I was a tourist in my own city this weekend having an amazing time at an inspiring conference filled with people moving the world forward...but I missed my daily dose of fresh celery juice first thing in the morning! 3 days without it did not feel right. Today I am back on track. I’ve been doing this first thing in the morning on an empty stomach for over a month now after reading @medicalmedium and my stomach is one happy little camper. I have been working on healing my gut for years now and knew I needed to start slow. I started off juicing 5 stalks and added a couple more every few days slowly working my way up to a full celery bunch (about 16 oz) after 2 weeks. It feels like a gentle, calming coating on my digestive tract and I really don’t mind the taste at all. After years of healing, I am always open to new ideas that will help my brain and body and when the healing fuel is in the form of fruits and veggies even better. Everything healthy we consume has the power to change our lives. Bring on the juice. #ownyourshift

NEW RECIPE for
Pizza Zucchini Boats
.
Ingredients:
- 1-1.5 pounds of ground turkey
- 1 yellow onion
- 20 oz zucchini, ~ 4 medium.
- 2 carrots, peeled
- 1 tbsp ghee
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp arrowroot powder
- 1 tbsp evoo
- 2 cloves garlic, minced.
- 1-1.5 cups Whole30 compliant pizza sauce (@aldiusa carries an organic one that's compliant!).

Directions:
1. Warm a large skillet over medium heat and add ghee.
2. Add ground turkey to the skillet and begin cooking.
3. Cut the zucchini in half lengthwise, and scoop out the fleshy insides to create "boats". Add the flesh to your food processor.
4. Meanwhile, coarsely chop onion and carrots and add to your food processor with the zucchini.
5. Food process onion, carrots, and zucchini until finely chopped and almost paste-like, and set aside.
6. In a small bowl, add the salt, pepper, and arrowroot, and mix well. Once the turkey is almost completely cooked through, add in the spiced arrowroot and stir to combine.
7. Finish cooking the turkey and then scoot it to the side of your skillet (or remove to a bowl if you don't have a large enough skillet).
8. Add the olive oil, food processed veggies, and minced garlic to your skillet and begin sautéing.
9. Cook for about 10 minutes, or until the liquid from the veggies has reduced and the veggies have become fragrant.
10. Combine the cooked turkey and veggies, and then add the pizza sauce and stir well.
11. Allow the pizza sauce to simmer on low while you prepare your baking sheet with the zucchini.
12. Preheat your oven to 400 and line a rimmed baking sheet with foil.
13. Place your hollowed out zucchini boats on the baking sheet.  Stuff them with the pizza sauce and bake for 30-35 minutes.

We made low(er) carb enchiladas! These have ground beef, green chilis, Las Palmas enchilada sauce, & self-shredded sharp cheddar cheese, wrapped in 1/2 sheets of Joseph’s lavash bread. One enchilada had 7g net carbs & was filling & DELICIOUS! And because enchiladas are one of hubby’s favorite foods, we are all THRILLED to have an easy keto way to make these! 🌯❤️🌮

Bone in pork chops always on repeat and this mint chimichurri will be added to the rotation as well. Mint takes over in your garden/yard AAAAAAnd there is only so many mojitos a girl can take🙃. Lesson learned (about 10 years ago) to always plant mint in a pot but in the meantime I will enjoy the fruits of my labor with this easy and super flavorful sauce. • 4 handfuls of fresh mint leaves • 1 small handful of fresh parsley • 4 green onions • 3 garlic cloves • 7 tbsp olive oil • 2 tbsp red wine vinegar • 2 tsp red pepper flakes • salt and pepper to taste. Throw it all in food processor and pulse till finely ground. YUMMY. Also, roasted my onions and squash for squash casserole instead of boiling (MUCH more healthy as boiling depletes the vitamins). Also turned out amazing! Try. I discovered this insanely delicious recipe while very pregnant in "nesting mode", experimenting in the kitchen in the days leading up to my delivery.

Baby girl was over a week late, so there was a lot of time spent distracting myself and making food to fill up our new chest freezer in the garage. Oh and many many trips to Costco 😂
Baking healthy delicious treats that were freezer-friendly became somewhat of an obsession. This one is a winning recipe I'm excited to share! High in protein and fibre, it will satisfy your hunger AND your sweet tooth - without a sugar crash later.  It's vegan and gluten free. Make it! You will be happy you did. 😋

Ingredients:

3 ripe bananas, mashed
1 cup gluten free rolled oats, ground into a flour
1/2 cup almond flour
1 tsp vanilla extract
pinch sea salt
1 tsp cinnamon
1 tsp coconut oil
2 scoops vanilla protein powder ( I use Vega or Genuine Health)
1/2 cup almond or cashew butter 
1/4 cup almond milk
2 Tbsp chia seeds
6 Tbsp water
3/4 cup dark chocolate chips

Directions:
Preheat oven to 350F. Grease a 9×9 baking tin.
Combine chia seeds with 6 Tbsp water and stir. Set aside and allow it to form a gel-like “chia egg.”
Place rolled oats in a Magic Bullet or blender and process into a flour. (Note: don’t be lazy and skip this part. I tried a batch with whole rolled oats instead of blended into flour and it wasn’t nearly as chewy or awesome!) Now combine the chia egg, oat flour and all remaining ingredients in a large mixing bowl.  Mix well. The dough batter will feel thicker than a traditional banana bread dough, closer to a cookie dough consistency.
Spread batter into the greased pan and bake at 350 F for approx 25 minutes. 
Allow to cool before cutting into squares! This will take willpower 🙂  Store in a tupperware container in the fridge or freeze in freezer bags for a rainy day! 👌

I am learning to appreciate and enjoy my food because let’s be honest, most people in our world don’t have access to rich, healthy, nourishing foods. 🥗

We are so rich, y’all, we have 2 cars, a house, and the knowledge to eat healthy food that fuels our body! That’s richer than 99% of the world! 😳

So God is showing me instead of rushing and eating my food fast, I should chew longer, savor the food, enjoy cooking it, and be super grateful for being able to nourish and fuel my family well. 🙌🏻💪🏻🧠 We are the sickest country in the world, we spend the most money on healthcare in the world but still the sickest 🧐☹️ So let’s start with diet. Honestly how many Drs first ask what you eat? I bet 9/10 don’t, but the root cause starts with food.

Have fat, veggies, protein on your plate. 
It’s not just what but how you eat, eat and he’s slowly being thankful for that food. And animal died and a farmer spent time and money to grow that food.

This is what long term AIP like. I’ve talked about it before and mentioned that I feel my best when I follow an AIP template. Certain non-AIP foods are okay now and others are still not but I’m okay with that. I’ve made huge progress and improving my digestion and healing my gut is still an ongoing process. Tonight I had leftover chicken from @blue.ridge.farms on top of mixed greens, seasoned with @paleopowder and for dressing I mixed organic mustard and @primalkitchenfoods mayo.

My beautiful in-laws bought this for me last week while on holidays & words can’t explain how amazing it is!! It is basically just almond paste, except 100% almonds, no crap added to it. You mix 50ml with 1L of water & hey presto you have fresh almond milk which froths absolutely beautifully in the milk frother!! Best almond milk latte I’ve ever had in my life, & if it doesn’t get better than that my dad lives in Renmark where it’s made so he can bring me some more when I run out 😂#winning

Look I LOVE the concept of #mealprep but I don’t love leftovers. So my attempt at a compromise is to make suuuuper simple weekday dinners fresh that are tasty but easy. They aren’t as strong as more standard meal prep is with the portion sizing but I think they’re better when it comes to taste, texture, and flavor. This is: tofu “nuggets” that are pressed and dusted in cornstarch and baked (@thekitchn has the best recipe on this I think), roasted bell peppers til they’re sweet and charred 😋 both cooked on cookie sheets at 425 til done (I’m not great with timers). Meanwhile stir fried (using cooking spray) fresh garlic, yellow onion, added a TON of broccoli and added ~1tbsp reduced sodium soy sauce, ~1 tbsp lime juice, ~2 tsp sriracha, 1 tbsp brown sugar and cooked until broccoli was bright green and pretty tender. Mixed them with a teeny bit of reheated leftovers from the other night (I know I just said I hated leftovers, oh well 🤷🏻‍♀️). And I WILL eat these leftovers for lunch tomorrow so I don’t hate all leftovers, just typically don’t like things over a day old. Spinach turkey burgers on potato buns with green beans. Eating super late (it’s EST for me) because I was grocery shopping for the week and went to five different stores😳 why so many?? Because it was a solo shopping trip, and I didn’t have to rush through each store! What a luxury🤓 I actually meal planned for the week, and I’m excited for this week’s meals!

Simplicity at its finest! My 4 year old like his food roasted and likes to help in the kitchen (budding gourmand), so to the kitchen we went! With the oven on, we cut up potatoes from the garden and our CSA box, threw in some rosemary, olive oil and S&P and into the oven they went. Chicken thighs with some S&P and rosemary went into a pan for a few minutes on each side, then broccoli was chopped and steamed. Who says cooking had to be hard? Get into the kitchen my friends! Food made at home with family and real, whole ingredients always tastes good (or at least edible, most of the time 😜). Real, whole food made with love is showing my family what self care looks and tastes like. Thanks for the help lil chef 👨‍🍳!!
