Normally a Mai Tai is created without eggwhite/aquafaba, but after once trying out a 'Foamy Mai Tai' at a bar, I've grown fond of doing it myself when experimenting with Rums.🤷 Since the Rum itself had very interesting tones, dancing somewhere between what I'd call a 'PX sherry without the sweetness' and a 'Tawny Port', I opted for PF's Dry Curacao as Orange Liqueur.🍊 I also took the liberty of smashing a little bit of mint along in the shaker to make some fresh notes pop up.🌿 An elegant version of the Tiki Classic, perfect for those who prefer a gentle embrace over a funked up fistbump.👊 ❤️ Drinkstagram, wishing you all that's good!

Slice and muddle half a mango with 50ml gin (@karu_distillery Affinity Gin was my pick!), 40ml lime juice and 20ml simple syrup. Half fill stemless wine glass with crushed ice and add mango mix, stirring well. Top with 180ml ginger drink - I highly recommend the incredible Dry Ginger by @lovestrangelove as it’s spicy heat really sets off the tropical mango. Garnish with a passionfruit flower as inspired by my talented friend @the_margarita_mum and enjoy 😉 💛💛💛

2 dashes Cascade Celery bitters (@bittered_sling)
4 oz. Mediterranean tonic water (@fevertreemixers)

I figured the appropriate way to finish off my bottle of Mediterranean gin from @deepcovecraft would be to enjoy it a gin and tonic which compliments its fragrant olive and rosemary notes. The Mediterranean tonic water, vegetal bitters, and touch of herbaceous syrup did just that. This gin was the first local craft spirit I purchased for my home bar, and would eventually lead me to discover the multitude of distillers and producers that we are fortunate enough to have here in British Columbia.

Also wanted to give a thanks to @tossware for letting me sample their newest release, the classic Can. It's definitely a fun and easy way to serve highballs and I'll be putting my set to good use as holiday parties start to come around. Oh, and you can also stack and lock them into ridiculously tall towers. Always fun. 👀

The Peddlers team recently got back from our trip down south to Shenzhen. We’re proud to say we have won the award for the best gin and tonic in the city at the @eastimperial @ginjubilee 2018. Special congratulations to bartender Chris Ng from bar RMK who crafted the delicious ‘Cantonic’, featuring Peddlers Gin, East Imperial grapefruit tonic, homemade mushroom yuzu honey and celery bitters. This was the first ever gin jubilee in Shenzhen. Known as China’s Silicon Valley, and with a population of over 12 million, it’s one of the most exciting places for F&B in the region. I first discovered Bonpland Rums in my local booze store 🥃 I had never heard of the brend, yet immediately fell in love with their elegant designs.✨ The Rums, so they told me, were distilled in different countries, depending on the expression, and later on taken to Germany.🇩🇪 Two of them, the Blanc and Rouge, to be finished in Wine Casks 🍷 respectively in barrels used for Chardonnay and Pinot Noir.🍇 Today I'm using a small sample of the Rouge, a blend of distillates from Jamaica, Trinidad, Guyana, Guatemala and Nicaragua to create an elegant riff on the classic Mai Tai.

Today’s drink is made with @scapegracegin
Scapegrace Dry Gin, is the product of two guys from Auckland, New Zealand. 🇳🇿 They didn’t know each other until one married the others sister.
It comes in a nice black bottle, with golden label 🏷. It’s a modern take on the original genever bottles from 200 years ago.
They distill in an old 19th century whisky still, stumbled upon in a long abandoned shed. So the story goes. 🤓

My Pisco Sour post a couple of weeks ago had the most likes ever and I'm curious to find out if this was just a lucky shot, or if you guys are really interested in cocktails.

EXOTIC COCKTAIL RAY OF GOLD
INGREDIENTS:
20ml rum
Juice of 2 slices of fresh pineapple
1/2 ts of Gimber drink
1 pinch of turmeric powder
100ml sparkling water
25ml coconut milk

INSTRUCTIONS:
Add all ingredients into a shaker and dry shake.
Fill the glass up with ice.
Pour the cocktail into the glass.
Garnish with a pineapple leaf.

A week or two ago, @cocktailsmandurah infused bourbon with dried cherries and I was like 😲🤤😍. So I immediately--like, within minutes--followed suit and then patiently waited DAYS (okay maybe not that patiently) for the infusion to do its magic.  WORTH THE WAIT. I feel like there is scientific support *mumbles terms like "osmosis"* for the astonishingly intense booziness of the spent cherries explaining the amount of cherry flavor they gave to the bourbon. Seriously, those soaked dried cherries are not messing around. *hiccups* . 🍒 .

I didn't want to do anything *too* complicated because I wanted that cherry-infused bourbon to shine, so I did a simple boulevardier with no tweaks or additions. And it is so incredibly good--even better than I had dreamed. 😍 Thank you, Kori, for the inspiration! .

The original Cynar recipe was launched in Italy in 1952 by Venetian entrepreneur and philanthropist Angelo Dalle Molle with the slogan “Cynar, against the strain of modern life.”
An early slogan for Cynar and used in it’s base for its advertising campaign during the 60’s.  Including a commercial first starring Ferruccio De Ceresa and then starting in 66’ Ernesto Calindri that showed the actor sipping Cynar while sitting at a table placed in the middle of a busy street, urging consumers to drink Cynar "against the strain of modern life". The commercial eventually evolved and changed settings from the busy city to a field of artichokes. Calindri and the brand lasted until 1984.

Made from 13 herbs and plants, one being artichokes. (Cynara Scolymus Latin for artichoke, is where it gets its name from.) Cynar also contains Cynarin, a chemical compound found in artichokes that is believed to make things sweeter.
Give it a try, taste something pre and post Cynar sip. Also I know for a fact that Cynar gets sweeter and sweeter with each pour. 😉

Also I know for a fact that Cynar gets sweeter and sweeter with each pour. 😉 First produced in 1949 in Italy, a country not only known for its bitter drinks but also its use of artichokes. It didn’t become used or popular in North America until the late late 90’s/ early 2000’s Taste -bitter sweet vegetable, caramel, toffee, chocolate, quinine (medicinal), subtle mint with light smoke combo. Pairs well with -Mezcal, St Germaine, Spiced Rum, Green Chartreuse, Whisky, Vermouths both Sweet and Dry, Pine forward Gins, Salt, Grapefruit, Orange, Lemonade/Iced Tea, Cola, Curaçao, Creme Violette, . . I feel sad when ever I don’t have a Cynar bottle in my fridge. Luckily I almost always have one and it’s not because I don’t drink it. 🤤

So I finished Sother Teague's I'm Just Here For The Drinks last weekend 😁 Long story short, it's a great book! The chapters on Amari cocktail and mixed libations (split-base cocktails) alone are worth it.

There are two interesting tidbits in there I wanted to try with this cocktail:
× Amaro Montenegro can replace lemon juice
× Genever and White rum work well together

As luck would have it, I have two  new bottles to play with. Well, either luck or I just have too many bottles 😅 I'll stick to option A 😁

Wild Things
1 oz Balegemse Jenever
1 oz Clairin Communal
3/4 oz Amaro Montenegro
1/2 oz ‎Cherry Rocher Génépi
Dash Angostura Orange Bitters

Both of these spirits are insane, completely artisanal and both use wild fermentation. In the case of the genever, they are the last genever distillery in existence to do this. These guys even grow the grain themselves.

Clairin is Haitian white rum. It's funky, it's a flavour bomb and it's a bit weird. This one is a blend of four distilleries. It's also the most accessible of the Clairins I've tried.

Okay, hardly a traditional genever and white rum. But in my defense, I had new toys to play with 😋 And I did like the taste of it! Next time I might try to add a drop or three of lime, in the same vein of Ti Punch 🤔

2 drops @pdxbitters woodland bitters
