I was going to post my dinner but the lighting is terrible now that it gets darker earlier 🙄 So I’ll post this delicious lunch I’ve been meaning to post 🤩 Now that I’m on break, I want to provide you guys with more savory posts because, trust me, I don’t eat breakfast foods for every meal 🤣

If you want cookies but don’t have time to bake or an oven, try these no-bake sunbutter and jam thumbprint cookies! 🌟
I followed @rachlmansfield recipe for no-bake nut butter and jelly thumbprint cookies, and used sunbutter. I made jam by heating frozen raspberries and a few blackberries with chia seeds and a splash of vanilla on the stove until it was a jamlike consistency. I made another batch with blueberries instead of raspberries, and both are super tasty!
I also found that if you want them less doughy, you can bake them a bit! Just keep an eye on them so they don’t burn!
Got a plate full of these mini veggie burgers and there wasn’t mushroom for anything else 🙊The idea was to make mini sliders using sweet potato slices as buns, and made them vegetarian-friendly by making mushroom patties! These are perfect for lunch, appetizers, or a holiday gathering dish!
#dEATs : mushroom patties (dice baby bella mushrooms and combine with a whisked egg + 1 tbsp almond flour, then form into patties and cook in a pan with olive oil for ~4 min per side) + sweet potato “buns” (slice sweet potato and bake at 415F for 20 min) + arugula + smashed avo + red pepper flakes

Spicy Thai basil chicken
What do you need:
2 tbsp (vegetable) oil
1/2 kilo freshly chopped chicken thighs
1/2 cup sliced shallots
3 cloves garlic, minced
2 tbsp minced Thai chillies
1/3 cup water
1 tbsp soy sauce
1 tbsp oyster sauce
1 teasp brown sugar
1 cup basil leaves, sliced very thin
1. Slice your chicken thights like in the pic above.
2. Slice your chillies and shallots.
3. Minced your garlic.
4. Slice your basil very thinly.
5. Take a cup and put there the soy sauce, oyster sauce, brown sugar and water. Put this to the side.
6. Take a pan and put there the oil and chicken thights. When your chicken thight are cooked, put in the shallots, garlic and chillies. When everything is nicely cooked put some of the liquid cup we made. Cook this for 3 min and put the other half in it to.
7. Add some seasoning to taste.

Lemon garlic shrimp & pasta lunch!! • what’s in my bowl —> egg noodles and shrimp cooked in butter, parsley, garlic, s&p. I added tomatoes and yellow peppers in with the shrimp so they got sautéed! Topped with some lemon zest and feta 😋 I wanted to have a filling lunch since I work til 8:30 and am going to the gym after, so this was perfect!
HOMEMADE GOLDEN OREOS .
~~ INGREDIENTS ~~
● 1 1/2 cup oat flour
● 3 tbsp coconut butter
● 1/3 cup maple syrup
● 1 tsp vanilla extract
● Pinch of salt ((optional)) CREAM FILLING
● 1/4 cup coconut butter ((softened))
● 2-3 tbsp non-dairy milk
● 1 tbsp maple syrup ((optional))
~~ INSTRUCTIONS ~~
1- Preheat the oven to 350F.
2- Combine all the cookie ingredients in a mixing bowl. Mix to form a sticky but roll-able dough.
3- Roll out between 2 pieces of wax paper to about 1/4 inch thickness.
4- Cut out with a round cookie cutter (or any shape you like). Carefully transfer to a baking sheet lined with parchment paper.
5- Bake for 8-10 minutes at 350F. Cool completely before filling.
6- For the filling, combine the softened coconut butter and maple syrup (if using). Add the non-dairy milk 1 tbsp at a time. It will initially seize up and become clumpy, but keep stirring and adding milk until it is a thick creamy consistency.
7- Dollop onto half of the cookies. Top with the other half to form sandwiches. Refrigerate until the filling is firm.
8- Enjoy! Keep in the fridge. By feastingonfruit
