Buffala Burrata, ‘Fleur de Sel’ Anais Strawberries, Amela Rubins Cherry Tomatoes, Bronze Fennel.
A fantastic cheese course. The texture of the Buffala Burrata was surprising and like non other; it is soft yet rich, and disintegrates immediately in one’s mouth. This plays fantastically with the Anais Strawberry ‘Fleur de Sel’, which has a somewhat similar texture and lovely subtle sweetness to pair with the Burrata. The Amela Rubins Cherry Tomatoes are plump juicy and sweet, while the Bronze Fennel Granita brings a fragrant acidic sweetness and refreshingness to liven up the entire plate. A nice mesh of a cheese course and a dessert course!
