Gluten Free Millionaire Shortbread - This gluten free millionaire shortbread is rich and indulgent, must live up to its name. I personally prefer the caramel to be oozy when eaten, for a more solid caramel cook longer in the pan until golden brown. .
For the shortbread
1 stick of unsalted butter
1/4 cup of sugar
1 teaspoon of vanilla extract
1/4 teaspoon of regular salt
1 cup of gluten free @kingarthurflour
For the caramel sauce
1/2 stick of butter
2 tablespoons of brown sugar
1 cup of sweetened condensed milk
For the chocolate topping
6oz dark chocolate chips
2 tablespoons of butter
Firstly, line a baking tin with parchment paper and grease lightly. Set aside.
Add one stick of melted butter and 1/4 cup of sugar to a mixing bowl.
Add one teaspoon of vanilla extract and mix ingredients together.
Add 1/4 teaspoon of salt, one cup of gluten-free flour and fold into the mixture.
Press the dough out onto the baking tray.
Prod the shortbread dough with a fork and pop in the oven for 15 mins on 350F
Add the butter to the pan on a medium heat. Then add the brown sugar and sweetened condensed milk.
Stir slowly for 15 minutes ensuring the mixture doesn’t burn. I prefer an oozy caramel filling but if you want a more solid filling cook until a dark brown colour.
Take out the golden shortbread from the oven and pour the caramel filling evenly on top.
Allow to cool in the fridge for between 1 and 2 hours.
Whilst cooking the two layers in the fridge prepare the chocolate topping.
Boil a pan of water and put a large bowl on top of the pan.
Add the chocolate chips and butter and allow to melt for a few minutes. You can melt directly in a pan but run the risk of burning the chocolate. Microwaving works also.
Melt, mix and stir the chocolate, then pour and spread all over the caramel filling.
Sprinkle with sea salt and pop back in the fridge for a further two hours.
Cut into triangles and serve. .
