Had a business meeting and was on the go for lunch today but wanted something healthy and clean, so I stopped at Sunlife Organics and had their “create your own Protein Shake/Smoothie”: I did whey protein, almond milk, cashew butter (for healthy fat), strawberries and 1/2 a banana. 1️⃣I like to normally split my meal prep up into 2 days. One day I prep all my snacks, like fruits and veggies. And then the second day I like to prep lunches. I have found when I do it this way I am not as overwhelmed😳

But if you’re just starting I encourage you to just start with one meal, maybe it’s breakfast for the week. And once you get that down, add another meal until you have them all mastered!! Don’t get discouraged either, we all have to start somewhere!! .

🍳Breakfast: scrambled eggs with cheese and sweet potatoes. 🥗Lunch: salad with chicken I made in the crockpot, feta and dressing 🍽Dinner (tonight): roast, potatoes, carrots and onions I also made in the crockpot. .

I know I do! I have been doing Crossfit for about a year now. And on Monday I finically complete my first workout at the Rx level!!!! 💪🏽💃🏻💪🏽 Which is basically the most challenging level of the workout. It was a partner workout and at the beginning of the workout I was prepared to do Level 2 but then my partner @nicoleshonnon07 said let’s try Rx. I responded with no I can’t do toes to bars. And she said I bet you can try it and sure enough she was right! I jumped up to the bar and completed my first ever toes to bar. She believed in me even when I didn’t and encouraged me to trust myself and complete something I had never done!!

Moral of the story is, sometimes you need someone to push you to get to where you truly want to go. It can be an encouraging nudge, an informational nudge, or even a pushing nudge to help us get to where we deep down know we should be but are nervous to get to!!

One thing that continues to motivate me is my “why”- so that the next time I go to Disney’s California Adventure I don’t have to strategically place myself behind the statue to conceal how big my stomach is. I’m learning to love my body because it truly is capable of soooo much but my extra weight still makes me uncomfortable so that’s why I’m making better health choices. I quickly threw together 45g of Carmen’s fruit free granola, tin of lemon YoPro yogurt, whatever hemp seeds I had left and some frozen raspberries. It was pretty delicious for a throw together brekkie! Kind of like lemon cheesecake with raspberries 😄

Dragonfruit, Spinach, Mango & Banana (6m+)

INREDIENTS:
▫️1 mango
▫️2 large bananas
▫️1 handful of spinach
▫️1 teaspoon hemp seeds
▫️1/2 dragonfruit

INSTRUCTIONS:
1. Wash & peel mango
2. Cut & place the ‘meat’ of the mango in the blender.
3. Peel banana and place in blender
4. Wash a handful of baby spinach, and place into blender
5. Cut your dragon fruit in half lengthways
6. Peel dragon fruit and add to blender 
7. Add hemp seeds
8. Blend all ingredients together
9. Add breast milk or water to thin the consistency if needed
10. Serve
11. Freeze remainders in Kiddo Feedo Freezer Tray
12. Defrost portions overnight in the fridge as needed

Yay!! We made it to #day3 of #100daysofhealthy!! I really really really wanted to go to an all you can eat sushi and hibachi bar but thats so much food! I do not need that! So I made my own! Made a little stir fry veggies and chicken with white rice. I know if I went out I would have had fried rice with steak and easily 2 bowls! 😮😮😮😮 that's what this challenge is all about. Moving forward. Making progress. Even the small changes!

Vegan Chocolate Muffins
1 ½ cups spelt flour
1/2 cup almond meal
1 tsp baking powder
½ tsp baking soda
½ cup cacao powder
1 tsp cinnamon
1/3 cup coconut sugar
Pinch of pink Himalayan salt
1 cup almond milk
2 ripe bananas

¼ cup melted extra virgin coconut oil
3 Tbsp. pure maple syrup
Egg replacement (2 Tbsp. chia seeds soaked with 1/4 cup water for 10 minutes)
100g vegan chocolate bar roughly chopped 
Pre heat your oven to 170C. 
In a bowl sift the spelt flour, baking soda, baking powder and cacao powder.  Add all the remaining dry ingredients into a bowl and mix well. 
Add the 2 Tbsp. of chia seeds to a small bowl and cover with ¼ cup water.  Allow to soak for 10 minutes. 
In another bowl add all the wet ingredients and combine. 
Pour the wet ingredients and the soaked chia seeds into the dry mixture.  Add in the chopped vegan chocolate (you could use vegan chocolate buttons also) and combine everything together. 
Line your muffin tin and spoon the mixture into the muffin cases. 
Place in the oven for about 16-18 minutes until fluffy and cooked through. 
Place on a cooling tray and allow to cool for 15 minutes before sprinkling over the icing sugar.
