Last night's special at Alice's restaurant was creamy Tuscan chicken with spinach and sundried tomatoes served over pasta with bread and parmesan garlic dipping sauce accompanied by a glass of moscato. Giving myself a big tip for this scrumptious fare. #ILoveToCook#nowthatsitalian#chicken
Making lunch for a very special person to me and went in a different direction while doing my best to address specific concerns and respecting the diet, per se. Been a long time since I’ve cooked gluten free pasta, but decided to take a crack at it again and succeeded! Rice pasta, in the form of both Penne and Shells, were used since it was mixed up at the store I purchased them from. No matter, still got it done. Made the cheese sauce with Vegan Cream Cheese, unsweetened Almond Milk, along with just a touch of Sharp Cheddar. Slowly easing into this thing. Then made some buffalo chicken chunks by hand, marinated and then baked in the air fryer and topped right on the Mac and Cheese, along with @cellowhisps Parmesan Crisps. I’m pleased that the noodles held up more than anything. Enjoy!

The beautiful karandi omlette for Sunday morning breakfast. Karandi omlette is a typical dish of Tamil Nadu, where omlette is made in a karandi, that means laddle or garita in Telugu.
