I’ve had quite a few recipe requests for this Sugar Free Banana Bread recently! So here you are 🌿
400g of ripe bananas - cut into pieces or mashed
225g self raising flour
110g of dates cut into pieces
80g walnut halves
2 medium eggs
1/2 tsp cinnamon
1/2 tsp nutmeg
This one is just so simple! It’s an adaptation of a Thermomix recipe, which can be found under ‘Sugar Free Banana Bread’ - Preheat oven to 190 degrees - Simply mix together all your ingredients until well combined - Pop the mixture into a prepared tin - Bake for 35-40 mins

Woken up feeling motivated for an amazing week! Starting off with a warming bowl of oats (3sp) with chia seeds (2g, 0sp), made with @alpro unsweetened almond milk and water, with alpro plain yoghurt, warmed cinnamon blueberries, strawberries and a tiny sprinkle of flaked almonds and coconut (1g each so 0sp). Delicious 😍

🥕FIT CARROT CAKE🥕
Cuando voy a Reino Unido (a ver a mi familia o por trabajo) no puede faltar un trozo de Carrot Cake en la típica Tea Room. Es una de mis tartas favoritas desde que era pequeña, junto al Ginger Cake. Hoy os traigo una versión mucho más saludable, ya que no contiene azúcar ni harinas refinadas. El único edulcorante es el caramelo de dátil, que preparo dejando a remojo unos dátiles el día anterior y triturándolos creando una pasta.
250 gr puré de manzana
100 gr caramelo de dátil
120 gr leche de almendras sin azúcar (@nectina_original )
60 gr harina de avena
280 gr harina de almendra
30 gr proteína sabor vainilla (@amixesp )
6 claras de huevo
1/2 sobre de levadura en polvo
1 cucharada de canela
1 cucharadita de jengibre en polvo
180 gr zanahoria rallada
60 gr nueces picadas
120 gr anacardos (24 horas a remojo)
75 gr queso fresco batido 0%
2 cucharadas de caramelo de dátil
Esencia de vainilla
🔸Triturad el puré, el caramelo de dátil y la leche. Por otro lado triturad las harinas, la levadura, la proteína y las especias. Mezclad bien los ingredientes secos con los húmedos, incluyendo la zanahoria y las nueces picadas.
🔸Poned la mezcla en un molde de silicona o forrado con papel de horno. Meted al horno unos 40 minutos a 180º. Dejad que enfríe antes de desmoldar y poner el frosting.
🔸Para la cobertura triturad todos los ingredientes hasta crear una crema y una vez el pastel de zanahorias esté frío se le puede añadir por encima o por dentro, cortando el bizcocho por la mitad.
🔸Ya podéis añadir por encima el coco rallado y la canela.
Esta receta está basada en la el carrot cake del maravilloso @lewis_mulberry que si no le seguís os recomiendo que lo hagáis porque es muy 🔝🔝

Bringing the cheeeese to your Wednesday ...this Low Carb Cheesy Chicken & Rice is #keto friendly with only 4 g net carbs....and it’s super filling so you won’t get hungry right away! 🙌🤩
1/2 head cauliflower
2 tablespoons olive oil
salt and pepper
1 crown broccoli (roughly 4 cups of bite-sized pieces)
1 cup shredded cheese (I used mozzarella)
1 lb boneless skinless chicken breasts (cut into bite-sized pieces)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon pepper
- Make cauliflower rice: cut cauliflower into even-sized pieces. Pulse in a food processor 10-15 times or until it is broken down into uniform cauliflower rice. You can use a box grater if you'd prefer for this step! - Add 1 tablespoon olive oil to a non-stick pan and heat over medium heat. Add the cauliflower rice and cook for 5 or so minutes, until slightly softened. Season with salt and pepper. Divide between four 2 cup capacity storage containers. - Add another 1 tablespoon of olive oil to the pan. Add the broccoli and cook for 5-7 minutes, until slightly softened. Add the cooked broccoli to the storage containers with the cauliflower rice. - Chicken: Toss the chicken with olive oil, onion powder, garlic powder, salt and pepper. - Cook in the non-stick pan over medium heat until cooked through; 5-7 minutes. Add the cooked chicken to the storage containers with the cauliflower rice and broccoli. - Divide shredded cheese between the four storage containers.

Birthday weekend is complete...and my heart is full. Capped it off celebrating with my big sister (our birthdays are 2 days apart)...and it was just icing on the cake 🎂. Dan treated me to dinner out, then made amazing homemade pizza for us tonight, spent the afternoon talking, shopping and drinking coffee ☕️
