On the other side /life wise ☀️/ I am doing great but a bit sad since school is coming soon and Victoria doesnt like that. But oh well, going to make most of my free time and just try to ignore the fact that Im going to be sitting 7hrs a day, 5 times a week for almost 10 months with books 📚 in front of me :). So much fun right.

Zucchini cakes!!!! The freshest ingredients make all the difference in the world between a dud and absolute heaven 💕💕 Fresh, simple and guilt free. Check out the recipe below, try them out and you be the judge 👩⚖️. •1 med zucchini •2 carrots grated •1/2 onion chopped •1/2 c chick pea flour •1/2 tsp baking powder • 1 egg •Salt, pepper •1 tbsp Dill •olive oil
Grate zucchini, place into a strainer and press out as much water as you can. Don’t skip this step or the cakes will not hold together. Once drained, add to a bowl with remaining ingredients and mix well. Heat oil in a pan. When heated add zucchini mixture by the spoonful and flatten into a pancake. I mentioned before that I’ve done most of my grocery shopping online this summer. The last few weeks it happened to work out that I shopped in store, and it’s been such a win! As much as I love the timesaver and convenience of groceries delivered to my door 🚪 , I’ve missed the impromptu purchases that liven up the week. Last week, cilantro, dill, and green onions snuck their way into rice 🍚, stir fry, sandwiches 🥪 , salads 🥗, and on tonight’s salmon. •
Yesterday I took the kids and was ready to leave them in the frozen food aisle, but came home with a delightful cart 🛒: pork loin, salmon, fresh green beans, baby kale, garlic bread 🥖 , rotisserie chicken, melon, steamed lentils, hummus that everyone sampled and liked, and donut peaches 🍑 . My belly is already thanking me. •
PS The apparently hungry Little Miss asked no short of 5 times if we could get not 1, but 2, pork loins. While I appreciated her culinary intent, she may be blacklisted from grocery shopping because of her need to ask for things the same number of times as her age. What will 13 yo bring?! •
Spotlight of the week: Cauliflower
Eating what’s in season is best. Cauliflower is a versatile low carb option. It can be roasted, mashed, riced, steamed, baked, puréed and sliced into steaks. Cauliflower provides a hefty dose of vitamin C and is a good source of the B vitamin folate, as well as dietary fiber.
When selecting cauliflower, choose a firm head with compact florets that feels heavy for
its size. It should be white or creamy white. Avoid heads that have brown patches or any discoloration. The leaves should be green, with no sign of yellowing. The size of the head does not influence the quality.
So grab a head next time your at the market, at only 146 calories per head it’s a great way to fill up without adding up those calories.

Nothing better on a hot day than an açaí bowl for lunch. Maybe one thing, enjoying it out of my new limited edition @earthyandy coconut bowl from @coconutbowls 🥥🥥 Along with the bowl came a recipe that I will definitely hold onto for future use. Açaí bowls are a great way to get in your fruit servings for the day. I like to eat them earlier in the day and focus on vegetables for the remaining part of the day. Sharing the recipe below so you can enjoy as well! (Def enough to serve 2 so if it’s just you, feel free to cut the recipe in half😉) •2 Açaí packs
1 cup frozen blueberries
1 cup frozen mango
3 frozen bananas
1 cup frozen strawberries
1/4 cup nut milk
Blend, stop, mash, repeat. Definitely requires patience😉

So I read about why some people are struggling to see their abs. You eat right, you have a good balance between cardio and weight lifting in your routine, but you can’t get rid of that stubborn lower belly chub.
Behold your solution: Glute training. I know guys hate doing legs (we see you Johnny Bravo’s) but your glute muscle is the biggest muscle in your entire body and it provides great support for the rest of your body. One fish two fish, I made 2️⃣✖️lunches with 🐟! I woke up excited for work today (what?!) as I anticipate these lunches. Yesterday I took the kiddos to the grocery store and we bought everything in the store. I’ve mostly been ordering groceries this summer so I think 💭 we were all excited 😆 and overwhelmed at all the possibilities. And as a result, I’m winning. •
Lunch 🥙 numero uno — smoked salmon on a whole grain everything bagel thin with Greek yogurt sauce ( dill, lemon juice 🍋, capers, 4% Greek yogurt, everything bagel seasoning), sliced hard boiled egg 🥚 (Took my 1/2 dozen cracked eggs and turned them into boiled before the chance of bacteria forming. Why, you ask, did I have 6️⃣broken eggs? This one’s 🙋♀️WHOLE cart 🛒 tipped over.), kale salad with blueberries, cherries 🍒, and tomatoes 🍅 on the side.•
Lunch 🥗 numero dos —
Roasted sweet potato 🍠 fries, arugula, smoked salmon, mucho dill, capers, Greek yogurt, lemon juice, sliced tomato 🍅, HB 🥚, everything bagel seasoning. •
Other grocery store wins — frozen shrimp 🍤, fresh scallops, seeded crisp bread, individual packages of dried apricots for lunches, cauli rice 🍚 and cauli crust, whole grain cinnamon raisin bread, and Kids that were no longer screaming and fighting. And it only took one cart 🛒 tip over, so I’d say I came out on top! •

Thinking about my WHY on this Funday Monday💕and it all starts with these two that God soo blessed my undeserving self!🙌You guys, I’ve learned that finding your why, you find a direction, a purpose, and motivation ESPECIALLY when it gets hard. For me taking care of my body with fitness and Nutrition HELLO @toneitup I can better serve others. Also, if I’m not filled my spiritual cup then I’m DEFINITELY not going to do it 💯along with a good attitude!! I would love to hear your WHY!!🤗
While watching the live streaming of the @ironmangdynia 🏊 🚲 🏃 this morning, so many thoughts crossed my mind. Especially, when I heard about an elderly man (but still, age does not define our mental ability to fight!) who has been a huge fan of triathlon sprints and despite running with crutches, he made it to the finish line with a wide smile on his face 🏁. I am like 'wow. Whenever I think of an excuse for my workout or doubt in myself, I will recall that man and his extraordinary strength. Just wow.' 🖖
➡️ This week was full of easy runs that added the first 60km to my August stats. My mind demanded easy (=no Garmin) runs after two crazily intense weeks. Besides, two strength trainings, Pilates classes and finally - swimming! I biked on fewer occasions compared to the last week but the temperatures have been in extreme highs and I was drenched after a 10-min ride. But still, I biked around 60km trying to stay outdoors early in the morning or late evening.
It was a very good week. So much going on in my work and personal life. Promise to keep you posted when I figure everything out ☺
