Sharing the recipe below for chocolate banana recipe using chapati flour:
1 -1/4th cup of atta
1/4th cup of cocoa powder
1/2 cup of sugar
1 tsp baking powder
1/4 tsp baking soda
1/3rd cup of butter
3 medium sized very ripe bananas
1/3rd cup of chopped walnuts (can toast them before chopping)
1/4th cup of chocolate chips
1tsp of vanilla essence
1/2tsp of cinnamon powder (optional)
Pinch of salt
Preheat the oven at 350F and butter and flour or grease and use parchment paper on a loaf pan. I used a 9x5inch loaf. You can use 8x5inch this way it will raise more.
In a bowl mix all the dry ingredients atta, cocoa powder, baking powder, baking soda, sugar, salt and cinnamon powder.
Coat the chocolate chips and walnuts with a little flour and keep it aside.
In a separate bowl add the wet ingredients that is mashed bananas, melted butter, eggs and vanilla extract. Add the dry ingredients into the wet and fold.
Do not over mix. Fold the batter until homogeneous.
Let the batter rest for 5 mins.
Pour the batter into the loaf pan and bake for 45-50mins or until toothpick inserted in the center comes out clean.
The knife looks wet because of the melted chocolate chips😉
Lunch today- Rice , pineapple pulissery , cherupayar thoran, beans, beetroot leaves and beetroot thoran, cabbage thoran and Kerala shrimp fry . Put this together in less than two hours after a camping trip in Rocky Mountain. Manoj and Meenu helped, they even ran to the grocery store to buy things in between. As soon as I started pushing the cart, with a beets bunch in it, she came up to me and said ‘If you don’t mind, can I ask you something? Were you looking for bigger beetroots, is that better ‘ To her surprise I told her I was actually looking for better leaves because I use them in my cooking. She wanted to know how I use them. Somehow managed to explain her all about ‘thoran ‘ and then I told her I use them in my Frittata sometimes. BTW they are good in places where you would use red ‘cheera ‘.
