Using my @blendtec blender I threw in crushed tomatoes, @bonafideprovisions organic bone broth and 1 small can of coconut milk.
Blend all together using the soup option and it heats it for you too! Don’t have a Blendtec? No worries, I got you covered😉. Add all ingredients to a sauce pan and heat through. Using an immersion blender or regular blender, purée until smooth and ENJOY😍

Oven baked rosemary potato crisps.
Definitely do not feel guilty about eating these🥔
These rosemary crisps go perfect with my grilled falafel burger. Plant based guilt free dinner works for me!
To make the potato crisps:
Peel 1 large potato. Using a mandolin slice potato thinly. Soak potato slices in cold water for 20-30 mins. While potato is soaking, Preheat oven to 400 and line a baking sheet with parchment paper. Lightly grease with olive or coconut oil. Strain potatoes and dry thoroughly. Brush or spritz with olive oil, season with salt pepper and rosemary. Bake for 20 minutes, careful, once they brown they burn quickly. But let’s face it, that’s the best part😉

💥 As a follow up to my earlier post "Train with a purpose"...it is even more important to EAT with a purpose!
The truth is, your nutrition is what yields results. You can train as hard as you want but if you aren't eating according to your body goals, you won't see real progress.
So, how do you eat with a purpose? 👇🏽
First step - you decide if you want to lose weight, gain weight or maintain your current weight.
If you want to lose weight, you will eat with the purpose of maintaining a calorie deficit. If you want to to gain weight or muscle mass, you'll eat with the purpose of being in a calorie surplus. And if you want to maintain your current weight you eat for body maintenance.
You can figure out what your personal calorie needs are by calculating whats called your TDEE (total daily energy expenditure)...to find out your TDEE just do a quick google search 😉.
When you have your figure you then add, subtract or keep the calorie amount depending on if you want to gain weight, lose weight or maintain weight. It's important to remember that these numbers are just a beginning estimation point of what you need. We all are different so use it as a starting point and adjust as needed 💪🏽..

It's time to sum up November very quickly. As mentioned in my previous posts and stories, last two months were about base training.
🎯 I ran around 170km. I had up to 4 runs per week. Most of them were easy runs but if I needed to pick up the pace, I would go for a tempo run. My goal was to give myself a chance to train without much pressure. So that I am physically and mentally capable of enjoying the upcoming season.
🏋️ What I am super proud of is me going to the gym three times a week. I believe that consistency is the key to success and seeing myself doing strength exercises, weightlifting and stretching on a regular basis is a HUGE step toward stronger me 💪
🙌 Overall, November treated me well and I am more than excited to see what December brings!
These chocolate fudge tahini cookies, to say they are life changing does not do them justice. @kalejunkie turned me onto Tahini and I haven’t been the same since. She makes the most delicious sweets, you definitely need to check her out!
Here’s what you need to do to take yourself to heaven✨✨ Ingredients:
1 cup almond flour
1/2 cup tahini
1/2 cup coconut sugar
1/4 cup coconut oil, room temp
1/4 cup honey (or maple syrup)
1 tsp vanilla extract
1 egg (or sub flax egg)
1/4 cup cacao powder (I use SantaBarbara red cocoa powder)
1 tsp baking soda
1/2 tsp salt
3/4 cup dairy free dark chocolate chips (I use Enjoy Life dairy free mini chips)
Preheat oven to 350.
Line a baking sheet with parchment paper.
In a medium bowl, combine tahini, coconut oil, honey (or maple syrup), vanilla extract, coconut sugar, and the egg.
Next, add the almond flour, cacao powder, baking soda, and salt. Mix everything together, and then fold in the chocolate chips.
Refrigerate the batter for 30 minutes. Don’t skip this step! This helps to ensure that your cookies stay firm and don’t flatten.
Using a spoon or cookie scoop, form cookies and place them on the baking sheet.
Bake for 10 minutes. Note, they will be nice and soft.
