Did you know that 98% of Americans are potassium deficient?
The Division for Heart Disease and Stroke Prevention found that 99.4% of US adults consumed more sodium daily than recommended by the AHA (<1500 mg) and less than 2% of US adults met recommendations for potassium (4700 mg per day). Why is a potassium deficiency concerning?
otassium reduces blood pressure in adults, reducing the risk of stroke and coronary disease. Based on this information, the American Heart Association tested over 12,000 adults for potassium intake due to the correlation between potassium deficiency and heart disease. The findings, which indicated a substantial deficiency among participants, are concerning because heart disease is the leading killer in the US.

Since only 6% of Americans enjoy a vegan diet, and 98% of Americans do not eat enough potassium, I would assume potassium deficiency is not a problem associated with the vegan diet.
When looking at the plant based sources of potassium, potatoes are the top potassium rich food followed by beans, sweet potatoes, squash, chickpeas, and bananas. These are all whole plant foods and high in carbs. This, again, shows high carb foods are not bad and are actually necessary for good health.

Yesterday I made @ohsheglows recipe for sweet potato enchiladas and they did not disappoint!! I added @followyourheart vegan cheese shreds to the top but otherwise followed the recipe. Topped with the avocado crema, this made a perfect lunch and fun leftovers for the week! Healthy, nourishing, delicious😋

Eine himmlische bowl mit Griessbrei!🤤 Mögt ihr das auch so und habt ihr schon Mal oats oder generell solche bowls mit Zitronensaft/schale gegessen? Wenn nicht, macht es weil es war wirklich so gut!😋 Aber die Mango obendrauf war persönlich mein Highlight! I took my daughter to meet up with @hankpnw for lunch the other day - he had suggested to try out this Pho place by his work. The moment I walked into the restaurant, I could tell the food was going to be good. The aromas coming from everyone's bowl smelled super authentic. I decided to go for the vermicelli bowl 🍜 All the meats were replaced with extra veggies and tofu and I used a combo of hoisin and sriracha for my sauce instead of the usual nuoc mam (fish sauce). SO GOOD!!! I definitely recommend Pho Asia Noodle House in South Everett (by Target on Everett Mall Way) if you want some authentic vietnamese food 🤤
