Add to salads, mashed potatoes, pesto, tabbouleh, or freeze to add a summer flavour to soups over the winter.
