It’s been a non stop pace and intensity of life that’s surpassed anything I’ve ever created or experienced.
Saying yes, does mean being in a constant flux of change. Having the ability to live and work with change, rather then fight it, is a skill - because at some point, there’s going to be a change you didn’t want. There can be a lot of pain when living in the resistance of change, and what I’ve learnt in the last 6 weeks is, say yes, work with it, through the good and the fun, but more importantly, through the stressful and the unwanted - because it will pass, whether you want it to or not.
I live in a new world, with a new respect for life. After years of self deprivation, self inflicted feelings of guilt and punishment for enjoying the fun things in life, I now say yes. And I’m the happiest, healthiest and most fulfilled 👌🏼
I despise people’s use of the word balance, it’s normally an excuse for behaviour - a way to push aside personal responsibility for ones actions. I take FULL responsibility for every single thought, beautiful moment and sometimes irresponsible action of the last 6 weeks.
I’m an extremist, so my results normally push the boundaries of what people deem as normal or acceptable - I didn’t even think it was possible for me do more, but turns out, even I was wrong and self limiting.
My definition of balance - going ALL in on, all of life - on the areas I’ve neglected for years, as well as relentlessly keeping on top of the amazing shit I’ve already got going on, like my career, learning, personal growth and trying to be the fittest and strongest version of myself.
Here’s to more chaos, more memories...and maybe a bit more fitness 🤔😂
Viernes sabor a #libresoy ❄️ Que venga esta receta calientita y llena de sabor!!! Sopa de fideos de verdura y pollo
1/2 tza de pasta (noodles o fideos)
1 1/2 tza de caldo de verduras
1 zanahoria pelada y rebanada blanqueada
1/2 papa en cubos blanqueada
1/4 pza de pechuga hervida
Calienta el consomé de pollo a fuego muy bajo mientras hierve coloca la papa y la zanahoria. Espera 10 min y agrega el pollo. Sazona si es necesario y/o agrega más caldo si gustas. Espera 20 min más. Sirve en un bowl incorporando al final el noodle y el cebollín picado.

We love pho.
So much so that we would drive an hour out of town on a fairly regular basis just to get some.
Now that I’m looking up all the restaurants and foods I need to steer clear of, pho is a tough one to give up. If I want to have it in an actual Vietnamese restaurant in the future, I’ll have to be sure that they don’t use any wheat products (like thickener, spice blends, marinades, sauces, etc.) and that there’s no cross-contamination.
SO you can imagine my delight when I found a gluten-free and organic pho broth in Sobey’s!
And that’s why we decided to attempt making our own. First things first, it definitely was quite different from the restaurant version. Probably takes more salt and/or MSG. But it was still really good!! And super satisfying.
Basics: rice noodles and thinly sliced beef. I bought a nice looking flank and put it in the freezer for a few hours to make it easier to slice thin.
Then we pimped it out with some spiralized zucchini and carrot, chopped green onion, chopped basil, lime, and sriracha. I added some salt and pepper when I was about halfway through, too.
For a first attempt, I think we did pretty well! There will absolutely be more attempts made at recreating the beauty of beef pho.
