100g coconut oil
3 tbsp cacao 
3 tbsp maple syrup 
Pop all ingredients in bowl and cook 37 degrees for 2 minutes speed 2. Pour on top and freeze.

Sunday is my food prep day for the week (and sometimes month) ahead.
⠀⠀⠀⠀⠀⠀⠀⠀
If I don’t get myself ready for the week ahead with meal ideas, vegetables prepped + meals like this Butter Chicken cooked, it can all turn to chaos with me grabbing food on the go, wasting money AND feeling sub-par because my body just doesn’t thrive if it isn’t being fuelled with fresh whole food.

Today I spent some time on my wholefoods eBook where I was focusing on how to make this transition easy for my clients, so I decided to try @chefpeteevans new ready-to-go sauces, this one being the Butter Chicken.
⠀⠀⠀⠀⠀⠀⠀⠀
Not everyone loves to cook, but when given the space + easy to follow instructions, they can learn to enjoy it; especially when they realise how good they feel from cooking + eating this way!!

The sauce worked well, it’s tasty and is free of dairy, eggs, seed oils and sugar, although maybe a bit too tomatoey for me.

I made sure there were a lot of vegetables added in the dish and with the cauliflower rice - get them in where you can peeps!

I do prefer the recipe version that you make from scratch - I highly recommend giving it a go - however, this is a great option for those who are wanting to make healthier choices, and are starting out on this journey but just not yet 💯 comfortable in the kitchen.

The Butter Chicken + Cauliflower Rice can be made in advance and will heat up well later in the week. You can even freeze it for later in the month.

And if you don’t like / eat chicken just replace it with your favourite protein: chickpeas, tofu, fish. You do you guys!

Don’t forget to make it a little more exciting with fresh herbs, a squeeze of lime juice + some toasted almond flakes or sesame seeds!

I’m not a fan granola bars or breakfast bars. If you’re gonna go for a bar, make sure it’s a high quality, clean protein bar like @hempletenutrition.

💘FAST food! (That you make faster than going out to buy!) On most days I'm all about getting dinner made as quickly as possible. This is another "not IG-worthy" photo, I know... but I love IG for food inspo and just wanted to recommend the recipe for peanut butter sauce @choosingchia (using @fixandfogg of COURSE 💘). I loosely followed that, plus added extra PB 😏 and it made this very simple and speedy dinner much tastier.

Blend large handful of basil, 3 tbsp EVOO, 1 tbsp balsamic vinegar, 2 tsp kale powder, 1 tbsp nooch, 1 tsp granulated garlic, 1 tsp onion powder, 1/4 tsp rose salt 👌🏻.

Picked up some almond mozzarella from Trader Joe’s - impressed that it’s made w/ organic crushed almonds, but confused at why they would use casein {milk protein} in it 🤔 It’s 99% dairy/lactose free, but doesn’t that defeat the purpose of a dairy free alternative? 🤷🏻‍♀️ idk just wondering 😆. Anywho’s...I’m just glad to be back home 🤗.

Dinner was this delicious mushroom alfredo “pasta” with shrimp. The noodles are @miraclenoodle garlic herb shirataki noodles and the mushroom alfredo came from the refrigerated section at @traderjoes, so this meal came together so quickly. I just cooked the shrimp from frozen in a pan with some avocado oil and butter and seasoned with salt and pepper and some red pepper flakes. I highly recommend washing the shirataki noodles very well as they have a noticeable unappetizing scent straight out of the package. I removed the cooked shrimp from the pan and threw the noodles into the pan with the sauce and tossed in the cooked shrimp at the last minute after the sauce and noodles were heated and finished it with some grated Parmesan.

Ingredients

BASE:
1/3 cup lemon juice 
1 1/2 cups loosely packed coconut butter
1 cup coconut chips
1 cup almond meal
1 tbsp lemon rind 
2 tbsp raw honey
ICING:
1 cup loosely packed coconut butter
1/3 cup lemon juice 
1 heaped tbsp raw honey
1/3 cup cashews
1/2 cup coconut milk
2-4 tbsp hydrolysed collagen

Method
…
BASE:
Place coconut butter & coconut chips in food processor & process until well combined.
Now add almond meal, lemon juice, lemon rind & honey & process until well combined & resembles a ball of dough.
Line a square baking dish with parchment paper & press the base down into the dish evenly.
Freeze until firm.
ICING:
Place all ingredients for your icing into a high speed blender & blend until smooth.
Spoon out icing onto the base & smooth out with the back of your spoon or a baking spatula.
Freeze again until icing is firm & enjoy!

Short rib ragu over homemade gnocchi (or as Colin from Below Deck calls them, KNOCKY). Making something for for the first time is always a challenge and a learning experience. If you’re worried about this whole needle debacle just make sure to cut them up! Strawberries are amazing little nutrient bursts - vitamin C, antioxidants, manganese, folate and potassium just to name a few. Plus some vitamin D while you’re picking! You’ll have fresh berries to last you for days!

If you’ve been following me for any prolonged period of time, you’re well aware of two things: 1) I’m one sick puppy, and 2) Anytime I leave the boys, I make them special treats before I go to temper the mom-guilt a little. Since I’m about to leave them for 10 days (the longest I’ve ever been away since I became a parent a decade ago 😩) for a little jaunt around Italy, France + Spain, today was no exception. How I did these Peanut Butter Crunch Chocolate Cups👇🏼 #savoringtheflavoring

1. Melted 1/2 cup chopped dark chocolate + 3 tbsp coconut oil + stirred until smooth. 
2. Spooned enough into each of 4 baking cups in a muffin tin to cover the bottoms + stuck the tin in the freezer to harden.
3. PB filling: 3 tbsp PB + 1 tbsp coconut oil + a teeny drizzle of raw honey + a couple tbsp brown rice cereal + 1/2 tsp chia seeds, all mixed together. Spooned a little into each cup, flattened it out + divided the rest of the chocolate between each cup. Sprinkled each with a little sea salt + stuck back in the freezer another 30 min or so. 🤤👌🏼

Although I haven’t done 22 minutes of exercise today ,me moving around with some gentle walking at home has been challenging-not by any means difficult but more frustrating.  Can’t believe I put myself in this position but moving on from the sob story....
I want to do more but my body and my DH are telling me to slow down .
So I will resume some light upper body and strengthening on Monday but will need to reassess as well. 
Seems when I a can’t do something  I wanna do it.

They say stop looking for love and you’ll find it (true in my experience) which is basically what happened after i went to 2 stores earlier this week to find #whole30compliant hash browns but came up empty handed and gave up. But today i stumbled on @cascadianfarm hash browns at @sprouts and i can finally make @wholekitchensink slow cooker breakfast casserole with @pedersonsfarms 🥓. I don’t know if it was the AM workout, or just that it’s a Saturday night...but I was ravenous after work so we went to get some comfort food. This weather is so dreary so I got the 순두부 soup (silken tofu seafood soup). It really hit the spot. I’ve been doing pretty well with IF (around 20 hours average) and didn’t feel like forcing myself to starve tonight and I’m ok with that. #순두부찌개 #순두부 #한식 #koreanfood #korean #soondooboo •

This is a quick, grain + sugar free granola which makes a happy friend to fresh fruit and coconut yoghurt and a delicious and satisfying breakfast on a sunny Sunday. Happy first day of Fall 🍃🍂🍁Apple crisp is always a favourite of mine this time of year! I added protein powder to the crumble for an extra protein boost! Here is the recipe⬇️
🍎Apple Crisp🍏 
Ingredients:
Apple filling:
•6 medium gala apples, peeled, cored and chopped
•½ lemon freshly squeezed (about 2 Tbsp. juice)
•1 tsp cinnamon 
Crisp:
•1 cup large flake oats
•¼ cup oat flour
•¼ cup @LeanFitBrand Vanilla Whey protein powder
•½ cup coconut sugar
•1 tsp cinnamon
•½ tsp nutmeg
•¼ cup coconut oil, soft 
Method:
Preheat oven to 375ºF. Peel, core and chop apples and place in large mixing bowl, add fresh lemon and cinnamon, mix together until combined and set aside.  Stir together all crisp ingredients except coconut oil until well combined.  Add coconut oil to dry ingredients and mix together using your hands until all clumps are gone.  In 8x8 glass baking dish pour apple mixture in and top with the crisp mixture, spread equally over apples and press down gently (I covered mine with foil while baking). Bake for approximately 30-35 minutes in preheated oven until edges are crisp and bubbling.  Let cool slightly and serve with greek yogurt or ice cream if desired. 🍎🍏
