PEANUT BUTTA SLAMMA PANCAKES!
on a Monday... yes, pancakes don’t have to be just a “treat yo self” weekend meal. they can be a super healthy, nutritional + protein packed meal! -
I’m all about creating healthy alternatives to make eating healthy food enjoyable and fun. which I’m sure you all know by now, so now I’m going to tell you how to make really insanely good quinoa pancakes 🥞 -
(yields 8 medium sized pancakes)
1 cup @ancientharvest organic quinoa flakes
1 tbsp @madhavasweet coconut sugar
1/2 tbsp @simplyorganicfoods ceylon cinnamon
pinch of pink salt
1/2 a ripe banana
1 @vitalfarms egg
1/2 tsp organic vanilla extract
1 cup + 2 tbsp cashew milk (I used homemade) -
add all ingredients into your @vitamix then blend until a smooth batter forms, grease a cast iron skillet with coconut oil cook pancakes for about 3 mins on each side. once pancakes are done too with whatever your heart desires, I did some @woodstockfoods crunchy PB mixed with a little cashew milk to make it smoother for drizzling + some banana + maple syrup 🍌

I get you may not want to get up early to get that workout in, to take the time to meal plan, to study for the degree you desire, to ask questions and look for resources or to put yourself in a job that is a little new and makes you nervous. But CHOOSE to be uncomfortable! Take action steps towards your wants to manifest them! To be better in alignment with yourself. Put in the action and work.•. Too often we avoid being uncomfortable. We make excuses. “I’ll do it tomorrow.” “I don’t have the time.” “Think now of the excuses you have made against your desires...•. What can you do today or this holiday towards your wants that will make you uncomfortable but take action? Stop making excuses and get uncomfortable! Growth happens when we are uncomfortable. Yes it may be painful but you can handle it.•. If you are ready to join a kickass group of women who are conquering their goals and becoming uncomfortable my next health and fitness group starts in January. You will be amazed at how good nutrition and simple 30 minutes workouts will cascade into confidence, energy and happiness. Get uncomfortable with us! Comment below if you want in!

1 cup almond flour
1/2 cup cashew butter
1 tsp ginger
1 tsp nutmeg
1 tsp cinnamon
~blend in food processor or blender for a couple minutes, take from dough and roll your own bite sized balls, place on a plate and melt your dark chocolate-stick some coconut oil in there to thin it out-drizzle that good stuff on the balls and place in fridge to harden👌🏼 Store these guys in the fridge so they keep their shape and enjoy at all times of the day!

I LOVE that I can take my business (and my workouts) ANYWHERE. That means even my mini-vacation won’t get in the way of my progress or helping others. Now that is pretty damn cool 😎
Quiche gets a makeover - this open pie is basically shortcrust pastry filled with cream, eggs & vegetables & or meat- ‘quiche’ is the French name for this classic dish which they adopted but its origins are Lorraine in Germany. In the UK store bought they look harmless but are loaded with calories. My husband loves them so i wanted to make a healthier version with local Italian ingredients. I looked to seasonal sweet squash & Italian polenta to replace the high carb, high fat pastry. Still strong & hearty enough to stand up to the filling with a good texture & a warm note. For a 23cm springform tin you need to boil 100g of peeled squash cubes until soft enough to blend. Set aside & then pour 150g polenta into a pan containing 600ml of boiling salted water. Over a medium heat whisk constantly until the polenta has absorbed the water & thickened. Add the blended squash & continue to mix until mixture is thick & sticky, about 6 minutes. Remove from the heat & add 1.5 tbsp olive oil (or 25g butter), 25g grated parmesan & 1 whisked egg. Spread & flatten into your greased & lined tin, you need more at the edges as when cool enough to handle you can press the mixture up the sides of the pan. Bake for 20 to 30 mins until crust is dry. Now choose a filling, sauteed onions are a good starg, with spinach (150g) & a soft crumbly cheese like goats, feta or ricotta (100g). These weights are guidelines, adjust according to the number of ingredients. Pea, zucchini, sliced mushrooms, roasted cherry tomatoes, cured meats all work well just mix them all in a bowl with 100ml semi skimmed milk, 200 ml heavy cream & 5 eggs. Pour filling into your case & bake for 35-40 mins until set. did a little movement at home this morning, because i’m finding it way easier to accomplish with T😉 & lets be honest, moving our body feels GOOD. because we were made to move & to be active. & it’s okay to want to feel good and take of yourself!🙌🏻
it’s when exercise starts consuming you or controlling you, your day, or your plans (like you can’t skip a day without feeling crazy), that there’s an issue. but i think there can be a balance of joyful movement & pushing yourself without overexercising or letting it become obsessive.
but sometimes to get here, you may have to take a break & renew your mind in this area. anything that is all-consuming or controls you is never good. i used to be this way & seriously my worth, my food choices, & my everything was defined by whether or not i exercised that day. i lost my period for months & it was my body telling me to stop & slow down. that i needed to exercise less & eat more. meanwhile, my hair was SO thin, i was freezing cold, i was lethargic, & nothing felt right. (i can do a post more on this if you guys want!)
after a break & solely walking or doing yoga videos (this was about 2-3 years ago), i’ve found joy in movement. my personal favs are pure barre, long walks, & at home beachbody workouts because they make my body & mind feel good! do i workout everyday? no. do i beat myself up if i decide to sleep over move? no. but i do try to move a little each day because i know it feels good!
find something that makes you feel good & makes you happy & do it! not as punishment or to manipulate your body size, but to take care of yourself & feel good. even if it’s a 10 min walk outside! happy monday☕️

the fudgiest brownies ever topped with @juliesorganic sea salt caramel ice cream🍦
every time i make a brownie recipe, thomas always says they’re not as good as erin’s brownies (aka the ones his sister makes) so i finally decided to make them & okay he’s so right🙊 the recipe is from betty crocker & i made a few changes per erin’s suggestion💁🏼♀️
|| 1 1/2 sticks of unsalted butter + 6 oz baking chocolate + 1 3/4 cup sugar + 2 tsp vanilla extract + 3 eggs + 1 cup all-purpose flour || 🍫
to make them, preheat your oven to 350 degrees. melt butter & chocolate over low heat in a small saucepan and set aside to cool. in a medium bowl, beat the sugar, eggs, & vanilla with an electric mixer for a good 5 minutes! then beat in the chocolate on low. & add in the flour until just blended. pour into a 9x9 pan & spray very well! bake for 40-45 minutes & cool well before cutting. makes 12-16 brownies, you decide😎

I don’t really have too many photos with Mom because she didn’t really like her picture taken but I still scoured my Facebook looking for more memories to share.
I came across a status I made in 2012: “Going to a dentist appointment and then shopping with my momma.” It’s such a small memory but I remember everything about that day. It was winter break from my freshman year at Kent State.
I called my mom every single day when I was at school so we just picked up right where we left off.
It was a perfect day doing the most normal things.
On that day I had no idea that I would only have a year left with her.
I share this photo every year and it never gets easier.
But I continue to share not only to honor her memory, but to let anyone else who has lost a parent know they are not alone.
To let anyone who has a family member battling cancer or an illness that they will get through this.
To let anyone who still has their parents to show them how much you love them.
And to show that the hardest times in your life are just teeing you up for your greatest accomplishments.
Your strength is found in the struggle.
And if there is anything my mom taught me it’s that there is always a silver lining and to see the good in all things.
So no matter what you are going through right now, just know that it’s all for a reason.
Maybe not one you understand right now, but you’ll know it when you see it.

SNICKERS PIE ❤️ I followed @realfoodwithjessica recipe with a substitution for yacon syrup. It actually was surprisingly simple! And oh my did it taste amazing!!!! Naturally sweetened with dates and yacon syrup.

Here it is. The easiest cake you’ll ever make! I used @simplemills vanilla cake mix!
I sprayed my cast iron pan with ghee, then poured in half of the mix. Subbed almond mylk for water, and one egg. (Will work great with flax/chia eggs)And then added 2 scoops of @vitalproteins gelatin for extra joint and hair power. Plus I was out of eggs. Played with the mix/ mylk ratio until it was perfect. Added @enjoylife mini chocolate chips. Mixed in the skillet. Popped in the oven at 350 for about 8-10 mins until it was cooked. Added marshmallows and broiled until crispy! One of the easiest desserts I’ve ever made and is giving the pazookie a run for its money!

For those who do not know me, quality time and gift giving are both a few of my favorite love languages. So after our long adventurous (literally did circles and went to the same stores multiple times) trip to the mall yesterday, my cup was filled 💚
We left so satisfied with the gifts we got all our loved ones that hopefully will touch their hearts as much as it did for us. One even brought tears to my eyes as soon as I spotted it. I’ve been crying a lot lately and it’s not like me at all at all! Most of the time they’re happy tears and not from sadness, except when I think about my Tucker man. I’m really intrigued to know what is evoking this kind of response to my emotions though! Sometimes it’s from a song, today it was because of the sweetest picture of the kiddos, and other times have been when I nail a new yoga pose that I’ve failed to get over and over, or looking at koda & babe and thinking how grateful I am.
On another not so sappy note I thought I’d share this outfit that I put together that I feel so so proud in 🌻 If you look you can see Ty behind the curtains, he was pinning my skirt together because it was too big and it was the smallest size possible! I’m not saying that to boast, but it’s a NSV, in my book, that I have dropped the extra pudge off my hips and tummy EVEN when we’re in the holiday season! He told me I looked like Pocahontas just cuter 🥰 #daymade
