We had a GREAT time today at @com_at_une’s Health Fair! We had Mediterranean style quinoa bowls, with fresh vegetables, freshly pickled red cabbage for a little kick, and Greek yogurt tzatziki. We also had whole wheat sourdough and olive oil dips! Grilled Avocado with Strawberry and Honey will bring out the best of summer. #Ingredients and #recipe below.

Cooking spray
2 cups hulled strawberries (quartered)
1 Tbsp honey
2 small avocados (halved, pitted)
2 Tbsp chopped, fresh mint
***
1. In a small bowl, gently stir together the strawberries and honey. Cover and refrigerate for 1 to 4 hours, stirring occasionally to let the strawberries macerate and release their natural juices.
2. When the strawberries are ready, preheat the grill on medium high.
3. Lightly spray each avocado with cooking spray. Place the avocados on the grill with the stem side facing 10 o’clock. Grill for 1 to 2 minutes. Rotate the avocados so that the stem side is facing 2 o'clock. Grill for 1 to 2 minutes. Transfer the avocado halves to plates with the flesh side up.
4. Remove the strawberry mixture from the refrigerator. Fold in the mint.
5. Spoon the strawberry mixture over each avocado half and serve.

I have tried to figure out exactly what I am--not keto altho I do enjoy keto meals. Not paleo since I refuse to give up peanut butter & dairy (won't happen!) but I eat what I like and try to eat more low starch veggies than anything else and watch my carbs, stick to healthy fats and avoid refined sugars, white stuff and processed as much as I can...so here's my supper-there's meat in there, but I'd prefer chicken or tuna but we were out. I LOVE cannelini beans & capers, and for me to eat salad as my meal is not a sacrifice since I LOVE veggies of all kinds.  I guess my eating style is, LOVE what you eat and make it REAL food, watch the portions and don't DIEt.
