Monday’s are for meal prepping (and avoiding future hangriness😈).

Tonight I made:
• a base vegetable soup from scratch with squash, carrots, onions, and celery
• quinoa
• brown rice
• kidney beans
I decided to make the ingredients separately so the desired portions can be added to the soup, or I can change it up and create new meals throughout the week.

I’m happy to report that my legs seem to have recovered well from the 10km race on Sunday, so these felt really good and managed a Squat Snatch PR 🙌🏼 I finished my first Trimester of Uni yesterday so I have HEAPS of spare time to really crack down on creating and daring some more recipes for you guys...stay tuned for a new one tomorrow morning 😉

🇪🇸🍦Como no me da la vida para editar las nuevas recetas que estoy preparando, voy a subir los helados que tengo en el blog. Con este calor apetecen, así que por si os habéis perdido alguno también os dejaré el link arriba donde encontraréis el paso a paso en fotos.

🔻Helados cubiertos de chocolate:
📝Ingredientes (para 4): 🚦Para los helados 
8 plátanos maduros 
1 lata de leche de coco 🚦 Para la cobertura:
Chocolate negro 
Chocolate blanco 
Avellanas picadas 
Coco rallado 
Crema de avellanas vegana 
Aceite de coco .

💪Preparación:

Echar los plátanos (muy maduros) y la lata de leche de coco en el vaso de la batidora. Yo ya tenía los plátanos congelados, pero este paso no hace falta, ya que luego se meterá todo en el congelador.

Accionar la batidora para crear el relleno de los helados.
.
Echar la mezcla de fruta en los moldes para helado y meter en el congelador hasta que se congelen bien.
.
Para la cobertura he usado chocolate negro y blanco (veganos). Derretirlos en el microondas con unas cucharadas de aceite de coco.

Este es el relleno de nuestros helados: la mezcla de plátano y leche de coco, ya así  sabe divino, pero con chocolate por encima ni te digo.

Cuando se haya enfriado el chocolate fundido ya se puede bañar el helado en él, sino se hace con la ayuda de una cuchara como yo. Echarlo por el lado del palito y que vaya cayendo el chocolate hasta la punta.
Como el helado está congelado, la capa de chocolate se va a solidificar en seguida, así que cuando decores con el coco o con las avellanas trituradas, ten todo preparado y échaselo pronto para que quede pegado.

Buckwheat porridge this morning with a bit of change in toppings! I just cooked 1/4 cup dry buckwheat porridge with 3/4 cup of almond milk and 1tsp of maca powder and topped that with half a pear, one small banana, two Brazil nuts, pepitas, hemp seeds and a drizzle of maple syrup😍 To be honest I always struggle to change up what I eat for breakfast because I have one thing that tastes so good and that’s all I ever feel like! I’m trying though!😂 •

Vegan ‘Swede’ Som Tam from one of my favourite accounts @mymeatlessmeals 🥗
🇹🇭
Ingredients:
• bird’s eye chilies* (I use 10 g, but you can go for less or more if you dare).
• 40 g green beans, cut into 1 inch pieces • 10 g garlic
• 120 g  shredded swede (or julienned)
• 40 g cherry tomatoes, halved
• 1/4 cup roasted peanuts
• 1/4 tsp Himalayan salt
• 2 tbs fresh lime juice
• 1 tbs light soy sauce • 1 tbs coconut sugar 🥗 
Instructions:
1. Begin by crushing garlic and chilies in a mortar, using a pestle, followed by green beans.
2. Add salt, light soy sauce, coconut sugar, and lime juice, using a pestle to mix everything together. Make sure the sugar is fully dissolved before adding cherry tomatoes and pan roasted peanuts. 
3. If you use a mortar and a pestle, lightly crush and mix all the ingredients together as shown in video. If you don’t have a mortar nor a pestle- pour the dressing over shredded swede and toss everything together in the same manner you would when making a salad. 
4. Serve immediately with a side of steamed sticky rice or as salad.

My current go to work breakfast is 1/2 a cup of oats mixed with 1/2 a scoop of @pranaon protein powder (I used the Himalayan Salted Caramel flavour for this one) and just under a cup of water. For this bowl I added 1 tsp of @sonnentor Turmeric latte mix and I always leave it to soak overnight and microwave it for about 3 minutes in the morning.

I topped it with @mayversfood crunchy peanut butter, banana, fresh strawberries, cacao nibs, Goji berries and buckinis 😋

My stomach hasn’t reacted to oats for SO LONG! No idea if it’s the way I’ve been preparing them or my body has finally decided that it isn’t going to chuck a tantrum every time I put something into it 😂. But I’m not complaining!

Tomato heart tart with vegan cream cheese, heirloom tomatoes, thyme and basil by @bos.kitchen ❤️ Recipe:⠀
For the Tomato tart:⠀
1 block puff pastry ⠀
1/2 cup vegan cream cheese ⠀
1 punnet heirloom tomatoes, sliced ⠀
A few sprigs of thyme ⠀
1/4 cup basil leaves⠀
⠀
Preheat oven to 200C/400F. Roll out puff pastry to 1/2 inch thick and trim into desired shape. Use a fork to piece the pastry all over, leaving an inch around the edge. Spread over cream cheese, and sprinkle with thyme. Layer on tomatoes, covering all the cheese. Bake in the oven for 15-20 minutes until puffed up and golden. Add basil leaves just before serving. Enjoy!

The only positive from strawberries only being decent in summer is that every time I have them I’m like “ahhh this could be the last time I have strawberries till next summer” so I savour and appreciate every single one🍓❤️ I feel sorry for grapes cos I do love them but I have them all year round so they deffo don’t get as much appreciation, soz grapes x 🍇
The only positive from strawberries only being decent in summer is that every time I have them I’m like “ahhh this could be the last time I have strawberries till next summer” so I savour and appreciate every single one🍓❤️ I feel sorry for grapes cos I do love them but I have them all year round so they deffo don’t get as much appreciation, soz grapes x 🍇

1 teaspoon baking powder

Coconut oil ( for oiling pan) ▫️In a blender blend all ingredients together minus the coconut oil. Once everything is blended, make sure your pan is coated in coconut oil and hot. Pour batter on to pan as if you were making regular pancakes. This recipe makes about 8-10 pancakes depending on sizes.

The Living Foods Way every day. In the wraps I have avocado and micro greens: turnip, broccoli, dandelion, red clover/ fenugreek, Romain. The mature greens are red leaf lettuce that I topped with beet powder and coconut. The dressing today is tahini... just tahini, lemon, garlic, salt and pepper. Simple can still be really satisfying and beautiful... and believe me  after a meal like this with so many micro greens.. your done eating for the day lol. I think that’s why I’m doing so we’ll with the one meal a day... it’s the type of foods that I eat that makes this really work for me. Started off with the barley grass juice... always ALWAYS the grass juice/ next 32 ounce juice celery apple ginger lemon/ then the large meal. Love this mango soup... the secret ingredient is the lime zest it really brings it all together. We celebrated my two grandsons birthdays today at my house. Was a beautiful day... then had this beautiful meal to go along with it. My daily food never changes no matter what the situation is. This works and has been working for a long time now when something makes you feel this good why would you want to go backwards... keep on keeping on.. always moving forward.
