Books and smoothies- Sunday night FTW! Smoothies are my go-to for dinner when I don't feel like cooking. This concoction is chia seeds, hemp seeds, bananas, strawberries, an apple, a few handfuls of spinach, and a scoop of Iron Vegan chocolate protein powder. I don't always use protein powder but sometimes I want a kick of chocolate and Iron Vegan is by far the best tasting chocolate protein powder!

Thanks to my brother @zachdaunoravicius for getting the finish from his 📺. 41th/57 guys in my age group isn't how I hoped this journey would end, but I'm not disappointed. That was everything I had to give, and I gave it on a stage bigger than I've even been on before.
I'm gonna take some time to reflect before properly wrapping up (everything is still kind of fuzzy). For now, I need to thank my friends, family, and racing partners (@lacordee @myironvegan @argon18bike) who have helped me get to this point.

Overnight oats. Chia pudding. You’ve heard of them
The struggle was real as I was looking for a lower carb option for breakfast (so I can eat alllllll the carbs throughout the day :)). A full overnight oats recipe had too many carbs for me, but chia pudding never filled me up. 💁🏻♀️
I’m comin at ya with a recipe that combines the two and gives ya the perfect combo of fats, proteins and carbs. GUYS it is SO quick to prep, healthy and delish!!! And actually FILLING! Yay she’s finally full!!
2 tablespoon chia seeds
2 tablespoons hemp hearts
1/4 cup oats
1 cup almond milk
1 scoop protein powder of choice (I love me some #ironvegan chocolate or vanilla)
Just mix em all up and let sit in the fridge for at least 20 min. Top with some berries / nuts, cinnamon, etc.
(I like to put all the ingredients in my mason jars for the whole week then just add the milk the night before)
BAM. I’ll get better at making shorter posts some day I promise, but I get so excited!!

Sunday's ITU Montreal Olympic distance went almost perfect 😀 A number of athletes (myself included) got caught up in a lap counting/course distance issue, but that barely puts a damper on the day. Lesson learned, moving on.
As the results stand, I finished 30th overall, and 2nd in my AG, which means... I QUALIFY FOR WORLDS AGAIN!!! 🚀😁🎆 I need to say a huge thanks to @lacordee
