My final assignment Chipotle pulled pork tacos from jackfruit. Eat allllll the jackfruit. These are so damn good. The filling only lasted to assembly because I had to take a picture. I’d have no problem putting this into a taco salad, in tacos, with chips, straight from the bowl, onto a fork... into my mouth.
I have a few personal assignments I’ll be working on over the next few weeks but it looks like I might be taking another class in December.
Okay. So color me shocked. These jackfruit “pulled chicken” sandwiches are 💣 Take it from this Texan. I was put off by the idea of jackfruit as a meat substitute, b/c I grew up eating the stuff, which has a chewy texture and mango-y flavor—not exactly adjectives I like to use to describe meat. Little did I know that I was eating RIPE jackfruit, while YOUNG jackfruit is used as a meat substitute. (Young jackfruit has a soft, stringy texture and neutral flavor when cooked.) I used our favorite pulled chicken recipe, which is always a big hit at parties (shallot, garlic, orange juice, EVOO, BBQ rub & seasoning). I used @uptonsnaturals plain jackfruit. I also mashed in some garbanzo beans for protein and added a splash of bourbon for kick. With a little help from Salt Lick’s dry rub and Stubb’s BBQ sauce (b/c Texas, duh), the recipe made for convincing and delicious-ass BBQ sandwiches. The cabbage slaw was dressed in avocado, lemon juice, and maple syrup. 11/10 making again. Would be great on a veggie burrito bowl 🤔
Made a quick easy dinner today! BBQ jackfruit pizza with buffalo ranch chickpeas and roasted corn. 😍🤤🤤 Also had a bowl of #daiya

Ate jackfruit for the first time today via Hudson Grille’s jackfruit taco. I’ve always wondered what jackfruit tasted like and it’s actually pretty tasteless. It reminds me of the way breadnut taste like interestingly enough. The coleslaw was made from jicama which was also something that I’ve never tasted before. Pretty interesting stuff altogether.
Think I’ll try jackfruit by itself one day to see what it really tastes like outside of seasonings, etc.. Another thing that I’d like to try amongst tons of other stuff is durian fruit. Heard some interesting things about it over the years.

50 gramos de carne de yaca deshidratada de Jackfruit México
2 cucharaditas de aceite de olivo
1 1/2 cucharaditas de ajo en polvo
1 cucharadita de cebolla en polvo
1 cucharadita de perejil
1 cucharadita de paprika
1 cucharadita de tomillo
1/2 cucharadita de sal
1/2 cucharadita de pimienta cayena
1/2 cucharadita de pimienta negra molida
una pizca de canela
1 cucharadita de jugo de limón
2 tazas de agua
1/4 taza de azúcar o algún otro endulzante
una lata de frijoles negros en bola sazonados
Mango en cubos
Tortillas de harina para hacer wraps
Poner a hervir agua con sal, agregar la yaca y dejar cocer 15 minutos.
Colar la yaca y enjuagarla con agua.
Poner el aceite en un sartén a fuego medio y saltear la yaca con todas las especias de 2-3 minutos.
Agregar el jugo de limón, el agua y el azúcar. Tapar y dejar sazonar de 20-30 minutos a fuego bajo.
Una vez que se absorba el líquido, agregar sal si es necesario.
Colocar frijoles, cilantro, el mango y el guiso de la yaca en el wrap, doblar para formar un burrito y disfrutar!

Jackfruit is a huge tree fruit that has a meaty texture and flavor! Also the seeds are edible. It is low calorie and high in fiber. It's one of the rare fruits that is rich in B vitamins such as pyridoxine, niacin, riboflavin, and folic acid! .
1 Cup of Sliced Jackfruit
1 Can Diced Tomatoes
1 Package of Corn Tortillas
1 Red Pepper
1 Yellow Pepper
1 Green Pepper
1Tbsp Olive Oil
1 Tbsp Garlic
1 Tsp Chili Powder
Combine All Ingredients Besides The Tortillas In A Mixing Bowl. Then Transfer To A Skillet On High Heat Until Jackfruit Is Tender. Place Desired Amount Of Jackfruit In Corn Tortilla And A Splash Of Lime On Top And Enjoy! 😋
Mum used to make this 'coronation chicken' I really liked so I thought I'd give it a go with jackfruit :) I used about 2tbsp vegan mayo + 1tbsp apricot jam + 1tsp curry powder.
Mix in a tin of jackfruit, some baby bits of brocolli and bake for 30 mins :) Very quick and simple!
It probably should be mango chutney and would be good with some chilli, lime and black pepper too :) And anything else you fancy!

Nouuu dit lijkt toch nét echt stoofvlees op ons bordje 😃 We kregen er helemaal een cosy wintergevoel van toen we dit aten (of kwam dat door de rode wijn die we erbij moesten drinken🤔 want ja er moest een halve fles door de saus en het was natuurlijk dikke verspilling geweest als we de andere helft hadden weggegooid 🙄). .

Here's my "Carne de jackfruit" or jackfruit con chile. I have a few notes on my stories/highlights that will show how I prepared the chile and cut the jackfruit. What really makes this recipe taste good is the amount of time you take to boil the jackfruit and make it softer. I probably boiled this for an hour and 20 mins. total.
This meat substitute tastes great in tamales and burritos 👍My stories/highlights also have a better video of this all done.
*for this recipe you can make whatever chile you want, just make sure that the chiles you use are red and dried.

Tropical fruits for me - the ones I've most had access to to notice being mangoes, jackfruit, rambutan, and durian - right upon eating them trigger a really deep, full, relaxing vagus nerve breath totally involuntarily, like nothing else I've ever experienced, that keeps relaxing into such deep, rhythmic breaths. It's feels very healing, subtle but profound.
I forgot about this in the moment, as it had been a while without them, and ate some of this jackfruit immediately before meditating, and was sitting in meditation noticing these deep, rhythmic breaths and rising relaxation, thinking, "Where is this coming from??" as that's so not my usual feeling in meditation, and real relaxation is far from my usual state any time.
Clearly tropical fruits are my healing foods. If only I could afford/access them regularly! And maybe also regularly take a "hit" before meditating. 🤣🧘♀️ (We are physiological frugivores, after all, and tropical creatures.)
