Avocado toast Tuesday😄
Now, normally when I make avocado toast I top it with an egg or arugula. I don’t have arugula and I had eggs for breakfast (doesn’t mean I can’t have eggs again) so I just wasn’t in the egg mood. Sooo I decided to pan fry some chick peas and put them on top of my avo😛 
Today it’s finally not cloudy with overcast so I’m going to go sit out on the beach all day with a good book and soak up that sunshine☀️

A few years ago my youngest uncle passed away from heart failure, brought on by diabetes. I saw him go through 2 heart attacks, quadruple bypass surgery, diabetes and all the medication involved...and ultimately pass young, leaving behind two kids and five grandkids.

Then my doctor told me I was prediabetic.
😳WAKEUP CALL😳

I got serious about losing weight and reversing the diagnosis. One of the BEST decisions I’ve ever made was replacing my breakfast sandwich with an all-natural shake that helps me curb cravings, boost energy and get ALL of my vitamins/nutrients every day.

I’m all about work-life balance and to get into a solid rhythm. I like to keep certain traditions. One of my faves is starting my day with a really good coffee (I mean REALLY good one!), a croissant and browse my emails and Instagram while I slowly go through my breakfast.

My energy levels have been very low 😔 and I'm having trouble getting through my run recently 🏃‍♀️It could be the internship and work combined. RECIPE:
¾ cup oats
½ cup almonds
1 scoop @vitalproteins collagen peptides (leave out for vegan)
3 Tbsp ground flax
1 Tbsp coconut oil
2 tsp cinnamon
2 tsp maca powder
water until desired consistency

Heat a large skillet over medium-high, spray with coconut oil spray, and add batter. Recipe made 2 large pancakes.

It’s made from dragonfruit- when I went to Kauai I had a chance to taste real dragonfruit but it doesn’t transport well. 💖The powder is made from Dragon fruit and it’s loaded with phytonutrients,  antioxidants, carotene, protein, vitamin C, polyunsaturated (good) fatty acids and B vitamins. Desayuno rico que llevaba tiempo con ganas de hacer 😍

ENROLLADO DE FRESA Y CHOCOLATE
.
🔼INGREDIENTES BIZCOCHO:
🔹️1 huevo y 200 grs de claras
🔹️60grs de harina de avena sabor gofre de chocolate blanco de @max_protein
🔹️2cucharadas de aceite de coco de @foodspring_es
🔹️2cucharadas de queso batido 0%
🔼INGREDIENTES PARA EL RELLENO:
🔸️Queso batido 0%
🔸️Mermelada de fresa de @hypertrophynutritionoficial
🔸️2fresas
🔸️10grs de proteina de fresa @foodspring_es
🔼INGREDIENTES PARA LA COBERTURA:
🔹️2onzas de chocolate negro fondant de @chocolatestorras
🔹️Sirope chocolate @hypertrophynutritionoficial
🔹️5anacardo

👩‍🍳PROCEDIMIENTO:
✔Se precalienta el horno a 200ºC
✔Se mezclan los ingredientes del bizcocho y se bate muy bien hasta tener una masa homogénea.
✔Se pone un papel vegetal en la bandeja del horno y se vierte la masa intentando que quede lo más estirada y cuadradita posible.
✔Se baja el horno a 180ºC y se mete durante 10-15min.
✔Una vez transcurrido el tiempo lo dejamos reposar dentro del horno apagado
✔Sacamos del horno y lo dejamos que se enfría.
✔Una vez frío le ponemos una capa fina de queso batido 0%, un poco de mermelada y las fresas troceadas muy pequeñas en uno de los extremos de la lámina de bizcocho.
✔En el extremo donde hemos puesto los ingredientes, comenzamos a enrollar nuestra lámina de bizcocho hasta que quede todo enrollado y con ayuda de un papel de film lo envolvemos para que quede apretadito.
✔Lo metemos un par de horas en la nevera.
✔Transcurrido el tiempo, quita el film ✔Y para terminar mete las onzas de chocolate en el micro con el sirope de chocolate y cuando estén deshechas, con ayuda de un pincel lo pintas por encima y pones los anacardos

🔼INGREDIENTES PARA EL RELLENO:
🔸️Queso batido 0%
🔸️Mermelada de fresa de @hypertrophynutritionoficial
🔸️2fresas
🔸️10grs de proteina de fresa @foodspring_es
🔼INGREDIENTES PARA LA COBERTURA:
🔹️2onzas de chocolate negro fondant de @chocolatestorras
🔹️Sirope chocolate @hypertrophynutritionoficial
🔹️5anacardo

👩‍🍳PROCEDIMIENTO:
✔Se precalienta el horno a 200ºC
✔Se mezclan los ingredientes del bizcocho y se bate muy bien hasta tener una masa homogénea.
✔Se pone un papel vegetal en la bandeja del horno y se vierte la masa intentando que quede lo más estirada y cuadradita posible.
✔Se baja el horno a 180ºC y se mete durante 10-15min.
✔Una vez transcurrido el tiempo lo dejamos reposar dentro del horno apagado
✔Sacamos del horno y lo dejamos que se enfría.
✔Una vez frío le ponemos una capa fina de queso batido 0%, un poco de mermelada y las fresas troceadas muy pequeñas en uno de los extremos de la lámina de bizcocho.
✔En el extremo donde hemos puesto los ingredientes, comenzamos a enrollar nuestra lámina de bizcocho hasta que quede todo enrollado y con ayuda de un papel de film lo envolvemos para que quede apretadito.
✔Lo metemos un par de horas en la nevera.
✔Transcurrido el tiempo, quita el film ✔Y para terminar mete las onzas de chocolate en el micro con el sirope de chocolate y cuando estén deshechas, con ayuda de un pincel lo pintas por encima y pones los anacardos

One of my favourite breakfasts! 
I usually have 3-4 weetbixs depending on my day. In this bowl I’ve mixed them with a handful of granola for some extra texture, PB2 powder (for my ‘good’ fats and it’s a better alternative to actual peanut butter), a bunch of blueberries (the king of antioxidants) and just a drizzle of organic honey for some sweetness. Another week another #toasttuesday 🍞😋 I get the nicest loaf of bread in the world from @morrisons in store bakers yesterday, fresh out of the oven (still warm 😍). So I was more than excited to kick of my Tuesday with some fully loaded slices 😋 One slice has @aldiuk almond butter and lots of fresh strawberries with a sprinkling of cinnamon, because toast is never complete without some cinnamon. On the other slice is @wholeearthfoods crunchy peanut butter with a flat peach topped of with some cinnamon too because you can never have too much 😉 •
Today I’m off out with my Grandparents to a National Trust House in the UK called Dunham Massey. I will post some pictures on my Instagram story later so keep your eyes peeled 👀 What are you all up to today? Whatever it is, I hope you have a fantastic day ☺️

Papas de aveia frias prontas em 5 minutos. Tudo o que tens que fazer é colocar 200 ml de água num tacho e quando começar a ferver adicionar 50g de aveia ( usei sabor a cookie). Quando começar a engrossar adicionar 10g de FribraMix e 100ml de claras. 
A FribraMix da @shinemixes.portugal dá uma textura incrível às papas.

Do you have a secret ingredient? 😁 I put turmeric in it because of the anti-inflammatory effect. I also love my big can of peanut butter without any additives from @nu3_de
