It’s so good to be back with my family and in the hot Aussie summer. 
It’s been freezing and rainy and grey back home in Amsterdam. 
So all I want to eat are cold and delicious smoothie bowls to hydrate, cleanse and keep me sustained all day long. 
Let’s get to it! 〰 Avocados - from the north of Australia 🥑🥑🥑 〰 Spinach fresh and frozen - the frozen version acts as ice blocks to chill and make the smoothie creamier
〰 Cucumber chilled
〰 Parsley 〰 Spirulina & Chlorella my fave is from my friends at @organicburst ❤️ I travel with the tablet form and crush them for my smoothies 🙂 〰 Coconut flakes
〰 Chia seeds
〰 ACV or Kombucha
〰 Hemp seeds
〰 Tahini 😛
〰 Filtered water
〰 Blend together until creamy 〰 Mine is topped with more avocado, toasted coconut flakes, raspberries, pistachios, hemp & chia seeds and a dusting of spirulina & chlorella powder

Super yummy, vegan spaghetti Carbonara with creamy cashew cheese sauce. Easy, quick recipe for dinner!

Course: Main Course

Cuisine: Vegan

Servings: 3 people : 695 kcal

Ingredients

Cashew Sauce:

1 cup of cashews (soaked overnight)
3/4 cup vegetable stock
2 tbsp nutritional yeast
2 cloves of garlic minced
1 onion minced
salt and pepper

Carbonara:
250 g wholewheat spaghetti pasta
300 g white close cup mushrooms (sliced)
1 cup green peas (fresh or frozen)
1 small onion (minced)
1 clove garlic (minced)
1- 2 tbsp olive oil
fresh parsley
salt and pepper
Instructions
Cashew Cheese:

Rinse your cashews and place in blender along with the rest of ingredients.

Blend until you have smooth, creamy texture and set aside.

Spaghetti Carbonara:

Cook your pasta as per package instructions, cool down and drizzle with olive oil, set aside. Heat up medium frying pan and add 1-2 tbsp. olive oil. Add garlic and stir fry for a minute.Add onion and mushrooms and stir fry until golden brown (about 5 mins). Add fresh or frozen peas and cook further for 3 mins, stir in 4 tbsp. of cashew cheese and mix until well combined.

Serve immediately, sprinkle with fresh parsley.

Hoy para merendar me hice un exprimido de naranja con algunos arándanos y un durazno con coco rallado por arriba 😁. El durazno es fruta de clima templado, su temporada es desde octubre hasta marzo, en Argentina se produce en Buenos Aires, Jujuy, Mendoza, Río negro, Neuquén, Córdoba y Misiones. Argentina es el mayor productor de durazno del Mercosur.
🍑 Al momento de comprarlo fíjate que no tenga manchas verdes y que se sienta su aroma.
🍑 Almacenarlo en heladera una vez que estan maduros pero separados de otras frutas. Si aún no estan maduros dejarlos a temperatura ambiente.

Temporada de Durazno 🍑🧡 Hoy para merendar me hice un exprimido de naranja con algunos arándanos y un durazno con coco rallado por arriba 😁. El durazno es fruta de clima templado, su temporada es desde octubre hasta marzo, en Argentina se produce en Buenos Aires, Jujuy, Mendoza, Río negro, Neuquén, Córdoba y Misiones. Argentina es el mayor productor de durazno del Mercosur. 🍑 Al momento de comprarlo fíjate que no tenga manchas verdes y que se sienta su aroma. 🍑 Almacenarlo en heladera una vez que estan maduros pero separados de otras frutas. So what to do with them...whip up my quick and easy Vegan Potato Dauphinoise Gratin Recipe – think tender potatoes enveloped in a velvety, garlicy sauce. 😍

500g of potatoes
1 red onion, diced
6 cloves of garlic, crushed
2 tbsp of nutritional yeast
1 can of coconut milk 
6 tbsp of olive oil
salt and pepper
TOPPINGS: vegan parmesan or normal parmesan
↠ DIRECTIONS
Preheat the oven to 200 C.
Slice your potatoes with a mandolin. 
Grab a large circular baking dish. starting the the outside place the potato slithers around until it meets the middle.
Whisk the coconut milk, garlic, onion, lots of salt, peppers and nutritional yeast together. Pour over the potatoes. Season with lots of salt! Bake for 45 minutes. Remove and top with vegan parmesan, olive oil and salt.

Was at a loss of what to call this but here we are!
Took my leftover slaw from the tacos the other day, threw in some canned tuna and extra cilantro and voila!

To make the slaw combine👇🏻
+ 1/2 a cabbage, chopped
+ 2 tbsp lemon juice
+ 3 jalapeños, chopped
+ 1 tbsp olive oil
+ a few huge handfuls of cilantro
Let it sit overnight to really marinate! It brings out all the flavors!
Then add in a can of tuna!

Roasted poblano and garlic sauce! A delicious and flavorful spread with a slight kick! Enjoy it in your sandwich, chicken, eggs or just bread and cheese. I usually make a big batch and keep it in the fridge. Very easy and fast to make. Coat the peppers with olive oil and roast for 10 to 15 min. Roast your garlic with olive oil and oregano. Then blend everything with a dash of vinegar and salt. So good! Food is a huge passion of mine, and because I want to eat whatever I want, I run every morning, and then I do weights a few times a week. It's just how I can balance eating pancakes in the morning, a big burger for lunch, and then a fat steak and cheesecake at night.

When I get the chance to make my favorite breakfast on the weekend, I often choose to make pancakes.

I'm a breakfast type of guy. Don't get me wrong. I can cook, I'm kinda nice on the burner, but I enjoy making breakfast. I do it all... Scrambled eggs... French toast... Pancakes... Breakfast is my thing.

Easy to make, yummy and packed of nutrients ... just partially mash the beans using a fork... add some lemon juice and olive oil then top on your toasted bread of choice ... top with avocado slices , something crunchy , some cilantro or fennel leaves, sea salt and a cick of chili flakes.
