How do you make the most amazing crunchy pork crackle?
Warning though..... these are extremely addictive!
I occasionally buy pork rind when it's
on sale and love to create pork crackle straws out of it. People always ask how I get my straws so thin. The method is so simple.
Preheat your oven to 190 C/375 F. Sprinkle salt on your rind. Lay it on a tray and bake for 8 minutes. Remove from oven and allow to cool slightly. Using sharp kitchen scissors, cut the rind into desired shape or strips. It cuts really easily.
Place your rind on a raised rack, sprinkle with more salt and return to the oven for a further 30 to 40 minutes. Up the temperature at the end for a few minutes if not crispy enough. You can collect the fat from under the tray and store in the fridge to use in your baking.

Saw these buffalo sauce pork ribs on @themagicalslowcooker yesterday and immediately knew it must be done. Ventured out post blizzard this morning to buy the ribs (and a bunch of other stuff because Aldi was empty, and it was amazing). Paired it with butternut squash and roasted broccoli. My boyfriend said I need to make the ribs again ASAP!
