I am not kidding when I say that baking is my favorite part of the holidays😂 Every year I bake for practically everyone I know- my immediate family, extended family, neighbors, friends, my dog, literally everyone😂

It’s a shock to us all🤣 It’s a rare day in which I have a strictly savory breakfast but this toast combo has been on repeat for me cause it’s just too good😍 It’s also quick and the quicker & easier, the better has been my motto this past week. “2 eggs, milk....” Who needs a recipe when you have an excited 3 year old that loves to make protein pancakes! One of the most common struggles with my nutrition clients: finding TIME to food prep. It’s especially challenging when the family life is busy and everyone eats like crazy —you spend more time at the grocery store than you do at your own home! My suggestion: schedule it. Put prep time in your planner, on your calendar, in your device...and make a point to hold it as a priority. Having help also makes it easier, quicker, and more enjoyable!

Yes I’ve been on a protein banana bread kick lately - keeps me full long into lunch hour and still feels like a yummy treat. Also chocolate+apricot is apparently a winner!
PS. Makes a small-ish loaf for one person’s breakfasts (me!). If you want a big loaf for the fam, double it up and make sure to bake in a 9x5!
- 2 large spotty bananas mashed (260 gr)
- 1 egg
- 1/4 cup greek yogurt (I did full fat Fage - 56 gr)
- 3/4 cup wheat flour (I did white whole wheat - 90 gr)
- 1 1/2 scoop vanilla whey protein powder (36 gr)
- 2 tbsp cocoa powder (12 gr)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon optional (Yes I love cinnamon and chocolate!)
- 1/4 cup chopped dried apricot or other dried fruit (40 gr)
- 1 tbsp mini chocolate chips (14 gr)
Preheat oven to 350F and line a loaf pan with parchment and spray with oil. Combine all wet and dry separately. Pour dry into wet and fold until just combined. Fold in apricots and chocolate. Transfer to loaf pan and bake for 40-50 minutes until fully baked in the center. Cool on a wire rack. Makes 8 thick slices. This easy peasy breakfast spread from @fromcoast2toast has all the goods 🥑 and can be ready FAST! Momma doesn’t have a ton of time 💙 I always include eggs and avocado in my morning routine, switching off between toast and almost butter and oats (great for breastfeeding).

Masala Paniyaram (Fermented Rice Dumplings)
Leftover idli or dosa batter beautifully transforms into the most delicious Paniyarams in this recipe. A simple tempering of spices added to the idli batter and you have a quick and easy breakfast. It tastes absolutely delicious with coconut chutney and a piping hot cup of masala tea.

🌈 EAT. You may be busy, but you have to eat. Whether stopping somewhere for food, making something quick or prepping the night before, make sure you get your 3 meals in.
🌈 STICK TO THE BASICS. Put simply, find at least 1 recipe you can easily make and rely on that until things die down!
🌈 DRINK WATER. Whenever I get busy, the first thing to “go” is my water intake. While coffee keeps me focused, water keeps me HEALTHY!

Today marks my 6th year as a vegan 🙉
I have always made decisions quite intuitively and switching to a vegan lifestyle is by far my best intuitive decision to date. I hadn’t seen any of the documentaries and there wasn’t much of a vegan community on youtube yet. But i just remembered having this deeper part of myself nudging me away from meat and dairy. My body was clearly communicating with me that it didn’t digest those foods well, so I listened. Only a few months after did i start researching into the benefits health-wise and the ethical/ecological side of it. Reading and watching those things is what really sealed the deal for me and made me realise there was no way I was ever going to go back to eating meat. ❤️
If you are still on the fence about switching to a more plantbased lifestyle i highly recommend watching the documentary Earthlings. This is the first one i had ever watched and it really broke open my heart and made me realise what a cruel industry the meat/dairy industry is. I would also recommend watching the Best Speech Ever on youtube and the documentary Cowspiracy 🙏🏼

40g @bulkpowders_uk coconut oil
100g dark chocolate orange
50g @bulkpowders_uk dried cranberries
50g @bulkpowders_uk crushed walnuts
30g crushed biscuits OR for a lil extra protein crush up a @bulkpowders_uk macro munch bar 🤷🏽♀️👏🏼 .
This made 9 small tiffin bites for me so double the mixture if you want big chunky ones!!!! .
Melt the coconut oil and chocolate in a microwave. Then add in the rest of the ingredients. Mix well. Now pour into a lined tray/tin and spread evenly. Put in the fridge for up to 2 hours to set. CUT AND ENJOY 💕👏🏼 @_emilysworld
Been battling flu and a hacking cough for nearly two weeks now but just can’t seem to shake it. I so rarely get ill that I’m totally rubbish about coping with it when I do. Desperately trying to heal through plenty of nourishing foods like chicken soup abs this morning’s blackberry apple porridge with cinammon and lemon ginger tea. GALLETAS MARMOLADAS RELLENAS DE CHOCOLATE 🍪
🔹️70grs de harina de avena sabor vainilla de @lifepro_oficial
🔹️70grs de harina de almendra @calconut_nuts 🔹2cucharadas de aceite de coco de @foodspring_es
🔹1huevo y 3claras
🔹15grs de proteína de vainilla de @amixesp 🔹1cucharada cacao en polvo @chocolatestorras
🔹3onzas de chocolate fondant @chocolatestorras
🔹15grs de proteína de chocolate belga de @lifepro_oficial 🔹1cucharada de bicarbonato sódico
🔹️Esencia de vainilla
🔹Edulcorante (opcional, yo no uso)
✔Mezclamos las harinas y el bicarbonato en un bol y en otro batimos los huevos, las claras, la esencia de vainilla y el aceite de coco
✔Integramos los ingredientes húmedos en los secos y amasamos hasta tener una masa espesa.
✔Separamos en 2boles.
✔BOL 1: incorporamos la proteína de vainilla.
✔BOL 2: derretimos el chocolate y lo incorporamos, también el cacao en polvo y la proteína de chocolate.
✔Vamos cogiendo un trocito de masa de vainilla y encima ponemos masa de chocolate y encima otra vez vainilla, como si fuera un sándwich ✔Hacemos bolitas y las aplastamos dando la forma a la galleta ✔Aprovechamos para precalentar el horno a 200°C.
✔Vamos colocando las galletas en la bandeja del horno sobre un papel vegetal y con ayuda de la mano lo aplastamos un poco más
✔Metemos la bandeja en el horno durante unos 15min a 180ºC y listo!
