In truth, even though we love sweets, we do try to stay in shape and live a healthy lifestyle🏋️😊 Sometimes a good proteinbar is enough to help cure that sweet tooth!
And both of these were pretty good! They were soft and easy to chew, and had a great taste. They did however taste almost the same, just with and without peanuts.
8/10 😊 for both.

It’s rainy and chilly in Houston! A perfect morning for moist pumpkin spice bread and a cup of coffee. Have a great week ✨ A quick demo is posted to my story!
Pumpkin Spiced Bread w Maple Cream Cheese Glaze
2 cups all-purpose flour
3 tbsp ground cinnamon
2 tsp ground ginger
2 tbsp ground nutmeg
2 tsp ground cloves
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp kosher salt
6 tablespoons unsalted butter, room temp
4 ounces cream cheese, room temp
1 cup granulated sugar
3/4 cup light brown sugar, packed
2 tsp vanilla extract
3 medium eggs
1 tbsp of oil (if needed)
1 cup canned pumpkin puree
MAPLE CREAM CHEESE FROSTING
4 ounces cream cheese
1/4 cup maple syrup
1 cup confectioners’ sugar
3 tsp vanilla extract
1 tbsp ground cinnamon
1/4 cup toasted chopped pecans or walnuts (optional)
1. Preheat oven to 350 F. Lightly coat a 9×5 loaf pan with nonstick spray
2. Combine flour, cinnamon, ginger, nutmeg, cloves, baking soda, baking powder and salt. Set aside.
3. Beat cream cheese, sugar, vanilla and butter on medium-high until light and fluffy with an electric mixer for 2-3 min. Then beat in eggs, one at a time.
4. Turn the mixer on low and alternate between adding step 2 dry ingredients and pumpkin purée until well combined.
5. Pour into non-stick pans and put in the oven. Bake for about 50 minutes!
6. Remove from oven and cool completely on a rack before frosting.
7. To make the frosting beat cream cheese on medium until fluffy. Turn the mixer to low and gradually add confectioners sugar. Once combined, add vanilla, cinnamon maple syrup and mix again. Turn the mixer to medium and beat until it resembles frosting.

2 Roma tomatoes chopped
1/2 yellow onion chopped
3 garlic cloves chopped
16 ounces frozen chopped spinach
1 cup liquid egg white
1/2 tsp dried mint
1/2 tsp dried basil
1 tsp salt
1/2 tsp black pepper
Preheat oven 350
Spray pan with non stick olive oil spray. Add onions, garlic, tomatoes and sauté on low heat so nothing burns. When onions are translucent add the chopped spinach, salt, pepper, basil, mint and continue to sauté for 10min on low heat
In a separate mixing bowl beat the eggs and liquid liquid egg whites. Then add the spinach mixture and beat until mixed evenly. Spray muffin pan and add mixture should make 12 muffins. Put in oven for 35 minutes. Take out and let cool.
Snaccidents happen 😅 though really I was on my way to messina when we recalled a dream where we had fish and chips. 🐟🍟

A late lunch at @hunkydoryfish Dory on Swan St, Richmond. It's a lovely though windy day so we sat inside. Loving the shade of blue chairs, a cousin of Robin eggshell blue. .
We order the grilled catch of the day $15 basa/blue Geraldine (isn't it almost always the later?) Which comes with chips and a choice of three salads, we picked the Greek. .
It's a serving for two! In these cases I'm told to divide it up and get half or so for takeaway, for portion control. 😅 A very generous serving with plenty of feta and olives.
Mondays are for quick-ish casual dinners in between classes. Tonight we had the beef curry and those octopus balls we love!
It's so nice for the sun to still be up as we're heading from an early as dinner at class. 😀
