My summer harvest is still producing!!🌱 It feels good to rely on nature for sustenance. No matter what happens or how abusive humans are to the planet, the earth never gives up. It is constantly fighting to survive and provide nourishment for us. That is why it is so important that we treat it with respect. Recycling and not eating meat isn't enough. We need to hold the fossil fuel and single-use plastic industries accountable. We need to divest from banks that invest in profit over people by funding dirty, dangerous and racist pipelines. We have to constantly choose to refuse single-use plastic every step of the way, in every private or public space we ever visit. We need to open our eyes to the reality of how much plastic ends up in landfill, but perhaps even more importantly, we must reframe the idea of recycling. When it comes to plastic, it is not a solution – it’s the last resort. Recycling is not something that governments or charities do out of the goodness of their hearts – it’s an industry worth hundreds of billions of dollars globally. As a result, 70% of potentially recyclable plastic in Europe ends up in landfill, in oceans or are incinerated, leading to the release of devastatingly harmful toxins into the environment. Keep having those difficult conversations. Keep getting weird looks from strangers and disrupting people's consciousness when you refuse to accept anything plastic. It's that time of year..again!
Loaded with antioxidants and disease-fighting vitamins, these aren't just for carving, making them a bonafide great superfood. Pumpkin is a highly nutrient-dense food. It is rich in vitamins and minerals but low in calories. Pumpkin seeds, leaves, and juices all pack a powerful nutritional punch. The potassium contained within pumpkins can have a positive effect on blood pressure. The antioxidants in pumpkin could help prevent degenerative damage to the eyes.
Pumpkin puree or canned pumpkin can be used as a replacement for butter or oil in baking recipes.
#Pizza night in the house! 🍅 I’m still making the most of heirloom tomatoes over here. All I did was layer sliced tomatoes over the pizza dough and baked it. Then I topped with dressed salad greens, prosciutto, and shaved Parmesan. So it’s basically salad... 😋

Selling the first Christmas trees in 1976, we have been in business 42 years and we continue the family legacy that our mother and father started.

The girls and I enjoyed the rainy day at this Sunday’s Haddon Heights Farmers Market. They picked out some corn, green beans and cherry tomatoes :) I also was very excited to find Gail’s farm who has eggs and... exotic mushrooms! I got some of their Maitake mushrooms and was SO excited to try mushroom jerky, they make two kinds out of oyster mushrooms, I got the sesame ginger teriyaki and it is phenomenal!! I also picked up this weeks micro greens and some elephant garlic from @evergreenvalleyacres. And last but not least, some chicken soup and outstanding bruschetta by the wonderful twins @fandessa gourmet, thank you Ladies for your delicious soups and other delectables!! I was sad I didn’t get to see @hellopaozino there today and pick up some of her AMAZING Brazilian cheese balls, but I will most definitely be going by Westmont Diner this week to get some (I’m almost positive she said I can get them there too). We had a great time participating in a “gleaning” of leftover crops alongside some of our colleagues in the Legislature at Sheppard Farm Friday. We hope that more farmers will continue to learn about this practice, and that more residents and nonprofits will be able to rescue some of the 96 billion pounds of food that currently go to waste across our country.
I used many of my #saturdaymarketfinds when making this meal.
Spaghetti Squash with Chicken, Ricotta and Fresh Herb Meatballs, topped with Sautéed Maitake Mushrooms and Parsley Micro Greens. This was a totally #glutenfree meal. No grain based pasta and no breadcrumbs in the meatballs. If cooked correctly, Zucchini Squash is a great substitute for pasta. The Ricotta and Parmesan Cheese in the Chicken Meatballs not only add flavor but serve as a binder. The Mitake Mushrooms were a last minute decision but their earthy flavor was a perfect addition to this dish. The Parsley Micros enhanced the herbs in the meatballs and added a pop of intense parsley flavor.
