히다 다카야마는 산으로 둘러싸여 바다가 없기 때문에 독창적인 요리가 발달했다는데 호바미소도 그중 하나.
후박나뭇잎에 집에서 직접만든 된장을 놓고 그 위에 요리해내는 방식이다.
흰 쌀밥에 된장 올리고 그 위에 히다규카츠 하나 올려 먹는다.
된장을 듬뿍올려주는데 전혀 짜지 않고 고소하다.
맨 밥에 된장만 올려 먹어도 맛있다.☺️
Lunch today, after our day trip to Shirakawago. Takayama in a foodie’s perspective is about Hida Beef, Sake and Miso. I found it almost everywhere around the city. So today, time to get a taste of their Hoba Miso.
It’s a regional favorite – food seasoned with fermented soybean paste and grilled on magnolia leaves. Typically hoba miso is served with sliced Japanese leeks and shiitake mushrooms placed on the magnolia leaf and cooked over a clay stove called a shichirin. And I’m having it with what else but slices of Hida Beef.
Will enjoy Sake later in the day, so plum wine is an excellent choice for this. Superb. Subarashīdesu👌🏼
