I find it a challenge to come up with creative lunch ideas for my son, so I'm grateful to have stumbled across this fabulous account!
🇺🇸Another Day, Another Lunch Box 😍 🇬🇷 🥗Fresh Greek Salad : Cucumber, tomatoes, feta, olives, jalapeños and shallot seasoned with lime, salt,pepper. 🍆Healthy Moussaka ( Stuffed Eggplant) : 1 eggplant, 100g of minced meat, 1 grated zucchini, 1 tbsp olive oil, 2 garlic cloves, 1/2 cs of pepper, 1cs curcuma, 1cs paprika, chopped parsley.
Cut eggplant in half, scoop out the center (leaving just enough meat inside the skin so that it holds its shape when baked) and bake in oven for 20 minutes at 180c
Add 1 tablespoon of olive oil to a medium-sized pan over medium heat. Add the grated zucchini and the minced meat to the pan with all ingredients and cook for 10mins. Remove from heat, let cool briefly.Fill the scooped-out eggplant half with this mixture and bake in oven for 5 minutes. Add chopped parsley as topping. 🇫🇷Un autre jour, une autre lunch box 😋🇬🇷 🥗Salade grecque fraîche : concombre, tomate, fêta, olives, piment, échalote et assaisonnez de citron, sel et poivre. 🍆Moussaka Saine ( Aubergine farcie) : 1 aubergine, 100g de viande hachée,1 courgette râpée, 1 cas d’huile d’olive, 2 gousses d’ail, 1/2 cac de poivre, 1 cas de curcuma, 1 cas de paprika, persil hachée.
Coupez l’aubergine en deux, enlever la chair au centre (laisser un peu de chair à l’intérieur pour qu’elle garde sa forme dans le four) et cuire au four 20min à 180c.
Mettre 1 cas d’huile d’olive dans une poêle sur feu moyen, rajouter la courgette râpée, la viande hachée et le reste des ingrédients et cuire pendant 10mins. Retirer du feu et laisser refroidir.

I have been feeding Mila pancakes for breakfast for a while – they are so convenient and an excellent vehicle for a variety of fillings (much like bread would be in a sandwich). But this morning she had eggs for breakfast, so I thought I’d add the pancake to her lunchbox. This one is filled with Almond Nut butter (healthy fats and protein), honey and chia seeds (for extra protein, Omega oils and iron).
Make a big batch of pancakes and keep in the freezer. Simply defrost in a dry frying pan as you need them.
Nestled in alongside the pancake is the most beautiful organic pear I have ever seen! I find the colour of that skin mesmerizing!
The carrot and pineapple salad with left over mince pie dried fruit was a long-shot – Mila said it was like “eating hairs” (!!!!!)
My saving grace (once again) – the nutrient-dense “fruit” leather.

Cheesy Kale Chips Recipe

“A great way to feed your little one vegetables – and a highly nutritious (green) one at that.
Kale is one of the most nutrient-dense vegetables on the planet. 1 cup of kale has 684% of the RDA of vitamin K, 206% of the RDA of vitamin A, and 134% of vitamin C. It has more calcium by weight than milk, and that calcium is 25% more bioavailable than that in milk!
A special mention must also be made of kale’s protein content – like meat, it has all the essential amino acids and 9 non-essential ones (amino acids are the building clocks of protein within the body). .
Mila has never been a big meat-eater but by eating these chips I am assured she is getting a healthy dose of protein. .
Kale is also a great source of omega 3 fatty acids, iron, magnesium, folate and vitamins A, B, C, E and K.”
1 bunch of washed and spun dry kale
1 cup cashew nuts, soaked overnight
¼ cup warm water
1 tablespoon nutritional yeast
½ teaspoon Himalayan or sea salt
2 tablespoons lemon juice
1 tablespoon. onion, finely chopped
2 tablespoons raw honey (or organic maple syrup if your little one is younger than a year old)
2 tablespoons olive oil .
Remove the spine from the kale leaves. .
Blend the cashew nuts, water, nutritional yeast, salt, lemon juice, onion, honey (or maple syrup) and olive oil until smooth. .
Pour over the prepared kale and massage in until all the leaves are well coated. .
Place on mesh dehydrator sheets and dry at 45°C (110°F) or 4 - 6 hours or until crisp.
Be careful not to over dry your chips as they will become tough and loose their flavour.
