SURPLUS BREAK 🙋🏼
-
✔️For the past 10 months I have been eating in a strict calorie surplus.
✔️Prior to this, I was eating in a theoretical surplus for 7 years, but I was overtraining and bumping myself into a deficit despite eating over 2,700 calories a day (🤦🏼‍♀️)
✔️Prior to this, I was suffering from a restrictive eating disorder and under-eating on a ridiculous < 800 calories a day.
✔️And prior to that, I was an overweight kid mindlessly eating an excess of calories. I hate to think how much 😅

Basically, my body has only ever known the two extremes of under and over-eating, and as I now sit at a ‘healthy’ weight I have finally had ENOUGH 😤✋🏻

Constantly force-feeding myself calories, making sure I’m eating ‘enough’ or ‘less’, trying to restrict, stressing about eating enough/too much/too little and letting too much of my life revolve around food has exhausted me up until the point I’m at now.

I’ve been feeling mentally drained, have still overthought a meal far too many times, and am STILL experiencing a ton of digestive and gut-related issues.

What my mind and body need most right now is a break from all of this.
With the help of my coach, I’ve dropped back down to maintenance calories - I.e an amount that is effortless and easy for ME to maintain on. On these numbers, I don’t feel deprived or stuffed full - I feel comfortable and content and FREE ✨

Already, a weight feels like it’s been lifted off my shoulders and I don’t need to spend so much time thinking about, justifying or doubting the amount of food I’m eating.

It’s hard to have a goal like mine (hormone repair) that doesn’t entail an exciting or admirable approach to diet and exercise. It never feels fulfilling or victorious, and it requires a hell of a lot of unnoticed patience and persistence.

For me, if I can just ensure I’m eating, training and living in a way that feels enjoyable with as little stress as possible, I know I’ll reach my goals. So for now, my approach is pretty boring and ‘uninspiring’ - to just eat and train moderately, but it’s what I need and what will serve me best for the next few weeks at least ✌🏻

Leftover Roast Lamb Yiros, seasoned with Mingle all purpose and re-fried in bacon dripping with onion. Cheese, Tzatziki, Garlic sauce and lettuce & tomato.

Mmmm it’s Monday! 
Super simple appetizer for Christmas catch ups !

Baked Brie with pesto garlic and pine nuts !

I make my own pesto using my thermomix but you can buy ready made basil pesto. 
You could top it with whatever you like ! Macadamias, almonds, chopped cranberries etc ... Have fun creating !

Ingredients

1 wheel Brie cheese
1 Tablespoon Pesto 
1 tablespoon olive oil
1 tablespoon pine nuts
1 clove garlic, minced Black Pepper, Ground
Sea salt to taste 
Directions

Preheat oven to 180 degrees. Using a sharp knife, trim the white rind off top of the Brie (top part only, leaving the sides and bottom intact). Place Brie in an 8- or 9-inch pie plate or ovenproof dish.
Mix pesto seasoning with olive oil, pine nuts, and garlic, if desired. Spread mixture evenly over the top of the Brie round (where white rind was trimmed off). Sprinkle with black pepper and salt to taste, if desired.
Bake 10 minutes or until Brie is warmed through. Serve immediately; surround with seed crackers.

Made with just a handful of pantry staples that I bet you have on hand already, simmer on the stove or cook in the slow cooker & packed with so much flavor it may just knock your socks right off!

On the plate we have -
.
🍲 Chickpea curry - made with;
🔸 1 can of @ceresorganics chickpeas , drained & rinsed (which I then fermented in 2 Tbsp @bragglivefoodproducts ACV + enough filtered water to ensure all the chicks are submerged then let it sit on the counter for 24 hrs to do it's thing - drain & rinse then throw in the slow cooker - fermenting them first makes them easier to digest - a hot tip I got from 👑 Shan aka- @MyFoodReligion ) - full recipe/how to link in my profile +
🔸 1 jar @ceresorganics crushed tomatoes, 1 Tbsp @meadowmarrowbonebroth curry concentrate + 1/2 C filtered water (sub 1 Tbsp curry paste/powder & 1/2 C your fave broth)
🔸 4 lge carrots, sliced
🔸 1 sml Onion,
🔸 3 Garlic clvs,
🔸 1 tsp @furtherfood turmeric tonic - use EMS10 to get 10% off
Optional add ins;
🔸 2-4 scps @furtherfood collagen (use EMS10 to get 10% off) - for protein & gut health
🔸1 Tbsp @noya.nutbutter cashew butter - makes it extra creamy
🔸1 tsp @SuperFeast mason mushroom mix - adrenal-liver-digestive support & hormone balance

✳️Cook on low for 4-6 hours or high for 2-3 or Simmer on the stove for 20-30 mins until carrots are tender 👌

For an extra hit of protein you could alwayss put an egg on it or, if you're not doing meat-free Monday you could absolutely add in some chicken but in all honesty this was all kinds of delicious, not to mention seriously filling just as it was!

Squat Holiday 🏋️‍♂️🏖 Tomorrow a few members and I will commence the 6 day Squat Holiday protocol developed by German Performance Coach, @wolfgang_unsoeld 💪 Essentially, the program involves 3 sessions per day, each with a varying volume, intensity and tempo of the back squat. The primary objective of the protocol is to build strength and lean mass in a considerably accelerated time frame, compared with more traditional training frequency conventions. This Protocol can also act as a valuable tool for refining squat motor patterns, optimising recovery and regeneration practices, and testing resilience over what is considered to be a gruelling 6 days. These sweet potato rosti’s were so delish topped as a little ‘toast’ for the avo and salad on top.. my littlest babe devoured this dinner, my big girl ate the rosti’s on their own with some sugar snap peas on the side. 
Simple little recipe that I made up this afternoon for the Rosti’s is:
🍠- 2 x sweet potatoes grated

This has got to be one of my favorite dishes, meatballs in a roast tomato and capsicum sauce served with cauliflower purée and Broccoli. And my kids always finish their plates with this one! .
Meatballs 
Mix together the following : 
500gm beef mince
1/2 cup grated Parmesan cheese
1/2 cup of crumbed almonds 
1 egg
I used @mingleseasoning Smokey flavor but when I don’t have it I just add the below without it.
1 tablespoon of paprika 
1 tablespoon of ground cumin
A little garlic salt 
Fresh herbs
1 teaspoon of Dijon mustard

Mix it all together and roll into balls. Lightly fry them just to seal them and then add them to an oven dish and pour the below sauce over them, top with grated cheese and into the oven at 200 degrees Celsius. .

Sauce: I pre make batches of this sauce and freeze portions of it which is basically roasting tomatoes, capsicum and purred together with some herbs, apple cider vinegar, salt and pepper. .

Or just purée a tin of tomatoes and add some herbs. .
.
I sometimes add a little cooked bacon into this meatball sauce to add a little extra of that Smokey flavor. .

This dish can also be slow cooked. Instead of going into the oven just add them to the slow cooker with the sauce extra.

They’re made with almond- and hazelnut flour and a lot of cinnamon and a little nutmeg and the glaze is an orange meringue and they’re they’re chewy and rich and perfectly sweet and the perfect cookies for a rainy, slow, peaceful Advent Sunday evening by the fire among the candles and the string lights.

To be completely honest, I actually really don’t like real donuts! Even before I began eating healthy, I was never phased by them. BUT OMG you probably won’t believe me when I say.. THESE TASTE BETTER 😍 But  honestly, you really need to give these a go! Making healthy choices is so simple when they taste this good!

▪️1 cup flour of choice
▪️1/2 cup coconut sugar
▪️100g @niulife coconut ghee (or butter)
▪️1 flax egg or egg 🍳 ▪️1/4 cup @almondbreezeaus almond milk
▪️pinch bi-carb soda
▪️1 scoop @happywayau salted caramel protein (or vanilla)
▪️45g chocolate chips or chocolate cut up
▪️1/4 cup peanut butter @byronbaypeanutbutter .
FOR ICING (optional)
▪️ @niulife Coconut oil
▪️ @byronbaypeanutbutter Peanut butter
Mix and drizzle 🧡

1️⃣Preheat oven to 180 degrees C
.
2️⃣In a bowl whisk together the butter and coconut sugar until fluffy, then add your milk, vanilla and egg. Whisk.

3️⃣Add 1/4 cup PB and whisk again.
.
4️⃣Add the chocolate chips and mix together.
.
5️⃣Once creamy, add into your donut moulds and bake in the oven for 15 mins! Check to see if cooked with a skewer, if not cook for another 5-10 mins on a lower heat. Allow to cool completely.

Store in a fridge for 5 days or in a freezer for months ❤️

For about $12 and a little bit of effort, this is something that T-Bell or McDonald’s couldn’t touch and will last for days.  It’s a daily fight.  It’s a day to day grind.  Why not be ready? 🥊 I was in my best shape eating this type of food so it’s best I get back to #JERF and just eat real food.  I was a real flex in the kitchen on instagram a long time ago but... Take 2 cups almond or coconut milk

Add 1/4 tsp of organic raw beet root powder. I used @mrm_usa brand
.
Add one capful of rose water. A little goes a longggg way! .

Heat until warm in a saucepan.

Add One scoop @vitalproteins .
.

Add 3 tbsp coconut butter. I used @nutiva brand .
.

Add cardamom, cinnamon, and ginger powder to taste.

Add 1/4 teaspoon coconut nectar or honey or maple syrup (optional). Only a teeny amount people! I used @big_tree_farms . .

Use an immersion blender to whip to a froth! I have a @cuisinart .

Peppermint Cheesecake Brownies for this Months #ketokreationteam entry. 🎅🏻🤶🏻Holiday Sweets n Treats is the theme this go around. I was a last minute entry and had a bit of a hard time with the @indiatree natural food coloring. Mine must have been old. I just bought them yesterday and the red and blue were ok, but the yellow was a foggy paste and was so orange, it made it practically impossible to make the right pine green for Xmas. The red was ok until it was baking, then it bled out and turned a magenta-ish color. None the less, these are tasty AF!… I’m actually kinda upset posting these because I don’t like the way they look. Taste wise, these are 💣. I wish I had small pieces of sugar-free candy cane... It would’ve gone perfect in the cheesecake part. 🖤

If it’s in a ball, pattie or a on a stick, my kids will usually eat it. So I find myself making foods that fall into those categories often, probably  more often that I would like. But if my kids eat their dinner, I’ll make all the balls and patties and put veggies on sticks. What’s for dinner: Greek-ish turkey patties, tomatoes, olives, pickled onions, butter lettuce and tzatziki (lactose free @yqbyyoplait, grated cucumber, dill, lemon, garlic, salt and pepper) .

The nasal/throat congestion, not breathing, flushing/redness on my cheeks and chest,  indegestion, constipation, drop in blood pressure/increased heart rate, crazy fatigue, insomnia, low mood and motivation, I can honestly say DEFINITIVELY that I'm not having them half as bad... EVEN WHEN I EAT PIZZA! (As long as my Histamine BUCKET is low?) 💃 I can't say I'm completely 100% CURED... I'm not... they're in the background and there's a long list of avoidance foods. But as long as I keep the histamines on the downlow, and that bucket low, I seem to be able to eat a bit of gluten (pizza) and be OK! This is a big development, and I need to test Soy Sauce next, to see if I react (the pizza may have been a fluke. 😂) But... But... so far so good! 🙏 To think that all these years of suffering may just have been because I went Paleo all those years ago, and upped my intake of seafood and fermented foods, nuts and seeds, wine and leftovers, is CRAZY when I thought I was being healthy. Maybe I've suffered needlessly. 😢 I remember when tea started making me feel sick, and the time I went from 5 years teetotal, to reintroducing red wine (in Greece, I remember it well) when my face and chest flushing started. I thought my SIBO was turning into an autoimmune issue back then. It didn't happen immediately so I didn't link it to the wine... and all the seafood and nuts and pumpkin and avocado I purposefully ate, thinking I was being HEALTHY! 😢 Argh. Can't change anything, so it's pointless to regret, but DAMN! It could be that HISTAMINE INTOLERANCE was my thing all along! 🤢

Proving that you don't have to spend a lot to serve a delicious, healthy and beautiful Keto Holiday Main Course. This chicken was on sale for 97 cents/lb!  Each one will easily serve 4 people (and can be made in your oven if you don't own an air fryer)!👍

I first created a Keto/Low Carb stuffing by sauteeing 2 chopped onions and 2 cloves of garlic in @gathersuperfoods ghee, followed by 3 celery ribs. I then added a package of @foxhillkitchens croutons and 1 1/2 cups of chicken broth.  To that I added salt, pepper, Rosemary and thyme. When the broth was fully absorbed and the mixture was cool I added two beaten eggs. I stuffed the bird and sealed the opening using toothpicks.

This was enough stuffing for my bird, plus a full side dish for four! 
I coated the chicken with a mixture of @daksspices Original Red, garlic, salt, pepper,  and parsley. Sprayed it with a bit of olive oil. I then air fried it in my @gowiseusa at 375F for 14 mins, carefully flipped it over, re-seasoned and cooked at 350 for 8 mins. Flipped one more time and cooked at 350F for 5 min. The house smelled great and the chicken and stuffing were moist and delicious!
