The ratios in the recipe, the timing and nature of fermentation, the presence or absence of fat and salt, all contribute to the bread’s flavour. But mainly it has to do with the type and quality of the flour. Learning that oxidization can alter the flavour in certain grains, freshly-milled and local is totally superior!

This bread is incredible, made with local heirloom stone ground ancient grains with a sourdough culture creates a naturally fermented bread that is so flavorful and delicious! Love that this new local place is doing such awesome things and making so many different types of fresh loaves daily and making an impact with local grains 💛
We always excited to see @zingermansbakehouse at @westsidefarmersmarket! In addition to a few of our favorite breads, they’ve brought Mother Scones, made with an ancient wheat called einkorn. So good!!!

One of my kids favorite dinners used to be pastrami panini’s. When we decided to go grain free that meal was off the table. This past year we have found some acceptable sources of grains, like the Jovial brand I have told you about. This past week we were introduced to @tehachapigrainproject who is producing heirloom varieties of grains that take less water to grow and are naturally lower in gluten, right here in Southern California. First image is a salad I made out of the fixings I made for my kids pastrami panini’s.... and it was DELICIOUS!!!! The second image is the panini’s I made for them. They got to have their panini’s bc there is a company in town that uses the grains from the Tehachapi Grain Project. We were gifted a loaf of fermented Red Fife from @bakersoutpost .... my kids LOVED it!!! And.... no tummy issues from it 🙌🏻
Grains are not a regular part of our diet, BUT it is so awesome to have healthier options to go to when we want to indulge, or make our kids some of their old favorites 😋 Thank you @tehachapigrainproject & @bakersoutpost for doing what you guys are doing... we need more of this in our world ❤️
