Yes this is me and this is my story... That before photo is hard to look at. It is not so much the way that I look, (although that was a big part of it), the reason it is so hard to look at is that it reminds me of the state of depression I was in when it was taken. To be quite honest, it is very difficult for me to even find photos of myself before my transformation, because I was usually the person taking the photos (I did not want to be in photos) or I deleted them as soon as I saw them. I can't even begin to tell you how wonderful it feels to not be in that place anymore! Yes, you can absolutely see the visual difference between my before and my now photo, but what you can't see is the very best part of WHY I am so passionate about what I do NOW!!!! The self love, self esteem, confidence, smile from deep within your soul kind of happiness... is what EVERY SINGLE PERSON DESERVES TO FEEL LIKE EVERY SINGLE DAY!!!! I totally believe that with all of my being... I just want YOU to believe that for yourself!!! It is possible and I only wish my transformation photos and stories that I am constantly posting, gives YOU HOPE that YOU can do it too!!! Are you Ready ⁉

What’s one way you can make healthy eating easier in your life? 👇🏻
A few years ago I watched this TED talk (required for a class) and it actually changed my life. It made me realize I didn’t have to wait for things to happen and it wasn’t to late for me to still make things happen. Thanks to this talk I applied for a job that I wasn’t sure I was qualified for and not only did I get it but I was soon promoted to lead teacher. Recently, probably due to my mental illness, I’ve been losing my drive and ability to see the prize over the mountain. I’m going to stop letting brick walls hold me back and start going for what I want. I came here to outrun my anxiety but when I just so happened to stumble on this talk from my past I decided to bike through the whole talk. My goal was 10 miles, I made it 11. .
10 points for everything.
gluten free lasagna (straight from the recipe in my head) 97-3 ground beef, onions, green peppers, mushrooms. 0 point sauce from the batch i made and froze last week. gluten free whole wheat noodles. ff mozzarella and part skim ricotta with an egg and a little bit of parmesan cheese.
i made some 2ID garlic knots with everything but the bagel seasoning and spray butter.
my oldest son is the pickiest and he hates any sort of pasta or red sauce and he took one bite of the lasagna and said, “mama this stuff is actually good!” and loved the garlic knots. definitely keeping this around.
A few weeks ago we ran to Walmart for some quick grocery shopping and a few more school supplies AFTER our 5pm dance class. The time of day we should already be home preparing supper.
Looking back these were my options:
1. Drive thru McDonalds.
2. Make a full on meal when we got home (which would mean everyone to bed super late)
3. Frozen pizza/order pizza
4. Uncomplicated, simple healthy meal.
I chose #4 . I'm not here judging or saying I never get a pizza... Because we totally do on occasion! But as the kids get older those busy late nights getting home are more and more frequent. It's my responsibility to feed them (and myself) well regardless.
We are never too busy to make good decisions for our health and you aren't either!!! It's more about training your mind to look for those options and think outside the box so it's easier to remember when you ARE super busy!
Don't complicate it, keep it simple and keep some really good stuff on hand so you are prepared!❤️👍🏻

Transformation Tuesday shout out style!!!!! My girl @jesstate333 is crushing some serious goals. She is a rockstar in our boot camp and I'm so freaking proud of her and excited to continue on this journey with her!!! These groups...these amazing people making themselves a priority and getting results they feel good about- that is some darn good motivation. All the feels for you girl!!!!!
I’m going a little old school with this transformation. Nothing is going to work for you unless you put the work in and keep working.
It takes CONSISTENTLY putting in hard freaking work. It’s NOT easy, especially at first. And it’s not your workout or nutrition that’s the hard part… it’s YOU.
The REAL hard part is getting out of your own damn way. It may seem like it’s always something else that gets in your way, but let’s be real… it comes back to YOU.
Though sometimes a hard pill to swallow, once you realize and accept this, you can finally take the power back and change it.
I used to get in my own way all the damn time. Everything that I could’ve used for an excuse, I did! Every life moment or event was an excuse.
That was until I realized EVERYTHING I was using as an excuse, could be used as a REASON. So I stopped thinking of these life moments as something getting in my way and started using them to HELP keep me stay consistent.
Work is cray? Cool, that means I DEFINITELY need to be on my game with my nutrition and exercise so I can show up for it and have the energy I need.
Stressed the F out? Cool, that means I REALLY need to make sure I have that time for self care and get my sweat on and eat healthy food.
Busy in general? Cool, that means it’s even more important for me to dial in this part of my life so I can stay sane and focused.
Insert any other life event here ______ and repeat.
Here’s the thing. LIFE HAPPENS and it’s going to continue to happen as long as you’re living. So count them as blessings, ya feel me? There will ALWAYS be something that could throw you “off” if you choose to view it that way. When something comes up, put the work in anyways, stay consistent anyways.
Stay focused. Work hard. Repeat. 😉
Hard work gets you consistent results (and also makes things easier over time). Excuses get you in a loop of consistent dissatisfaction (and makes things harder over time). 🤷🏼♀️
If you struggle with giving yourself excuses and letting life get in the way of making changes, I hope this shift is helpful for you. It’s what changed the game for me.✌🏼
Stretching, do you need to do it??? 🤭⠀
Yes you do! Stretching is so important it promotes recovery, improves flexibility as well as mobility in your joints. I am so guilty of skipping a stretch session, it’s not a strength of mine but I know long term if I stay committed I’ll reap the rewards and so will you! ⠀

They say “leave it all on the mat” and that’s exactly what I try to do. Not just the sweat, but the tears, frustrations, anxieties, and stress. Working out is where I can push my body and clear my mind. It really is the best stress reliever and the healthiest way I know to deal with my anxieties. It’s a very important part of my daily routine and I’m grateful that I am healthy and strong and capable of exercise. Never take that for granted. 💞

When you think about being hungry what feelings does that invoke. Does it make you anxious? Are you cool with it?
One of my biggest challenges when following any new diet was the fear of being hungry. 😋 ✨
I was so nervous that I would get overly hungry and then binge later. For years that had been my standard. Shifting my focus away from not eating to eating as many whole food, plant based, meals + fruits & vegetables 🍓🍎🍌🥦🥒🍠🥕as I wanted gave me a freedom that I had never given my self before. Permission to eat!! Once I leaned what that actually looked like I never had to worry about going hungry again! ✨
I was able to tap into my body and understand what it needed when it needed it. I rarely have cravings anymore and never have to count another calorie. It is glorious and the return on investment in myself has been a lean body, tons of energy, clear skin and calm mind. 🙌🤸♀️🧘♀️🏄♀️🙌

Probably one of the best texts I've ever received, especially since it's from my mom.
Life isn't easy for anyone, and we all get knocked down. The thing that defines us is how we stand back up.
I was okay with having just an OKAY life.
I was okay with settling in a lot of areas that I never should have. Whether that was poor choices and who I surrounded myself with. The jobs I chose. Or just anything in life.
I've really worked hard recently to no longer accept just OKAY.
I've found the best circle of friends.
I've chosen to walk away from things that just aren't good for me...mostly (ha). But most importantly, I'm finding happiness.
Moral of the story, find passion. Whether it's in work, or other people. Then, never stop striving for that!

I finally started studying for the NCLEX with the support and encouragement of good friends (you know who you are) and my partner.

If you're anything like me you've spent a helluvalot of time doubting and over-thinking your choices. You listen too much to those stories in your mind about what you "should" be doing with your time, energy, resources, career, love life, etc... so you start feeling bad. 🙈
You second guess your desires. You think maybe you've messed up "God's Plan". You feel like a disappointment to everyone expecting you to get a stellar job in your field right outta University.
🛑 Stop it! You're gonna drive yourself crazy with the EXPECTATIONS OF OTHERS. That's right- those "shoulds" AREN'T real- they're merely a collection of beliefs your brain has collected from THE PEOPLE AROUND YOU since childhood.
Take control of your life 👏. Eff those "shoulds" and pave your own way as you follow your dreams. Stop waiting for the approval of others and stay in your lane, blinders on. The world needs more passionate people doing things THEIR way. 👌

Making Healthy Choices Fun 🥗
H’s has been showing resistance in recent times to eating vegetables that she once couldn’t get enough of so we have been looking at new and inviting ways to peak her interest and get her eating all those yummy veggies 🌻♥️ At first H didn’t appear as thrilled as I had hoped (I think she saw straight through my plan 🤦🏻♀️) but before long she turned from the lunch table and excitedly told me “I’ve finished the hair!” “That’s excellent H, what will you eat next?” “The eyelashes” she replied with a giggle. We continued this conversation throughout lunch with H updating me on which facial feature she was eating next and before long SHE’D FINISHED THE WHOLE PLATE!! 🌻♥️

28oz. thinly sliced sirloin or flank steaks
1 Cup bell pepper, julienned
1 Cup red onion, julienned
1 Cup zucchini, julienned
1 Cup baby asparagus, sliced lengthwise
2 tsp. Garlic, minced
10 Sprays Pam
1/4 tsp. Sea Salt
1/2 tsp. Freshly ground black pepper
Preparation Heat olive oil in a skillet over medium heat.Add the garlic and cook 1 to 2 minutes or until fragrant.Add all of the thinly sliced vegetables, season to taste and cook until softened, 4 to 5 minutes.Preheat grill to medium-high heat.Place some of the vegetables in the center of each slice of beef. Tightly roll the meat around the filling, and secure with a toothpick.Season each beef roll to taste with sea salt and freshly ground black pepper.Grill the beef rolls, 2 to 3 minutes per side.
