Here you go! Our simple lunch spread for the final Diwali celebration! And I had to have the yam chutney! A staple in all Marwari homes! Another spicy, indulgent, fave dish of our family. Believe me it’s amazing! I made it twice over this festive period! If you follow me you saw the spice mix I made on Friday... well that was used for my chole dish! And yep will be keeping jars of that mix as turned out very well! I also tried a gujurati dish called sambharo - a salad for which I used grated carrots and grated green papaya which I think added a nice refreshing taste to the rich food on the table and I just loved watching my kids devour their food! :) stuffed and ready for bed 😂 hope you all had a fulfilling weekend too!

Sunday morning scenes 😍

My fellow tamilians, remember the Suryavamsam Devayani making idli upma scene?? That movie was my childhood favorite and it was the first movie I saw in a theater. That day I decided I will grow up and make idli upma! Forgot about the part that she became collector and did something big and all but idli upma stuck. 😂

It's really easy to make. All you need is leftover idlis, onions, green chillies, coriander and tadka. 
In a pan, heat Coconut oil. Add mustard seeds and let them splutter. Add urud dhal, green chilies and curry leaves. Add onions and saute for a min. Add turmeric powder and give it a good stir. Now add roughly mashed idlis and saute for about 3 mins and it's done.

Quick and easy boneless chicken Curry 
Prep and cook time : 15 minutes 
Ingredients: 
Chicken breast chopped 
1 x large onion 
3 x crushed garlic cloves 
Olive oil 
2 tomatoes 🍅 (blitzed) 
Salt 
Chili powder 
Fresh corriander leaves 
1 green pepper 
2 green chilies 
Instructions 
Wash and Cut chicken into cubes - leave aside (Stay at medium/ high gas) 
In a cooking pan add 1 finely chopped onion and 3 gloves of garlic crushed with 2/3 tablespoons of olive oil. 
Once onions are medium brown add in 2 fresh tomatoes 🍅 (blitzed) 
Immediately add 1 teaspoon of salt and chili powder 
Add chicken in and cook for 5 minutes (with lid cover on) with occasional stirring 
Once chicken is cooked, add 1 finely chopped pepper and 2 green chilies (long slit cut) and a handful of fresh corriander leaves (finely chopped) 
Drizzle a small amount of olive oil again and leave on gas for another 2/3 minutes. 
Serve with roti and naan

This chilly I made yesterday, was comfort food all the way. Keto diet is a lot of comfort food I feel. People have been asking me how am I managing to live on diet food all the time. Well truth is, it doesn’t feel like a diet; and it ain’t, it’s a lifestyle. And I am loving it.

Fresh veggies, Good Proteins and lots of good fats, my diet is not only keeping me full, it is keeping me happy. No spikes, no cravings, no mood swings through the day , what more can I ask for 🤷🏻‍♀️

First it was about weight loss now it’s more than that. I love the increased energy levels, I also love the freedom from food. I mean food doesn’t have any hold over me anymore. Cravings are non existent and though I never did really like sugar, but now it’s all the more easier to not have any sugar.

The best part is no cravings, and the reduced appetite. I have had a low appetite since always; used to eat one chapati for lunch and dinner. But now my appetite is so controlled that I find it easy to eat only as much as required. In fact even on the break that I took, I never once over ate. Though I was eating carbs but didn’t end up overeating a single day 😁. .

So this chilly , it had so many good things, bell peppers, mushrooms, chicken, chorizo sausages, spring onion, cream cheese, garlic, onions, and some cream on top. Yummy and total comfort food.
Had it with some zucchini pesto spaghetti which i overcooked as I got busy with something else. And lost my attention. But it was good nevertheless. keepcalmandketoon 😁

• ¼ cup wheat flour / atta
• ¼ cup bajra / pearl millet flour
• ¼ cup rice flour
• ¼ tsp turmeric / haldi
• 2 tbsp Spinach🥬 and Fenugreek Leaves🌱 finely chopped
• 1 onion finely chopped
• ½ tsp salt🧂
• 2 cups water to knead
• Oil Will Be Needed For Roasting It On The Pan *METHOD* : • Mix all the flours together.
• Add the finely chipped onions and garlic.
• Add the finely chopped spinach(palak🥬) and fenugreek leaves(methi🌱) • Add chilli powder🌶 , turmeric, salt *(and if you want you can add other spice powders as well for eg - cumin or coriander seeds powder as per the taste)
• Add some water around 2 cups water or as required and knead a dough. • Now take a small ball of dough and start patting over oiled part of the griddle.
• Additionally, smear some oil over the thalipeeth
• Now cover and cook on medium flame. • Finally, serve the THALIPEETH with butter or curd 🍽😁

SUNDAY morning craving!!
Banana Loaf with loads of Chocolate chips and Raisins and Walnuts. 
My hubster says that I have been gorging on too many sweets and cakes and cheesecakes so I decided to go off sugar, cakes or anything sweet for that matters 🙈 since last 2 days.. And I woke up today craving for this moist banana loaf. Decided to go bake this first thing today since its a healthy loaf right it is loaded with bananas, walnuts and raisins.. So all good stuff going in there. 🤩🤩

Another Quick breakfast recipe from Indian Kitchen !
Poha ( Flattened Rice flakes)
Ready in 15-20min.

Ingredients: Flattened Rice flakes(Poha) 1 cup , 1 small onion finely chopped, 1 medium potato finely chopped(I used semi boiled one), handful of peas (optional), 1 green chilly finely chopped(optional), handful of roasted peanuts.
1 spoon oil ( I used olive oil)
Mustard seeds
Salt as per tastes
Turmeric
Red chilli powder
 A pinch of Sugar 
Few drops lemon juice (optional)

Wash poha in a drainer until it's soft enough to break when pressed between fingers( don't oversoak). Add half spoon salt n pinch of turmeric to it, mix and keep aside.

To a pan, add one spoon oil, add some mustard seeds. 
Once it starts spluttering add onions n green chilly. Fry it till it becomes translucent. Add the roasted peanuts, potato n peas. Add lil salt , a pinch of Sugar, 1/4 spoon turmeric, 1/4 spoon chilli powder. Mix well. Cover the pan with a lid to cook well. Once the veggies are cooked well, add poha n mix it well. After 2 mins , add coriander leaves, few drops of lemon juice. Mix and enjoy✨

Kulith shengole made from horsegram which is full of protein and amazing in taste.  This is made by first making a dough of horsegram flour adding chilly garlic paste and salt to taste followed by making noodle shapes of this dough. In  big pan heat a little oil add cumin seeds till it breaks in then add 3 to 4 glasses of water and bring it boil add the noodles made initially and simmer for sometime. Sunday brunch be like...Matar-Kulcha....White matar chaat with whole wheat kulchas...Had soaked white matar yesterday for making chaat but ended up having it for brunch today... I have always loved Indian Street food and the minute I think about it my mouth starts watering...chaat is something I can never say no to...but owing to my health and food allergies can't always eat out...so my street food is always homemade...haha!!😁 Although the kulchas are store bought as I didn't had time to make them at home...
This matar chaat is vegan... tempered with only a tbsp of oil and lots of flavours from spices and sauces(green chutney and tamarind chutney), chopped onions, tomatoes, green chillies, Sev, fresh coriander and to oomph up the tanginess goes lemon juice on the top...aahhh!! It's tastes heavenly...and I don't have to worry about extra calories too...my chaat my way...haha!! .

So today's breakfast was this flavorful affair and bit clandestine since today I wanted to make a fat free breakfast. But my Marathi friends can understand that with this millet flatbread you gotta have loads of butter!!
I can assure you that the flatbread is all goodness and less calories so if you don't feel like having butter, just have these with yogurt.
So here it is, Jowar Dhapate with Herby Smoked paprika butter. This recipe makes 8 medium flatbreads.

Ingredients:
🥙1 cup Jowar flour or sorghum flour
🥙1/4 cup besan
🥙1/2 cup whole wheat flour
🥙2 tbsp rice flour
🥙1/2 cup curd or yogurt
🥙1 medium onion chopped (optional)
🥙1 tsp Carom seeds
🥙1 tbsp chopped coriander
🥙1 tbsp chopped mint leaves
🥙1 tsp sesame seeds
🥙 3-4 green chillies finely chopped
🥙1/2 tsp Turmeric
🥙1/2 tsp red chili powder (optional)
🥙 Salt to taste
🥙 Some water
🥙2 tbsp oil and brush applicator

Recipe:
🥙 Mix all the flours, spices, salt, coriander leaves, mint leaves, green chillies, onion and carom seeds. Add curd and knead a soft dough. Use water if required.
🥙 Make 8 balls of the dough and flatten with hands on a greased parchment paper and make 5 holes in the middle. Apply some sesame seeds while flattening the dough balls
transfer on hot flat pan.
🥙 Cover and cook till the flat bread is half browned. Apply oil on the top and flip. Cook till half browned.
🥙 Serve hot with plain curd or butter.

Chettinad Paneer #sikandalouscuisine
No claims to authenticity whatsoever - but lots of claims validating how delicious this recipe is !

500 Grams Paneer.
150 Grams Onions - Chopped.
200 Grams Tomatoes Pureed.
1 Heaped Teaspoon Ginger Paste.
1 Heaped Teaspoon Garlic Paste.
1 Tej Putta.
2-3 Green Cardamom.
Red Chilli Powder - To taste for color.
1/2 Teaspoon Haldi Powder.
1 Cup Coconut Milk.

Chettinad Masala:
1 Tablespoon Coriander Seeds.
1 Tablespoon Fennel Seeds.
1-2 Teaspoons Black Peppercorn.
1 Teaspoon Jeera Seeds.
5 Green Cardamom.
4-5 Laung / cloves.
1" Cinnamon.
2 Star Anise.
1/2 Cup Coconut Freshly Grated.
5-6 Dried Red Chillies.

Tarka:
Ghee.
10-12 Curry Leaves - Torn.

1. In 1 tablespoon oil lightly roast grated coconut till aromatic and light brown , remove and add all the other  Chettinad Masala ingredients , roasting them . Cool and grind coconut and other Chettinad Masala ingredients to a fine paste, add water as needed.
2. Heat oil , add bay leaf and cardamom , when aromatic add red chilli powder and 5 seconds later onions , sauteing onions till slightly color. At this stage tip in ginger , garlic , haldi , tomatoes and salt , cook covered till you see oil.
3. Add the Chettinad Masala paste , cook covered for 5-6 minutes then add paneer , and sautee another 5 minutes , slowly adding in the coconut milk till it's all consumed and begins to dry.
4. Lastly heat ghee , add curry leaves and pour over paneer cooking another 1-2 minutes for ghee to infuse it's flavors , make it dry or slightly wet.
