It's been a fun day of a Sunday!

I took a bus mission in the sunshine to the bulk food store (Bin Inn,) had a coffee date with kitty cats and lots of cooking/eating beginning with a light but filling roast vege, salad and hummus lunch with my home girl, then dinner of tacos stuffed with misc chilli from the freezer, freshly made kidney bean refrito, salad and mayo.

I'm one happy lady right now and there's even enough left over for a mix and match lunch tomorrow.

1. Sunbutter; think peanut butter but made with sunflower seeds (not pictured) - definite success

2. Creamy leek and veges (pictured with bread and spring onions and some colourful progress pics) - very success, much yum.

3. Layered creamy leek and potato bake (not pictured)

4. Sunbutter, nut and seed bars (not pictured) - kinda successful, some R&D required

5. Roasted pumpkin and garlic hummus (pictured as a dip with corn chips, and nachos) - a definite success

6. Aioli, which was a 3rd time lucky affair, 2x fails with the kenwood blender, then successful with a hand beater. I'm thinking it was a mistake to use refrigerated aquafaba (pictured thinned with fresh lemon juice on the nachos) - moderate success

So today I discovered that my batter recipe also works brilliantly baked!

What a win, even if I did kinda nullify the added health factor of the battered cauliflower by serving it with home made sweet and sour sauce and white rice, which was salvaged from curry date night. (I may have an aversion to food waste)

I found the sauce recipe at https://www.daringgourmet.com/best-sweet-and-sour-sauce/, choosing to use water and about a tablespoon of crushed pineapple instead of pineapple juice.

Verdict: delicious, would make again.

Quick, easy, delicious and 100% customisable Potato Rosti

1. Boil potatoes until fork tender.
2. Allow to cool, then grate into a bowl.
3. Add seasoning of your choice (salt, pepper, herbs, spices etc) and stir gently until combined.
4. Shape patties to desired size. I used a large tablespoon and hands dusted with potato starch.
5. Coat patties in flour or starch of your choice (optional) for extra crisp, I used potato starch
6. Shallow fry, then bake to finish. Or for a healthier version lightly brush with oil and bake until crisp and cooked through.

Another pesto and pasta dinner was enjoyed (and destroyed tonight.) Using the San Remo spaghetti "Pulse Pasta" I added sweated leek, red onion, garlic, carrot, cherry tomato, zucchini, spinach, basil + spinach pesto, and a liberal sprinkling of chilli flakes on top.  SPINACH AND BASIL PESTO
-1/8 cup each pumpkin and sunflower seeds
-1/4 cup toasted pine nuts or nuts (I used a mix of pine, walnut and cashew nut.)
-3 cups total of baby spinach and fresh basil
-1 large clove garlic
-Salt and pepper
-1T nooch (or 1/4 Massels stock cube)
-1/2 lemon zested and juiced
-1/4 cup olive oil -Pulse all items except oil in a food processor until chunky
-Add oil slowly in between pulses and process until desired consistency is reached (pause often to scrape the sides)
-Store refrigerated in an airtight container for up to 2 weeks

Chickpea and lentil burger, Fresh crisp salad, Perfectly crunchy onion rings, Home made aquafaba aioli, Hand cut, oven baked potato wedges.

To celebrate the perfection that is these onion rings I'm sharing my recipe! Check it out below

Crispy Onion Rings

2T rice flour
3T Chickpea flour
Salt
Pepper
1/2 Massels chicken style stock
1/4t baking powder
4T water +- Mix all dry ingredients in a bowl
Add water slowly whisking as you go to make a thick, lump free batter. You may need more, or less than stated.
Coat onion rings in batter mix and shallow fry for 1-2 minutes
Flip then cook about 1 minute more .

I had the pleasure of getting my chubby little hands on a bag of Hubbards most recent release - gluten free granola, which just so happens to be accidentally vegan. 
With a price tag of $7.99 it's not exactly cheap, but to me the price is 100% worth it.  So far, all I've done is eat this from. The bag by the spoonful - its truly that good, and I imagine it'll be amazing paired with fruit and coconut yogurt.

I try to eat nuts or seeds with every meal, today's #breakfast is no exception. My loaded toast has peanut butter, sunflower and pumpkin seeds, plus cumin and coriander seeds (hiding in the dukkah.) Combined with tomato, red onion and basil there's a flavour explosion in every bite! .

When you forget to pick up burger buns on shopping day improvisation is required.

Tonight's dinner - Open Faced Chickpea and Lentil Bugers with @bakeworksglutenfree torpedo roll, lettuce, tomato, red onion, sunflower seeds, aquafaba aioli and cracked black pepper. 10/10, would eat again.

While reheating the patty (from frozen) it softened up considerably, while still holding its shape. Next time I think I'll bake them and see if the outer is crisper. .

Fueled by a hankering for something that resembles mashed egg, and inspired by this recipe (http://ohsheglows.com/2015/07/21/chickpea-salad/) I embarked on a mission to fill the void in my belly/the demands of my tastebuds.

I made a few switches/omissions as I didn't have all the ingredients on hand, it still tastes good and mimics the texture perfectly. I think a bit of black salt would be a good substitute for a little more "eggy" flavour. 
I also added a pinch of paprika and cumin for a bit more depth of flavour, plus 1/2 teaspoon of rice wine vinegar to replace some of the zing missing due to the omission of pickles and lemon. .

After an initial (epic) fail at making my own vegan & gluten free burger patties I was determined to figure it out, cos seriously, there is nothing quite like my love of the humble burger. I took the Chickpea and Lentil Pattie recipe from https://www.taste.com.au/recipes/chickpea-lentil-patties/e5797c10-25b8-44c9-a3f2-0728841d9f29 and pulled it apart, substituting ingredients and making changes left right and centre. 
The result, a patty that is crisp on the outside and deliciously soft on the inside.  I honestly couldn't ask for a better burger filler.

Ingredients:
2 tablespoons oil
1 onion, sliced
1/2 small bulb garlic, diced
1 teapoon each tumeric and coriander powder +2 teaspoons each paprika and cumin
1/2 teaspoon chilli powder
1 Massels chicken style stock cube
1/4 cup each sunflower and pumpkin seeds
6 tablespoons aquafaba
1/2 cup loosely packed spring onion greens, sliced
10 medium basil leaves
Salt and pepper to taste
1/4 cup each chickpea and rice flours
Extra chickpea flour (about 1/4 cup)

Method:
