One concern that many people have with a plant-based diet is obtaining adequate iron. For anybody who doesn't know, there are two types of dietary iron, heme iron, and non-heme iron.

Heme iron is found in muscle and blood, so in meat, seafood, fish, and poultry. It is known for being more easily absorbed than non-heme iron (which is true, but not quite the whole picture). What is often left out is the additional risks of stroke, coronary heart disease, and various types of cancer associated with heme iron rich foods. On top of that, heme iron is more difficult for the human body to regulate, and too much iron can cause oxidative stress in the body and a toxic overload of iron.

Non-heme iron on the other hand, is found in plant foods like green leafy vegetables, beans, and nuts (some examples above). Non-heme iron absorption is much more easily regulated by the body, in part because of the various other nutrients contained in plant-based foods. Many of these foods also contain vitamin c, a vitamin which increases the absorption of non-heme iron! All of this without increasing the risk of stroke, coronary heart disease, or cancer. 
So if you're ever worried about your iron levels, be safe. Grab some plants.

Good morning my beautiful friends! 🌟 I got up super early today as I have got an early start at work! Currently on my way there now! I thought I would share with you today my favourite protein smoothie that I made when I made my own cashew milk! I've got some cashews soaking as we speak because I'm finally going to make some more cashew milk when I get home today! I still haven't decided whether to make chocolate cashew milk or just plain cashew milk. Anyways here's the recipe for this tasty smoothie 👉 200 ml homemade cashew milk, 2 medjool dates, 1 frozen banana, 1/2 cup frozen homegrown atherton raspberries, 1/3 cup @redtractorfoods rolled oats, 1 heaped tbsp of @tropeaka vanilla lean protein powder and 1/2 tsp cinnamon. After blending stir through tbsp @thechiaco chia seeds for some fun crunch and that's it! Recipe for my cashew milk is down my page a but if you want to make your own! Good evening! I wanted to talk about my birthday and the pizza place we visited🍕
First of all, I had a wonderful birthday and I’m thanking everyone who wished me a happy birthday 😃
So in total we ordered about 7 pizzas that evening. And no, I’m not regretting a single bite! We visited @vegazzihun (Werbung | Namensnennung) a small pizza place in Budapest, Hungary 🇭🇺 They bake their pizzas in a special oven, making them super fluffy and delicious! In total, there where about 6-7 different types of pizza if I remember it correctly? 🤪 and we ordered 5 of them (2 of the same kind). Every type was in its own way special and I seriously could have eaten 30 more pizzas 🤰🏼 long story short, they have the best pizza and I never ate a better pizza than from there! The next time I will visit Hungary, I’m definitely going to stop by for a pizza again ❤️

Confession time - I had 2 Saucy Affairs today, at midday it was raw, this evening heated, both by the name of #CucumberBlunder.

The most challenging to stabilise, the most rewarding when I cracked it.. Got my little ones eating salad when dressed with it... Devouring prawns & salmon when cooked in it! (3 minute preparation meal)

Japanese tones in its raw form, delicate Malaysian aromas when heated!

Mix it into sour cream for an Asian take on tsatziki 
This will be the most challenging to sell, cook with cucumber?

I assure you, this Saucy Affair is no Blunder, it’s a tongue tingling wonder!

Dress, dip, drizzle, stir fry, bake or sizzle! 😉

@gerthim and I are on our way to Sweden. He's being the cutest boyfriend ever by bringing me all the way to Gothenburg. Classes won't start until September, so we have plenty of time to discover the west coast. So excited, yet super sad to leave everyone and everything behind.

😻 We're currently staying at an Airbnb in Germany, close to Denmark. Our host has three cats and we're completely in love! They are so fluffy and kind to us (the cats, we haven't met our host haha). Chicken salad celery boats.// I’ve posted these before but finally got the measurements down and wanted to share the recipe with you! Had these for lunch today - so good!

Ingredients: 1 packet of chicken tenderloins, 3-4 celery stalks, 1/2 C plain Greek yogurt, 1/3 C seedless grapes, 1 TB lemon juice, 1/3 C walnuts, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp paprika, salt + pepper to taste. .

Directions: Boil chicken for 20 minutes. Once done, place into a bowl and using two forks pull chicken apart so it becomes shredded. Set aside. Using a knife, halve grapes and chop up walnuts. Add Greek yogurt, lemon juice, garlic powder, onion powder, paprika, and s+p to the chicken and mix well with a spoon. Then add grapes and walnuts and stir until combined. 
Clean celery stalks and slice each one in half. You can either fill the stalks with the chicken salad like I have done pictured or just dip them into the bowl. Your choice! Hope everyone had a wonderful weekend!! 💕

🇨🇦 I made a lovely soup from mostly garden veggies 👉with beets, carrot, cabbage, Swiss chard, a little potato, broth, garlic and a lot of fresh dill 👉and topped all this with a dollop of organic sour cream and a nasturtium flower 😋I can tell you, totally delicious, and a great way to eat an abundance of veggies. Millet is a naturally glutenfree grain.
You can pretty much use it like oats. I just find it‘s more mushy then oatmeal. But if you like this kind of food it‘s amazing! 🙏🏼

Breakfast of champions!  When I first began my switch from vegetarian to vegan, I struggled a lot with breakfast.  In my vegetarian phase, I would make a breakfast burrito with these lentils, avocado, eggs and cheese.  Over time, that evolved into the burrito without the eggs and cheese and now I've abandoned the burrito altogether. I make a big batch of the lentils early in the week and we use them for breakfast, as well as a quick dinnertime meal and as a nachos topping for a snack.  The recipe will be up on my blog later this week.  Yes, that's right.  It is almost done!  In the meantime, I'll post it here as well:
1 onion finely chopped
2 cloves garlic, minced
1 T. olive oil 
1 T. cumin
1 T. chili powder
1/4 c. tomato paste
1 T. chipotle paste (I love Olo Chipotle Paste @olofoods)
1 1/2 c. red lentils, rinsed 
2 c. water (additional 2 c. on reserve)
In a large skillet with deep sides or. saucepan, add 1 T. olive oil to onions and cook at a low heat until soft and translucent - about 5 minutes.  Add garlic and cook for an additional minute.  Add cumin and chili powder and allow to cook while stirring until fragrant - about 1 minute.  Add tomato paste and chipotle paste, lentils and 2 c. of water.  Simmer at a low heat for about 25 minutes or until the liquid has cooked off and the lentils are soft.  Red lentils, when cooked, will take on a mushy texture.  I do watch this carefully, as I often have to add more water during the cooking process.  When I made these last, I needed to add 2 additional cups until the lentils were soft.  When they reach the right consistency, I will often smash them with a potato masher.  Serve with sliced avocado, leafy green and herbs of your choice.  Sometimes I'll add hot sauce, vegan cheese and toasted pepitas.

Breakfast this morning! Crazy week ahead of me. Back to school 🙌🏽 🤓.

Chicken Zucchini omelette with sliced apples topped with @wild_friends peanut butter, @jojoschocolatebark 🍫 & strawberries 🍓.

4 oz of cooked chicken breast.
1/2 grated zucchini. Use the same process as the potatoes (in my recipe highlights).
Add 1 whole egg 🥚.
Mix and place into a heated skillet, spray coconut oil.
Let it cook for about 4-5 minutes and flip like a pancake.

I love swimming and drinking water 💧 because my mom told me water make my skin more beautiful since I was really small. But you shouldn’t drink too much water especially during meals because it will disturb your digest system. ¡Hola! Les traigo una receta de pastelitos de manzana sin azúcar agregada, ideal para el café de las tardes 😋

Ingredientes:
✅3 manzanas gala, sin cáscara en cubitos ✅3 tortillas de harina cortadas a la mitad ✅1 cucharada de aceite de coco
✅2 sobrecitos de sustituto de azúcar, yo utilicé @natuviacr ✅1 cucharadita de canela en polvo.

Preparación:
1. Cocine a fuego medio, las manzanas con 1/2 cucharada de aceite de coco, e incorpore la canela, y el sustituto de azúcar. 
2.Rellene las mitades de la tortilla de harina con la manzana cocida.
3. Coloque los pastelitos en una sartén caliente con 2 cucharaditas de aceite de coco, hasta que se doren.
4. Sirva y disfrute 😊 •

🔹Cada pastelito aporta 95 kcal.
