Grilled Marinated Chicken Breasts- prepped and ready for the week! The chicken is SO tender and moist when you are patient enough to let it marinate overnight.
INGREDIENTS
4 lbs Chicken breasts 
3 Tbsp Liquid Aminos 
1 Tbsp Cajun Seasoning 
3 Tbsp Balsamic Vinegar 
3 Tbsp Avocado Oil 
DIRECTIONS 
Put all ingredients in a gallon bag and let marinate for 2+ hours (overnight is best) and cook over a hot grill. .

Balsamic Roasted Red Potatoes with Asparagus
INGREDIENTS
Around 4-5 large red potatoes cut into quarters
Bundle of asparagus tips cut into 2 inch pieces 
2 tbsp olive oil
1/2 tbsp garlic powder
4 tbsp balsamic vinegar
A generous pinch of salt and pepper
INSTRUCTIONS
Preheat oven to 390F. In a large roasting tin, add the olive oil, balsamic vinegar and salt. Add the potatoes and toss to coat fully before roasting for 35 minutes (or until potatoes are soft). After 35 minutes, add the asparagus with a little extra olive oil, if needed. Toss to coat and cook for a further 20 minutes. Season with extra salt and pepper. Serve and enjoy!

Heute gibt es das Rezept 📝 für den gesunden Kaiserschmarn der echt lecker schmeckt 🙂 ballaststoffreich und reich an Eiweiß ist enthalten und durch das Vollkornmehl macht es noch richtig satt. Dieser kann zum Frühstück oder Mittagessen zubereitet werden. 😍
* 2 Eier * 100 g Vollkorn- oder Hafermehl
* 100 g Magerquark
* 200 ml Sprudelwasser
* 1 TL Backpulver * Süssungsmittel nach Wahl ( z. B. 50 g Erythrit von @xucker.de oder Flavor Drops von @womensbest )
* Kokosöl
* Topping freie Wahl, bei mir gab es Kirschen 🍒 Mandelmus von @rewe und Mandeljoghurt von @alpro dazu, genau so kann man auch Apfelmus oder andere Beeren 🍇 dazu essen

1. Alle Zutaten miteinander verrühren bis eine dickflüssige Masse entsteht. 2. In einer Pfanne Kokosöl erhitzen, Teig einfüllen und bei kleiner Hitze braten, bis die Unterseite leicht gebräunt ist und immer wieder wenden, bis alles leicht angebraten ist. Dabei gleich zerreißen.
3. Auf Tellern anrichten und wer will mit Puderxucker von @xucker.de bestreuen und mit Topping verzieren.

Getting our orders ready. Good morning world 😎🌅
I used to run all the time and at one stage when I was eating really well I lost about 5kgs which made me super happy. The thing was though, I mostly lost muscle. I might have been skinnier but I wasn’t fitter or stronger.
I have put that 5kgs back on now and you know what? I look the same only fitter and stronger and with better muscle tone.
Because I started strength training and working my muscles harder. I now do a combination of weight training, HIIT workouts and running. I feel heather, stronger and better for it. The scales should not define us.

Dressing makes a salad. Often I shake up a quick vinaigrette but decided to try this Avocado Cilantro greek yogurt dressing by @litehousefoods for something new and it's ahhh-mazing!

It has 50 calories per serving and is gluten free and only 1 gram of sugar. But most importantly it tastes rich and flavorful.

I was craving sweet potatoes and peanut butter for lunch (I didn’t eat a good breakfast so my body was like what the heck is going on!). And then I came up with the best idea EVER! I sliced some sweet potatoes and toasted them for about 4 mins (I did this twice) and then put some peanut butter, cinnamon, turmeric, chia seeds, raw pumpkin seeds, mixed nuts, and berries on top....GUYS🤯🤤 Seriously so good!!!! And easy, which is always a plus!

It is WEIRD being back, I feel like I never left and I’ve pretty much done normal things I did while I was living here. Go the beach, run some errands, go to Pilates, hang out with friends and the family I used to nanny. ⠀

Trips like these are perfect for self-reflection. Seeing where I’ve grown, and how I’ve been able to make decisions and do things I simply wouldn’t have here. I would love to be on the beach all day and hanging out with my friends. It’s so easy to remember all the good times. But when I think about all the rough times I’m like wow that was HARD. ⠀

It’s tough being in a place where you want one thing, but know it’s not the best for you. If I’ve learned anything over the last couple of years it’s that life can change on a dime and you have no idea what’s going to happen.

Always stay true to the best path for YOU as long as it’s the best for you.

Zucchini Lasagna 
INGREDIENTS:
1 lb ground beef
1 1/2 teaspoons kosher salt
1 tsp olive oil
1/2 large onion, chopped
3 cloves garlic, minced
1 (28 oz can) crushed tomatoes
2 tbsp chopped fresh basil
black pepper, to taste
3 medium (8 ounces each) zucchini, sliced 1/8″ thick
1 1/2 cups small curd cottage cheese
1/4 cup Parmesan cheese 
1 large egg
16 oz (4 cups) shredded mozzarella cheese
DIRECTIONS:
In a medium sauce pan, brown meat and season with salt. When cooked drain to remove any fat. Add olive oil to the pan and saute garlic and onions about 2 minutes. Return the meat to the pan, add tomatoes, basil, salt and pepper. Simmer on low for at least 30-40minutes, covered. Do not add extra water, the sauce should be thick. Meanwhile, slice zucchini into 1/8″ thick slices, add lightly salt and set aside or 10 minutes. Zucchini has a lot of water when cooked, salting it takes out a lot of moisture. After 10 minutes, blot excess moisture with a paper towel. Preheat a grill to medium high, and grill 2 to 3 minutes per side, until slightly browned. Place on paper towels to soak any excess moisture. Preheat oven to 375°. In a medium bowl mix cottage cheese, parmesan cheese and egg. Stir well. In a 9×12 casserole spread 1/2 cup of sauce on the bottom and layer the zucchini to cover. Spread 1/2 cup of the cottage cheese mixture, then top with 1 cup of the mozzarella cheese and repeat the process until all your ingredients are used up. The last layer top with remaining zucchini and sauce, cover with foil and bake 30 minutes. Uncover the foil and bake 20 minutes (to dry up the sauce) then place the remaining 1 cup mozzarella and bake until melted, 10 minutes. Let stand about 5 – 10 minutes before serving.

INGREDIENTS:
-3 sweet potatoes
-1 egg
-1 c almond flour
-1/2 tsp salt
-1 tsp dried oregano
-1 tsp dried basil
-1 tsp garlic powder
-1 tbsp apple cider vinegar
DIRECTIONS:
Preheat oven to 400°. Cook sweet potatoes in microwave until soft. Peel sweet potatoes and add to large mixing bowl (or food processor) with almond flour, egg, salt, dried oregano, dried basil, garlic powder, and apple cider vinegar (I also added a pinch of chili powder). Mash ingredients until well combined and the mixture takes on a doughy consistency. Spread THIN on pizza pan and cook for 30 minutes. After you add your toppings, return pizza to oven and bake for an additional 10 minutes.
